Thinking like that, then the time spent (and the cost) is well worth it. I halved the recipe, as 6 serves was more than enough for us, plus leftovers.<br /><br />I had time today, so I made this one and not only could we enjoy it for dinner, I have the rest in portion sizes in my freezer and we will enjoy it over the coming weeks. I always get those busy days, where an instant meal is very welcome.<br /><br />This was a very rich, tasty lasagne. It was easy to make as long as you did each step as per the instructions. Some steps you can do while the others are cooking. I used fresh, homemade sheets of pasta (as I had time to do them and store bought sheets are always too thick). The sauce is very flavourful and all of the vegetables make it a nice, thick consistency. You didn't say where to use the red peppers, but I added them the same time as the zucchini and eggplant.<br /><br />It was well worth the work. We had ours with garlic bread (very naughty, I know) and a fresh salad. Yum, yum!<br /><br />With the photos - I suspect that people photograph a stone cold lasagne, so the pasta is set, the cheese doesn't ooze out and the edges can be cut neatly. And, not cheap either, by the time you buy all the cheese, etc. So they are a rare treat. I looked at the Costco one (that is where I got the idea of putting sliced tomatoes on top) but so often I am disappointed by store made goodies. Homemade is always so much better. And you are right, their portions are so huge. This is a great bake. You can make and freeze prior to baking it. I use little tinfoil loaf sized pans that come with lined lids sometimes (If I have been smart and have picked some up) and they work a charm. With that I get at least four generous meals for us from them.
