I made 2 batches; the first revealed my yeast had gotten too old. And the dough seemed a bit dry. Those cakes were small and a little dense, but still tasty.

The second batch went much better, with changes:
- Soaked the raisins in exactly 2 Tbs of boiling water for 1 hour; mixed in raisins + liquid
- Used all-purpose flour. Oh, and fresh yeast, LOL!

The dough, moist but not sticky, rose beautifully both times and baked up perfectly. I only wish I had some Devonshire cream to complete the lusciousness!

Thank you for an easy recipe that makes a stellar teacake!Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-7100882347408067241.post-43404664753052140972022-09-05T18:44:18.175+01:002022-09-05T18:44:18.175+01:00I really hope that you enjoy them! You could just add some cinnamon and raisins to that recipe and have pretty much the same thing. Have you ever tried the cinnamon raisin English muffins, and if so, how do you think they compare? (Thomas is the only brand I’m familiar with.) Thank you for including the alternative measurements, it’s so helpful and very much appreciated.
