Place them onto the trays \nleaving 2 inches between each for spreading.\u0026nbsp;\u0026nbsp; Flatten slightly with \nyour fingertips and then press in a criss cross with a fork.\u0026nbsp; They \nshould be 2 inches across in size.\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nBake for 15 to 18 minutes, \nturning the trays around after half of the baking time.\u0026nbsp; Leave on the \nbaking sheets for several minutes before transferring to a rack to cool \ncompletely.\u003C\/div\u003E\nVariations:\u003C\/div\u003E\n1)\u0026nbsp; Roll the balls in cinnamon sugar before pressing down.\u003C\/div\u003E\n2)\u0026nbsp;\n For chocolate biscuits, add 2 extra tsp of milk and replace 75g (1\/2 \ncup) of the plain flour with 40g (1\/3 cup) cocoa powder, which you have \nsifted.\u0026nbsp; Flatten the balls with your finger tips.\u0026nbsp; Do not press with a \nfork.\u0026nbsp; Dip finished biscuits in melted white or dark chocolate as \ndesired.\u003C\/div\u003E\n3) For Lemon or orange biscuits, replace the vanilla \npaste with 2 tsp finely grated orange or lemon zest.\u0026nbsp; Flatten the balls \nwith the bottom of a glass.\u0026nbsp; You can ice these with a creamy icing made \nfrom 250g (2 cups) icing sugar, 20g (3\/4 oz) softened butter and 1 TBS \norange juice.\u0026nbsp; Whisk together and spread on the cooled cookies.\u003C\/div\u003E\n4)\u0026nbsp;\n For Nutty biscuits, add 60g (1\/2 cup) finely chopped toasted walnuts or\n pecans.\u0026nbsp; You can press a whole nut into the top of each biscuit instead\n of flattening with your fingertips.\u003C\/div\u003E\n5)\u0026nbsp;
