To me, the most convincing is that the name doesn't refer to the current monarch but to the late Queen Mother - also called Elizabeth. The story is that copies of a recipe were sold in Canada via the Anglican Church (possibly as a way of raising funds for the troops in WW2) The recipe itself claimed that this is the only cake the Queen likes to bake herself. I had never heard of it before but assumed it had royal connections. There was no mention of it in any of my recipe books so I did a bit of research and found that nobody else seemed to know anything about it either!
