I was attracted to this one based on the way you did the bacon, plus a chance to try out that cheesy crust flavoured with bacon fat. <br /><br />The crust turned out really well, with a nice, crisp golden hue. The parmesan also made it very tasty. I used Gruyere Cheese in the filling and really liked that nutty taste it brings to the dish. The bacon looked quite decorative and gave an extra kick of flavour being in a larger slice rather than diced and mixed in. I'd not thought to do that before.<br /><br />We ate ours with a tossed green salad, pickled red onions and a Cherry Tomato Vinaigrette.
