It is my right to be able to purchase the freshest foods possible. Just chop everything up, including the potatoes, mix it into the gravy and pop it into a casserole dish popping a pastry crust on top, or even a scone\/biscuit topping. I know the Toddster \u003Cstrike\u003Ehates\u003C\/strike\u003E\u0026nbsp; dislikes pasta intensely, but this pasta loving heart of mine just has to fill the craving from time to time.\u0026nbsp; I remembered something which I used to make when my kids were growing up that they always liked.\u0026nbsp; Stove Top Spaghetti dinner.\u0026nbsp; And I do confess . . . I like to serve it with a salad\n and some crusty rolls for mopping up all the sauce. I make short work \nof all the mincing by using my food processor. Proof positive \nthat you  don't need complicated or expensive ingredients to make \nsomething quite,  quite tasty!\u003Cbr \/\u003E\n\u003Cbr \/\u003E\n4 medium sized onions, peeled and coarsely chopped (about 2 cups)\u003Cbr \/\u003E\n16 ounces boiling water (2 cups)\u003Cbr \/\u003E\n16 ounces whole milk (2 cups)\u003Cbr \/\u003E\na knob of butter\u003Cbr \/\u003E\na couple of handfuls of grated strong cheddar cheese (I like to use a good Farmhouse cheddar)\u003Cbr \/\u003E\n4 slices of buttered toast (I like a hearty whole wheat)\u003Cbr \/\u003E\nseasalt and freshly ground black pepper to taste\u003Cbr \/\u003E\na pinch of grated nutmeg\u003Cbr \/\u003E\n2 spring onions, finely chopped for garnish\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nPlace\n  the chopped onions into a large saucepan along with the boiling water \n and some salt.  Simmer until tender.  The onions should be quite  \ntranslucent and very tender.  This should take about 20 minutes.  Add  \nthe milk and bring back just to the boil.  Reduce the heat to a simmer  \nand cook for a further 15 minutes.  Add the knob of butter and season to\n  taste with some salt, pepper and a p9inch of nutmeg.\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nPut a \nslice  of buttered toast into the bottom of each of four heated soup \nplates.   Top each with some of the cheese.  Ladle the hot soup over top\n and  sprinkle each with a garnish of chopped spring onions. Rub in the\n butter with your fingertips until the mixture resembles bread crumbs. \nStir in the parsley and then finally stir in the milk, mixing it only \nuntil mixed together and all the dry ingredients are uniformly moist.\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nRemove\n the lid from the simmering tomato mixture and drop the dumpling batter \nonto the top of the simmer liquid by tablespoonfuls. Cover tightly with a\n lid and simmer for another 10 to 15 minutes without peeking, until a \ntoothpick inserted into one of the dumplings comes out clean and they \nlook set and somewhat dry on top. I simply served them with rice and a vegetable \nand it was a meal fit for a king!\u003Cbr \/\u003E\n\u003Cbr \/\u003E\n2 TBS brown sugar\u003Cbr \/\u003E\n2 TBS, plus 1\/3 cup orange juice\u003Cbr \/\u003E\n2 TBS soy sauce\u003Cbr \/\u003E\n3\/4 tsp ground cardamom\u003Cbr \/\u003E\n1\/2 tsp mild curry powder\u003Cbr \/\u003E\n1\/8 tsp freshly ground black pepper\u003Cbr \/\u003E\n4 boneless \u003Cspan class=\"blsp-spelling-corrected\" id=\"SPELLING_ERROR_5\"\u003Epork chops\u003C\/span\u003E\u003Cbr \/\u003E\n2 tsp extra virgin olive oil\u003Cbr \/\u003E\n3 cups peeled and thickly sliced peaches\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nCombine\n the brown sugar, 2 TBS of orange juice, soy sauce, cardamom, curry \npowder and pepper in a small bowl. Stir to dissolve the sugar.\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nTrim\n all the fat off of your pork chops. Place them into a heavy plastic bag\n or between two sheets of cling film and bash them with a rolling pin \n(gently) until they are about 1\/3 of an inch thick and uniform in size. \n(this also helps to tenderize them) Place them into a shallow glass dish\n and pour the spice mixture over top. Allow to marinate for at least 15 \nminutes, or cover and place in the fridge to marinate for up to 2 hours.\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nHeat\n the oil in a large non-stick frying pan over medium high heat. Shake \noff any excess marinade (reserving marinade) and cook the chops in the \nheated pan, browning well on both sides. This should take about 2 \nminutes \u003Cspan class=\"blsp-spelling-corrected\" id=\"SPELLING_ERROR_6\"\u003Eper side\u003C\/span\u003E. While the chops are browning, add the peaches to the marinade, turning them to coat them all over.\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nAdd\n the remaining 1\/3 cup of orange juice to the pan and bring to a simmer,\n stirring. Reduce the heat to medium low and simmer the chops, turning \noccasionally,until the chops are cooked through, some 4 to 5 minutes. \nRemove the chops from the pan to a plate and cover loosely with foil. \nKeep warm.\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nAdd the peaches and the reserved marinade to the pan. \nIncrease the pan heat and bring to a simmer. Cook, stirring often, until\n the liquid is reduced to a light sauce. Stir any juices from the \nresting pork chops. Three little bites of \nheaven.\u003Cbr \/\u003E\n\u003Cbr \/\u003E\n1 cup of butter, room temperature (225g)\u003Cbr \/\u003E\n1\/2 cup icing sugar, sifted (65g)\u003Cbr \/\u003E\n3 TBS finely chopped candied ginger\u003Cbr \/\u003E\n1\/4 tsp salt\u003Cbr \/\u003E\n2 cups flour, sifted (200g)\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nPre-heat the oven to 300*F\/150*C.\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nPlace\n the butter into a bowl and cream it together with the sugar until it is\n light and fluffy. Beat in the ginger and the salt. Gradually work in \nthe flour until it is all incorporated.\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nDivide the dough into \nthirds and working with one third at a time, shape into a round and roll\n it out 1\/4 inch thick in between two sheets of wax or baking paper. Cut\n into shapes as desired. Place on baking sheets. Repeat until you have \nused all the dough, re-rolling the scraps as need be.\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nBake for 17 to 20 minutes until light golden and set. Remove to a wire rack to cool\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nOptional:\n Melt about 2 ounces of dark chocolate by breaking it up and placing it \ninto a bowl. Heat in the microwave for 20 second intervals, until \ncompletely melted. Using a fork or a small spoon drizzle the melted \nchocolate over the cooled biscuits.
