I made us a really delicious pot of soup the other day for our supper. Its nice to have soup for supper once in a while. They are filling and delicious. This soup was so simple to make. The recipe came from the back of a package of Hungry Jack's Organic Soup Mix, which is a hearty healthy mix of organic dried peas, lentils, barley and flakes. I had never thought of using this type of soup mix in a chicken soup before, but it worked really well!

As soon as I saw this recipe over on my friend Pam's blog (On The Bright Side) I knew I wanted to try it. We like baked beans and we like hot dogs. I like simple. This recipe ticked all the boxes!
We had the Missionary Sisters for tea last night and I wanted to bake them something really special for dessert that I knew they would go gaga over! I adapted this recipe for Jammy Dodger White Chocolate Blondies that I found on a blog called Katie Cakes.
OH. MY. GOODNESS!!! Was this ever a great choice of what to make. Hands down the most gorgeous thing I have baked this year!

Imagine a delicious white chocolate blondie batter . . . spread in a pan and dolloped with spoonfuls of sweet strawberry jam . . .
The jam swirled through the batter . . .
Topped at intervals with moreish Jammy Dodger Biscuits/Cookies . . . and then baked in the oven until the batter is just barely set . . .
The end result being a blondie that is incredibly moist and sweet with sticky jam and studded with those lovely biscuits.
I am not sure what the biscuit equivalent would be in America . . . any jam filled double biscuit would do. In Canada I think that the Peek Freen Jam cookies would work. They just won't be as pretty . . .
This is one very delicious bake, that has you wanting just one more. These are almost dangerous to have in the house. Seriously. I am so glad that the girls were here to help make a huge dent in them. Whew!!
This
is a deliciously different blonde brownie. Once you melt the chocolate
and start to beat in the eggs, you might think these are never going to
come together, but persevere. They will. Using an electric mixer is
key at this point. Also be sure to temper the eggs with a bit of the
hot mixture first so you don't end up with scrambled eggs.
175g unsalted butter (3/4 cup)
250g white chocolate, chopped (1 1/3 cup, or 9 ounces)
250g caster sugar (1 1/3 cups fine granulated)
3 large free range eggs
1 tsp vanilla extract
300g flour (2 cups plus 2 1/2 TBS)
3 heaped TBS strawberry jam, loosened with a fork
11 Jammy Dodger biscuits (you can use any pretty jam filled cookies)
(Obviously Jammy Dodgers give you the nicest look)
Preheat
the oven to 175*C/ 365*F/ gas mark 3.5. Butter 9 by 13 inch baking
dish and line with paper, giving you an overhang to lift the squares out
when cooled to cut.
Melt the butter and white chocolate
together in a saucepan over very low heat, whisking constantly, until
smooth and combined. (It might look curdled at this point, but
persevere) Beat the eggs together in a measure and temper them with a
bit of the hot mixture. Using an electric whisk, beat in the sugar,
vanilla and eggs until combined and light in colour. Fold in the flour
with a metal spoon until just combined. Pour into the prepared pan.
Drop
the jam by teaspoonfuls over top of the batter, then swirl through
decoratively with a table knife. Drop the Jammy Dodgers on top in a
decorative and neat manner.
Bake for 25 minutes until just set. Allow to cool completely before removing from the pan and cutting into squares to enjoy.

If you only bake one thing this weekend, make it these. You seriously won't regret it. Your waistline might moan about it a bit, but the rest of you will be so happy you did, and so will your family!

We have an elderly friend that I like to bake things for from time to time. We usually go to visit her a couple of times a week and I usually bring her something I have baked on one of those occasions. I get to enjoy the pleasure of baking something and she gets to enjoy the pleasure of eating what I have baked. As a diabetic I am not really supposed to be eating a lot of baked goods, so it works really well for me as I love to bake. Its a win/win situation really!

