I have found when downsizing recipes that it can be surprisingly easy to halve an egg. Beat it well then weigh it on a good set of digital scales. Providing the egg is well beaten. (a pinch of salt may help if it is a very fresh egg) then you can fairly easily spoon out half the weight of the egg.
