I was only glad that it was a trial run before an important dinner party and not the actual event itself. I learned that a good soufflé is all about patience - something I do not possess at all, so no wonder I was doomed to fail. That was more than thirty years ago now and I have since put soufflé in the "too hard" basket.<br /><br />These look wonderful and would be lovely for a luncheon as the weather warms up.
