Well, here it is Mothering Sunday and I thought I would treat my lovely readers to a tasty little bite that they might enjoy sharing with their loved ones. Myself, I am not able to eat these types of treats anymore, but that doesn't stop Todd from enjoying them! I also have a dear elderly friend who is kind of like a mum to me over here, and so I thought she would also enjoy them as a bit of a Mother's Day treat!
Usually at the weekend I try to do us some sort of breakfast treat . . . something which is a bit out of the ordinary cereal that we have on weekday mornings. We are not really heavy eaters so we never do the bacon and eggs thing for breakfast . . . that's usually a dinner deal for us. We do like pancakes, or french toast, muffins, cinnamon rolls, cinnamon toast . . . and when I saw this on Pinterest the other day . . . Coconut Toast . . . I knew that I wanted to make it. It just sounded good, very good.
I know I should have some heart shaped cookies or some such here to show you today as tomorrow is Valentines Day, but I just don't have them . . . sorry about that! I do have some rather tasty Coconut and Cherry Cookies however! I think that a bite of one of these and you will soon forgive me as they are delicious. It's a recipe I got from an Amish Cookery book and we all know how great those Amish Cookers are. I downsized it as the original recipe made twice the cookies and there are only two of us, one of us being a diabetic. 'Nuff Said.
This is an oven sandwich that I used to make often for my kids when they were growing up. They're delicious, simple to make and they use ingredients I normally have in my larder. So they are a bit of a store cupboard meal. Also if you use low fat cheese and mayonnaise, they are not that unhealthy. Especially if you serve them with some vegetable sticks or salad on the side.
Have you ever had a day when you really didn't feel like cooking at all, or even doing much of anything??? It doesn't happen to me very often, but yesterday was one of those days. I was having a horrible no good rotten day. Nothing that I could put my finger on . . . I just felt a bit blah. Not sick . . . just a bit tired, run down . . . and frustrated by nothing in particular . . . yet frustrated with everything, at the same time. Grumpy. Out of sorts.
For lunch I rifled through the fridge and put together a pizza. There was a few bits of cheese that needed using up, some leftover cooked sausages that needed to be used, and some spring onions and black olives left from the other day when I made some Mexican dip. They all ended up on top of the pizza . . .
and it was good . . . but it didn't chase the blues away. I still felt out of sorts. Then I remembered those lovely herbal teas I was sent the other day. They looked and smelled delicious . . . so why not. A hot drink is often a nice pick me up.
The other night we had a bit of a Halloween "Do" for the sisters and elders in our care. I know it was a bit early, but transfers are this week and we wanted to do it while the ones we have at the present are still here. The next lot will have Thanksgiving and Christmas, but this lot gets Halloween. They're not allowed out and about on Halloween or Bonfire night for their own safety, which is a good thing. You can't take chances with these youngsters who are so far away from their kin and homes. So we celebrated Halloween a week and a half early. Nobody complained.
I confess these cookies are not diabetic friendly, or diet friendly in any way, but I wanted to bake something for the young missionaries to take to our District meeting the other day, and so I baked them these cookies. I couldn't believe that I hadn't already shared the recipe on the blog!
I don't know why it is but it's really difficult to photograph chocolate things and make them come out looking as delicious as they really are. I am sorely lacking in knowledge about these things and so these cookies here today only look half as delicious as they really, so please don't let the photo's turn you off. I promise you these are really, REALLY good!
Peanut Butter Cookie Pie! Are you ready for a little bit of decadence? I know I sure am! And whilst this is not over the top decadence, it is still a bit of a tasty treat.
If you love peanut butter cookies, and you love peanut butter and jam (or chocolate) then you will absolutely adore this simple and impressive dessert!
I adore peanut butter cookies. I think they are my favourites. And this is essentially a big peanut butter cookie . . . baked in a skillet (or round pie dish of that is what you have to use.)
You can either sprinkle the cookie with some granulated sugar prior to baking, or do like I have and dust it with some icing sugar afterwards.
I also like to use crunchy peanut butter. But smooth is equally as good.
This goes together in a flash and bakes really quickly.
You cut it into wedges while it is still warm . . . and top it with a scoop of good vanilla ice cream! But that's not where the decadence comes in . . .
When I was a child one of our favourite desserts was when my mother gave us ice cream and then spooned strawberry preserves over top of it.
And we all know how delicious peanut butter and jam is together . . . it is the quintessential combination of flavours . . . okay so yes that is the North American in me coming out . . . but . . .
Just look . . . . doesn't that look fabulously delicious??
The British don't really understand the complexities of peanut butter and jam, or the deliciousness of it. To them it is tantamount to eating fish with custard. Does not compute.

Its a cutural thing I guess, this love of peanut butter and jam. Together. In North American you can even buy it already swirled together. Peanut Butter and Grape jelly. Yum!!
For me of course it has o be strawberry jam. That is the perfect combination and it is perfect on this peanut butter cookie pie as well, especially drizzled over a scoop of good vanilla ice cream.
