He only \u003Ci\u003Ethinks\u003C\/i\u003E he doesn't like pasta.\u0026nbsp; He usually eats it up whenever it is served and seems to enjoy it.\u0026nbsp; Methinks he doth protest too much.\u0026nbsp; I browned the chorizo in a large skillet and added onions and garlic, until everything was nicely softened and fragrant.\u0026nbsp;\u0026nbsp; I then added some stock, tomatoes and pasta.\u0026nbsp; I am rather lazy (as you also know) and so I just added the pasta raw.\u0026nbsp; If you don't have any chorizo, you \ncould use any highly spiced or smoked sausage.\u0026nbsp;\u0026nbsp;\u003C\/div\u003E\n\u003Cdiv\u003E\n\u003Cbr \/\u003E\u003C\/div\u003E\n1 TBS extra virgin rapeseed oil\u003C\/div\u003E\n8 ounces of dried chorizo sausage, sliced\u003C\/div\u003E\n(Or smoked sausage, or even hotdogs)\u003C\/div\u003E\n1 medium onion, peeled and chopped\u003C\/div\u003E\n1 clove of garlic, peeled and minced\u003C\/div\u003E\n\u003Cdiv\u003E\n1\/2 to 1 tsp easy chilies (depending on \u003Cbr \/\u003E\nhow hot and spicy you want it to be)\u003C\/div\u003E\n450ml of hot vegetable stock (2 cups)\u003C\/div\u003E\n400g tin of chopped tomatoes in tomato juice, undrained (10 oz tin)\u003C\/div\u003E\n125ml of double cream (1\/2 cup)\u003C\/div\u003E\n1\/2 pound of curly pasta (I used Fiorelli), uncooked\u003C\/div\u003E\nsalt and black pepper to taste\u003C\/div\u003E\n120g of strong cheddar cheese, grated and divided (1 cup)\u003C\/div\u003E\n4 spring onions, thinly sliced\u0026nbsp; Add the sausage \nslices and cook, stirring occasionally, until beginning to brown and \nturn golden.\u0026nbsp;\u0026nbsp; Tip in the onions and allow them to soften without \nbrowning, again stirring from time to time.\u0026nbsp;\u0026nbsp; Add the garlic and cook, \nstirring until quite fragrant.\u0026nbsp; Stir in the easy chilies, stock, \ntomatoes and pasta.\u0026nbsp;\u0026nbsp; Bring to the boil, then reduce to a slow simmer, \ncover and allow to cook for 15 to 20 minutes, until the pasta is \ntender.\u0026nbsp; (Start checking at 15)\u0026nbsp; At the end of that time, stir in half \nof the cheese, allowing it to melt.\u0026nbsp; Stir in the cream.\u003Cbr \/\u003E\n\u003Cbr \/\u003E\n\u003Cbr \/\u003E\nPreheat \nthe grill to high.\u0026nbsp; Scatter the remainder of the cheese and the spring \nonions on top.\u0026nbsp;\u0026nbsp; Place under the grill until the cheese is melted and \nbubbling and golden in places.\u0026nbsp; Remove from the heat, scatter with the \nchopped parsley and serve immediately.\u0026nbsp;\u0026nbsp; They're just lovely. It's delicious and always more than  welcome.\u003Cbr \/\u003E\u003Cbr \/\u003E2 tsp oil\u003Cbr \/\u003E1 pound fresh chicken tenders (or the equivalent of boneless, skinless chicken breast,\u003Cbr \/\u003Ecut into strips, crossways)\u003Cbr \/\u003E1 medium onion, peeled and chopped\u003Cbr \/\u003E210g of uncooked regular long grain rice (1 cup)\u003Cbr \/\u003E1 medium carrot, peeled and grated\u003Cbr \/\u003E1 fat clove of garlic, peeled and minced\u003Cbr \/\u003Ea handful of sultana raisins\u003Cbr \/\u003Ea handful of chopped dried apricots\u003Cbr \/\u003E1 heaped tsp of curry powder (I use a medium strength)\u003Cbr \/\u003E1 tsp ground coriander\u003Cbr \/\u003E1\/4 tsp salt\u003Cbr \/\u003E500ml of chicken broth\u003Cbr \/\u003Ewhite pepper to taste\u003Cbr \/\u003Ea handful of frozen petit pois\u003Cbr \/\u003Eto garnish:\u003Cbr \/\u003Echopped toasted almonds or pistachio nuts\u003Cbr \/\u003E\u003Cbr \/\u003EHeat  the oil in a large nonstick skillet over medium heat until hot.  Add  the chicken and onion.  Cook, stirring occasionally, until the chicken  is browned and the onion is softened.  Stir in the rice, spices and the carrot  and garlic.  Cook for a few minutes until very fragrant.  Stir in the  fruit and broth, mixing all together well.  Bring to the boil, then  cover and reduce the heat to low.  Cook, covered for about 15 minutes,  until the chicken is cooked through, the rice is tender and all the  liquid has been absorbed.  Take off the heat, stir in the petit pois and  set aside, covered, for about 5 minutes. It's one of those just throw what you like into the pan recipes.  Whatever vegetables you have in the fridge that you are craving or wanting to use up.  Today I used cabbage, carrots, swede, cauliflower, onions and peppers.  Other days it might be something else. I used chicken today, but you can use pork or beef or lamb if you want, although in all honesty I've never had it with lamb actually.  You can even throw in some cooked shrimp if you wanted to. It uses a large package of cooked rice, so that makes it even easier. I love little bit of this and  little bit of that meals!\u003Cbr \/\u003E\u003Cbr \/\u003Ea bit of oil\u003Cbr \/\u003E2 cups of chopped cooked meat (chicken, pork, beef)\u003Cbr \/\u003E4 cups of chopped raw vegetables (cabbage, carrots, swede, peppers, onions, cauliflower,\u003Cbr \/\u003Ebroccoli, courgettes, bean sprouts, beans . . . in other words just about any vegetable you have to hand)\u003Cbr \/\u003E1 family pack of cooked rice (one that gives 4 servings)\u003Cbr \/\u003Ea large handful of frozen peas, or frozen peas and corn\u003Cbr \/\u003E2 TBS dark soy sauce\u003Cbr \/\u003E1 fat clove of garlic, peeled and minced\u003Cbr \/\u003E1 tsp chinese five spice\u003Cbr \/\u003Ea good dollop of hoisin sauce (according to your taste)\u003Cbr \/\u003Esalt and freshly ground black pepper to taste\u003Cbr \/\u003E\u003Cbr \/\u003EHeat  a large skillet (with a lid) over medium high heat.  Add a splash of oil  and once it heats up toss in the meat and the garlic.  Cook and stir  until heated through.  Add the chopped raw vegetables.  I chop the ones  that take longer to cook smaller and leave the ones which cook fairly  quickly in larger chunks.  Sprinkle with 1 TBS of the soy sauce.the  hoisin sauce, and the chinese five spice, stirring it all through.   Cover with the lid and cook over medium low heat, until the vegetables  are crispy tender.  Remove the lid and add the  rice from the package,  crumbing it in and stirring it all together.  Add the peas and the  remaining soy sauce.  Cover and heat through.  Taste and adjust  seasoning with salt and pepper to taste.
