My lucky family tonight! <br /><br />Here's one that got from Relief Society when I was 20 years old. I've been making it ever since.<br />It's been doctored up a little too.<br /><br />Chicken Broccoli Casserole<br />3 Cups cooked Chicken (shredded into pieces)<br />2 Small pkgs. broccoli (cooked until very tender but don't overcook)<br />2 Cans Cream of Chicken Soup<br />1 Cup mayonnaise (I like Best Foods Mayo.)<br />1 Tablespoon lemon juice<br />Parmesan cheese (a generous amount to cover)<br />Italian Seasoned Bread Crumbs<br />3 Tablespoons melted butter<br /> <br />Butter a 13x9 casserole dish. Add broccoli to the bottom then<br />layer chicken pieces on top. In another bowl mix, soup, mayo, and <br />lemon juice; Pour over chicken; Sprinkle with parmesan cheese (to <br />cover surface) and then sprinkle with bread crumbs. Drizzle melted butter over top. <br />Bake at 350 degrees for 25 to 30 minutes. We got snow today and their are delays and closures for tomorrow because the roads are slippery. So, no going out to the store for me.
