I found that cooking them the way the recipe suggested meant that the parsnips were more candied and a bit chewy. I much preferred them a bit softer, hence comments about what I might do next time. Great suggestion about adding some sugar to the crust! One comment about them being crumbly, I think it's sugar in the biscuit crust that makes it 'set' when you bake it, it partly dissolves in the butter in the oven and sets hard when it cools. I wanted them to be a bit softer, they were more like the texture of dried mango, and the more I cooked them the more like candy they became.
