I am awfully fond of tea breads or cakes as they are also known. Delicious small cakes baked in a loaf tin, perfectly sized to slice and enjoy at your leisure with whichever hot drink you enjoy. In my case it is lemon and ginger tea . . .
I thought it would be fun today to show you my simple "go to" cupcake recipe that I use all the time when I want to make vanilla cupcakes. They are easy to make, always turn out and delicious. In short . . . they are the perfect vanilla cupcake.
One thing that Todd and I are both really crazy about is Jam. We eat a lot of it here. I use it for baking and all sorts, and sometimes when we are both feeling really lazy we have nothing but bread and jam for a light supper. We both really enjoy it and it feels like a real treat. Especially if I have some crusty or homemade bread in the house!
I am somewhat ashamed to say that there were not a lot of homemade . . . made from scratch . . . cakes that didn't come from a mix in my life prior to coming over here to the UK. I did some psuedo homemade cakes . . . you know the kind I mean. You use a cake mix and a few other ingredients to make a type of cake . . . but there's not really any science or skill involved in that is there. I did make my mom's hot milk cake from time to time and the odd gumdrop cake, and maybe a fruit cake now and again, but mostly . . . my cakes came from a mix. They were quick, easy, convenient and didn't taste all that bad.
I have to confess . . . I am somewhat of a cinnamon bun nut. I do love cinnamon anything . . . just the smell of cinnamon anything baking gets my taste buds to tingling.
It should come as no surprise that I have an abundance of cinnamon related recipes! Most are quick and easy to make because . . . another confession . . . I am not a very patient person and the idea of waiting hours and hours for doughs to rise and what not just pains me.
So all of my cinnamon indulgences are almost instantaneous gratification! And that's how I like it.
This cake has to be one of the simplest snack/brunch/teatime cakes to make. You just throw everything for the batter into a bowl and beat it up . . .
Then you dollop a buttery cinnamon/flour mixture over top and swirl it through with a knife . . . then pop the cake into the oven.
A final vanilla glaze gets poured over top when the cake comes out of the oven . . . because the cake is still warm, it kind of gets absorbed a tiny bit . . . scrumptious!
The result is a warm moreish cinnamon cake that will have everyone wanting just one more tiny sliver . . . you could always double it, which would mean of course that there was plenty for seconds and thirds, etc.
In any case, I predict a love at first bite!
Whisk together all of the glaze ingredients until smooth. Take a fork and prick the hot cake all over. Pour the glazed evenly over top while the cake is still warm. Serve warm. Store any leftovers in an airtight container.

I make no secret of my great love of Peanut Butter. It is quite simply one of my favourite things. It is one thing I could not live without and I confess I have at least a tiny bit of it every day. True confessions here. Even if it is only a cracker with a bit of it spread on top.
I'm not sure what it is about the flavours of Toffee, Caramel and Butterscotch that makes me go weak at the knees, but I know I am not alone in this. They have long been favourites of many people and one only has to look at the proliferation of recipes for Salted Caramel anything on the internet these days to see just how popular that flavour is.
It must be about twenty years ago now, but it seems like just yesterday, I lived across from a lovely lady caled Debbie. We shared a mutual love of crafts and cooking and became fast friends. It broke my heart when I had to move away. All of our children are grown up now and we are both grandmothers. During those years we lived across the street from each other we were pretty inseparable. Although we are still in touch, we are not as close as we once were. Sometimes I really miss her.
I spent all day at the Temple today so I really haven't done any cooking at home. I do have this gumdrop cake recipe to share with you however that I cooked over the Christmas period and just never got around to showing you. This is my sister's recipe for gumdrop cake and it is the best in my opinion. We also call it rubber spatula cake because my mother once baked the end of a rubber spatula in it. It dropped off in the batter and she couldn't find it, so she baked it anyways. It didn't hurt the cake in any way, and the lucky person who found it got treated to a hilarious story on the side!
I adapted this delicious cake recipe from one I found in Rachel Allen's cookbook simply called "Cake." The cover claims that this cookbook contains every cake recipe you will ever need. We shall see! This is the first recipe which I have cooked from the book. It's pretty good!
Do you like peanut butter as much as I do? I am betting you don't, or maybe you do, but whatever the case I bet I eat peanut butter in one way or another every day. Usually its a piece of toast and peanut butter or a slice of bread with peanut butter on it . . . but every once in a while I bake myself a peanut butter treat.
We can't afford to go out much these days with the cost of everything going up, up and up. More often than not we opt to stay home and watch a film, either on SKY or on a dvd. This week I had the opportunity to review a new film, so we made a night of it with movie snacks and everything! There's nothing like some tasty snacks and a new film to watch to help make staying in feel like a night out!
