(February 28th to March 6th) and asked\n would I like to try to create\n some new recipes using it.\u0026nbsp;\u0026nbsp; I have risen to the challenge and this is \nthe third recipe I created using their lovely marmalades.\u0026nbsp; Because we don't eat them very often I choose to buy a really good chop. \u0026nbsp; Out door reared, and free range. \u0026nbsp; I also am partial to the old fashioned ones with the bone in. \u0026nbsp; Mix together the cracked black pepper, fennel and sea salt.\u0026nbsp;\u0026nbsp;\n Rub this into the chops all over.\u0026nbsp; Let stand for ten minutes.\u0026nbsp;\u003C\/div\u003E\n\u003Cdiv\u003E\n\u003C\/div\u003E\n\u003Cdiv\u003E\n\u003Cbr \/\u003E\u003C\/div\u003E\nHeat\n a skillet large enough to hold both chops in a single layer.\u0026nbsp; Add the \nolive oil.\u0026nbsp; Brown the chops on both sides over medium heat.\u0026nbsp; Reduce the \nheat to low.\u0026nbsp; Top each chop with a dessertspoon of marmalade.\u0026nbsp; Cover the\n pan and cook for 5 minutes.\u0026nbsp; what a delicious recipe I have to share with you today!\u0026nbsp; I was sent some delicious Marmalades to cook with earlier this month from the people at \u003Ca href=\"http:\/\/www.mackays.com\/our-range\/marmalades\/\" target=\"_blank\"\u003E\u003Cb\u003EMackays\u003C\/b\u003E\u003C\/a\u003E,\u0026nbsp; in \nhonor of National Marmalade Week\u0026nbsp; (February 28th to March 6th) and asked would I like to try to create\n some new recipes using it.\u0026nbsp;\u0026nbsp; I have risen to the challenge and this is the second recipe I created using their lovely marmalades.\u0026nbsp; A delicious mixture of BBQ sauce, marmalade and soy sauce is then poured over top and they are simmed in this for about 20 minutes . . .\u0026nbsp; until they are meltingly tender.\u003Cbr \/\u003E\n\u003Cbr \/\u003E\n\u0026nbsp;\u003Cimg alt=\" photo DSCN5297_zpscujzgqq9.jpg\" border=\"0\" src=\"http:\/\/img.photobucket.com\/albums\/v51\/MarieAlice\/A%20Diabetic%20Kitchen%20Recipes\/DSCN5297_zpscujzgqq9.jpg\" height=\"386\" width=\"400\" \/\u003E\u003Cbr \/\u003E\n\u003Cbr \/\u003E\n\u0026nbsp;The temperature is then turned up so that they cook for a further 10 minutes, until the sauce becomes a thick glaze . . .\u0026nbsp; if you do choose to use breasts you won't have to cook it for as long initially, but you may want to remove them from the pan while you turn up the heat to thicken the sauce, adding them back to the pan for the last few minutes to coat them properly.\u0026nbsp; Best make extra!\u003Cb\u003E \u003C\/b\u003E\u003Cbr \/\u003E\u003C\/div\u003E\nYou will need:\u003Cbr \/\u003E8 boneless skinless chicken thighs, trimmed of any fat \u003C\/div\u003E\n\u003Cdiv\u003E\nolive oil spray\u003C\/div\u003E\n\u003Cdiv\u003E\nsalt and pepper\u003C\/div\u003E\n\u003Cdiv\u003E\n\u003Cbr \/\u003E\u003Cb\u003EFor the sauce:\u003C\/b\u003E\u003Cbr \/\u003E340g BBQ Sauce ( 1 cup) (I used Newman's own hickory sauce)\u003C\/div\u003E\n220g Orange Marmalade (1 cup)\u003C\/div\u003E\n2 TBS soy sauce \u003Cbr \/\u003E\u0026nbsp;\u003C\/div\u003E\n\u003Cdiv\u003E\nSeason\n the chicken thighs all over with salt and pepper.\u0026nbsp; Spray a large \nskillet (with a tight fitting lid) and heat over medium heat.\u0026nbsp; Add the \nchicken thighs in one layer, top side down.\u0026nbsp; Brown them well on both \nsides, flipping them after about 5 minutes. Butter a nine inch spring form pan really well.\u0026nbsp; Set aside.\u003C\/div\u003E\nStir\n the flour, mixed spice and sugar for the base together in a bowl.\u0026nbsp; Drop\n in the butter and then rub it in until the mixture resembles coarse \ncrumbs.\u0026nbsp; Reserve\u0026nbsp; 170g (1 cup) of it and set it\u0026nbsp; aside.\u0026nbsp; To the \nremainder of the flour mixture, stir in the baking powder, soda and \nsalt.\u0026nbsp;\u0026nbsp; Stir together the yogurt, egg and vanilla.\u0026nbsp; Stir this into the \nflour mixture.\u0026nbsp; Spread this batter in the springform pan, covering the \nbottom and\u0026nbsp; 2 inches up the sides of the pan.\u0026nbsp; Set aside.\u003Cbr \/\u003E\n\u003Cbr \/\u003E\n\u003Cbr \/\u003E\u003C\/div\u003E\nWhisk\n together the cream cheese, sugar and egg for the filling until smooth.\u0026nbsp;\n Pour this into the cake base.\u0026nbsp;\u0026nbsp;\u0026nbsp;