Of course chocolate sauce would be just as tasty! Go on . . . treat yourself. You know you want to.
Cream
together the butter, peanut butter and both sugars until well combined
and fluffy. Beat in the egg and vanilla. Sift together the flour and
soda. Stir this in to make a soft dough. Press the dough into the
prepared skillet.
Bake in the preheated oven for 25 to 30 minutes,
until golden brown and well set. Remove from the oven. Cool in the
pan for 10 minutes before cutting into wedges to serve with a scoop of
vanilla ice cream on top and some strawberry or chocolate sauce.
Delicious!

I normally like to pull out the stops at the weekend and cook us something special for breakfast. Normally during the week we have only toast and/or cereal, saving anything larger for Saturday or Sunday. This is a bank Holiday here in the UK this weekend and so I decided that I would make us some French Toast for our Saturday breakfast . . . and not just any French Toast . . . but . . . Cinnamon French Toast Batons.
I thought it would be fun today to show you my simple "go to" cupcake recipe that I use all the time when I want to make vanilla cupcakes. They are easy to make, always turn out and delicious. In short . . . they are the perfect vanilla cupcake.
I think two of my favourite things have to be macaroni and cheese and hot dogs . . . (don't judge me!). Put the two together and I am in heaven. And by that I don't mean slicing some hot dogs into a casserole of mac an cheese . . . I mean topping a hot dog with mac and cheese! Yes, I am a big kid at heart!!
I have a husband who is not particularly fond of Pizza . . . or pasta as you know. He says he hate Italian food . . . but he really just means he hates Pizza and pasta . . . I keep reminding him that Italians eat a lot more than that! Bake a pizza in a cake tin, and call it a tart and he is quite happy to eat it however. A woman has to do what a woman has to do. ☺
Do you like peanut butter as much as I do? I am betting you don't, or maybe you do, but whatever the case I bet I eat peanut butter in one way or another every day. Usually its a piece of toast and peanut butter or a slice of bread with peanut butter on it . . . but every once in a while I bake myself a peanut butter treat.
There were so many lovely goodies in the hamper that I couldn't just leave it at one recipe. I decided that I wanted to make another heartier dish that would make a fabulous supper for the kids on Halloween night! Although good luck to you if you can get your kids to settle down and eat supper on that day. I never could, but I think that maybe had I created a dish such as this for them back then, they would have had a hard time resisting it!
With Halloween only 11 days away I've been working on creating some lovely Halloween treats and dinners in my kitchen. I just love the holidays and I especially love Halloween. I miss having the children around these days of course as there are only the two of us, but that doesn't mean that we can't enjoy ourselves and chow down on some tasty Halloween goodies anyways!
I saw a recipe very similar to this on the Pillsbury site the other day. I was intrigued. Who doesn't love pie? Who doesn't love chocolate chip cookies? Who would ADORE the two together? Not me, that's who! Chocolate Chip Cookie Stuffed Pies? They sounded splendiferous!!
I confess . . . I put my hand up. I like hot dogs, and not what passes for hotdogs over here in the UK . . . I mean the frankfurter type of hot dog . . . smoked and from the chiller cabinet, not a tin. Nothing grosser than a tinned hot dog. Trust me on this.
The two young Missionary Sisters who are serving in the Chester Ward at the moment came over today to do some service in our garden. We just love our Missionaries, we really do.
I did them some grilled cheese sandwiches for their lunch which I served them along with some potato chips and some of my cherished sweet pickles from home that I hoard.
They were really happy with that, but when I cracked open my Chocolate and Peanut Butter Squares, they were just thrilled!
I don't know anyone that wouldn't be thrilled to be faced with a plate of these. Picture it . . . you have a brown sugar, oatmeal buttery nutty fudgy cake type of base . . . partially baked . . .
Slathered with a rich sweet peanut buttery custard filling . . . and then topped with more of that brown sugar, oatmeal buttery nutty fudgy cake base, crumbled this time and mixed with oodles of milk chocolate bits and then baked again until the whole mass melds together . . .
Into something so scrumdiddlyumptious that it will be quite, quite impossible to eat just one. Seriously. Impossible.
I took a bite out of one just so I could show you how very tempting they are . . . ahem . . . tough job but somebody's got to do it!
Makes 20
350g of plain flour (2 1/2 cups)
While the base is baking, stir the chocolate chips/bits into the reserved crumb mixture and set aside.
Remove
the partially baked base from the oven. Pour the peanut butter
mixture over the base, spreading it out evenly. Sprinkle the chocolate
bit crumb mixture evenly over top and press down lightly. Return the
pan to the oven and bake a further 20 minutes, until golden brown.
Allow to cool completely in the tin. Lift out and cut into squares to
serve. Store in an airtight container. Delicious!
She kissed a frog, but it didn't turn into a prince . . . so cute. That Sister Wagner is such a cutie pie.
I don't know who was braver, Sister Jones or the baby frog!
I kinda think it was the baby frog, surrounded by all of us giants. Isn't nature amazing?
