In a galaxy far away a long time ago I was taught to always add the oil (butter, etc.) and mix it in before the dairy. If dairy is added first the potatoes can become gluey. I don't know if that is true since I never ever ever violate the rule. It's something I've never thought to do. If I have leftover mash, I generally use it to make fish cakes. I do freeze those, but hadn't thought to do mash like that.