I am a great fan of Mediterranean flavours . . . oregano, feta cheese, olives, lemons, tomatoes, cucumbers . . . coriander. Greek salad. Yum! Yum!
I was in the mood for something quick and easy the other night and so I threw together these delicious foil packets, BBQ Chicken Packets. So simple to make and so tasty when done! You can either cook them in the oven or on the BBQ. Its all up to you!
I confess to having a certain fondness for Mexican food. I have never been to Mexico actually, no even close, but I do love the flavours of that type of cuisine Now I don't want purists messaging me here telling me that this is nothing like Mexican food. This may well be true, but this is what I know as Mexican and this is what I like, and well . . . it's my kitchen, afterall!
This casserole is much simpler to make than traditional enchiladas. I have adapted the recipe from one which I discovered on Whats Gaby Cooking. It looked so delicious that I wanted to try it. I have taken the liberty of using already poached chicken and changing out a few steps . . .
But that is what cooking is all about isn't it? Finding inspiration and then using that inspiration to create something delicious depending on what is available and what you like or don't like . . .
I always have poached chicken on hand. I use it all the time. I probably poach a whole chicken every week., or a bag of chicken breasts or thighs, a mixture, etc. Its a very versatile ingredient to have and it works well in impromptu salads, sandwiches and quick suppers like this!
*Chicken Enchilada Bake*
Serves 6
1 TBS oil
1 medium onion, peeled and choppedThis was really, really, REALLY good! It was quick to make and was something which I would make again! I served this with a simple salad. It was fairly low in carbs, high in protein and delicious.

One of the Elders recently had a Birthday and I actually knew about it in time to bake him a cake. Normally I don't find out until it is too late!!
I decided to bake him an Orange Layer Cake and it was the perfect choice!
When I told him what kind cake it was, he was really excited.
He said he loves orange cakes! I reckon I was inspired to bake it!
One of the reasons I chose this particular cake was that it makes a tiny cake, only six inches in diameter, and . . . I didn't want a lot of cake hanging around here after the fact.
I am a very weak person and I love cake. As a diabetic, I need to keep temptations like that out of my way as much as possible.
Another reason why I chose this cake was because its a very delicious cake! Moist and buttery, just like a cake should be . . .
With a beautifully moreish orange buttercream filling and topping. You can't really go wrong!
I couldn't really take any photos of it until the morning after. I hope you don't mind and I hope that you will bake this cake.
Its a delicious cake, simple to make, and goes down a real treat with anyone who I serve it to!

I saw this recipe on my friend Mary's blog, Bunny's Warm Oven, the other day. It looked really delicious, but I am not fond of bone in chicken. Sorry . . . just not a fan. I decided to adapt it to use the boneless skinless chicken thighs which I had in the refrigerator, with excellent results!
I make no secret of the fact. I love LOVE Tex Mex Flavours . . . . chili, cumin, coriander . . . cheese, olives, spring onions . . . beans, corn. Lime. Interestingly enough Tex Mex was not a part of my growing up life. I had never eaten anything even remotely resembling Tex Mex until my mother discovered Chili Con Carne . . . a recipe taken from the back of a tomato soup tin. haha . . . not really chili at all, but yes, different than anything we were used to.
This delicious recipe today comes from a cookery book that I have had in my library since 1971. Yes, I was only 16 years old when I got the book. I have always been a collecter and I have to say that I love the progress we have made in cookery, but there are still a lot of little gems in those older books and this is one of them. The book is called Good Food on a Budget and it is from the BHG cooking library collection of books I collected way back when.
This Sunday is Mothering Sunday here in the UK, or Mother's Day as it is called in other parts of the world. I know . . . . totally different than when it is celebrated in North America. This provides a bit of a conundrum for me. It means that I have to buy my mother here Mother's Day card a whole two months before I need to, but experience has taught me that if I neglect to do that . . . I won't find one come the North American Mother's Day in May.
Well, it is day two of my Marmalade challenge and what a delicious recipe I have to share with you today! I was sent some delicious Marmalades to cook with earlier this month from the people at Mackays, in honor of National Marmalade Week (February 28th to March 6th) and asked would I like to try to create some new recipes using it. I have risen to the challenge and this is the second recipe I created using their lovely marmalades. For this one I used their old fashioned Dundee Marmalade, but I think any flavour would work well.
I have to confess that, aside from feeding the Missionaries, I haven't been doing a great deal of cooking lately. I've been quite tired and not really feeling all that well. No appetite. We are having the Elders for tea tonight and I am making them a curry, but for Todd's lunch I cooked him delicious Bagel Hole Eggs! Like Egg in the hole, but with a bagel instead of bread. ☺
I've seen a lot of "hasselback" type of dishes on Pinterest these past few weeks. Hasselback Potatoes have long been popular . . . baking type of potatoes, sliced crosswise every quarter of an inch almost all the way through but staying intact on the bottm, and brushed with an herby garlic butter and baked until the potato edges are all tender on the insides and crisp and buttery at the edges. They are now doing it with meats. I've seen a LOT of chicken dishes done this way lately. When I picked up two turkey breast tenderloin fillets at the shop the other day, I immediately had in mind to cook them in the Hasselback manner!
This is the cake that I always used to bake for the Mr when I worked and cooked at the Manor down South. It was his Birthday cake of choice and I dutifully baked one for him every year. And small wonder, as it is a most delicious cake! From it's moist and flavourful crumb, to it's fudgy chocolate frosting, it pleases on all levels.
Back to healthy eating here in my house. We've had enough of over-indulgence. Time to get back on the horse and moving forward. You see a lot of these slider type of sandwiches about. They are very popular with families and for footie games. I thought I would try to create a somewhat healthier version by using ground turkey, and by jove I think I cracked it!
I know what you are thinking . . . skinny mac and cheese? Can it be possible. Well, in all truth, there is no such thing as truly skinny mac and cheese, and a better name would probably be skinnier mac and cheese, but hey! If you can cut the calories in a dish like this and not lose any of the flavour, and end up with a dish that still tastes somewhat indulgent, then I would say job well done!
These last couple of days before Christmas (it's coming up on us quickly now!) are bound to be a bit manic and filled with more things to do than you can shake a stick at. Quick and easy meals are the order of the day.
Delicious throw togethers such as this Hunter's Chicken and Chips which I am showing you today. I threw it together today with stuff I had in my freezer and fridge and it was absolutely fabulous! And so simple as well!
There are basically only four steps to follow which are as simple as throwing some frozen oven chips into the oven to bake and cooking some frozen chicken chunks while the chips are baking.
You dress the shredded cooked chicken with barbeque sauce. Then you layer them in a casserole dish with some cheese and salad dressing and then top with some bacon bits and crispy onions.
Simple. Delicious. Quick and easy. Your family will love it!
It's also quite economical. I often buy bags of frozen french fries when they are on special and keep a couple of bags in the freezer. I also like to keep bags of frozen chicken chunks.
These are just the right size for four people, and cook quickly from frozen. Plus where I shop they only cost £2 for a bag, which is a winner/winner chicken dinner! (sorry for the pun!)
Hunters Chicken is a very popular dish over here and the shops are full of ready meal Hunter's Chicken dishes . . . which are basically two chicken breasts in a foil tin, with some cheese and a slice of bacon scattered over top and a sachet of BBQ Sauce on the side.
And while they are not the most expensive entrees . . . they aren't the tastiest either. I guarantee if you try this dish I am showing you today , you will find it waaaaay more tasty, and you will know exactly what went into it.
Sure 'nuff. All you need is a vegetable and a salad on the side and dinner is served!
*Hunter's Chicken and Chips*
Serves 4
120ml of either ranch or blue cheese salad dressing, loosened with a bit of milk (1/2 cup)
240g of grated four cheese blend (2 cups)Add the chicken chunks to a
skillet along with the chicken stock, garlic powder and Montreal Steak
Spice.
Bring to the boil, then reduce to a simmer, cover and cook
until the chicken is cooked through and the juices run clear. Shred
with two forks and stir in the Barbeque sauce.
Remove the chips from the oven and put them into a gratin dish. Leave the oven on. Top the chips with half of the cheese. Spread the chicken over top of the cheese.
Drizzle with the salad dressing. Top with the remaining cheese
and sprinkle the bacon bits and crispy salad onions over top. Return
to the heated oven and bake for a further 8 to 10 minutes to melt the
cheese and heat through. Serve immediately.
Note - you could also use leftover cooked chicken or turkey in this.
