These Chicken Caesar Wraps make a really lovely and quick light supper or lunch for those days that its just to hot to cook, or when you are lacking in time and inspiration. Wit a bit of salad on the side, you have a delicious meal that is really very simple to make.

I was looking to make us a delicious lunch today, that was not only scrumptious, but also fairly healthy. Todd and I both are on medication for high cholesterol and I am a diabetic, so eating healthier is the order of the day around here most days. It is a real pain getting older, but then again its a blessing as so many people don't get the chance to do just that.
As I mentioned last week, I was challenged recently by the people from The Laughing Cow to come up with some recipes for the new year using their Laughing Cow Extra Light Spreadable Cheese, and leftovers. Last week I showed you some delicious Hot Ham and Cheese Rolls and today I am showing you a recipe I made for Turkey Monte Cristos, which you can not only make using leftovers (turkey and cranberry sauce) but which are also quite healthy in comparison to the original version!
I made myself a promise when I was diagnosed as a Type 2 Diabetic that I was going to try to bake something diabetic friendly at least once a week that I could share with others, that we would all find delicious and appealing. I confess that some of my experiments have been pretty blah, but occasionally I have come up with something that is really pleasing and that I feel pretty excited to share with you! And that is the case with this delicious Berry and Apple Crumble!

I've been working hard for the past few weeks to figure out a dessert recipe that I could eat that would be just as satisfying as Pumpkin Pie (traditional at Thanksgiving feasts!) and here I am down to the wire and guess what! I figured one out and it's fabulous!
I have a confession to make. I love Grapefruit. No . . . I ADORE Grapefruit! Especially pink grapefruit. I love tinned grapefruit and grapefruit juice . . . but most of all I love fresh grapefruit. When I was a girl, it was considered very classy to serve broiled grapefruits with a cherry on top. The very height of sophistication! (Double confession . . . I still like it done this way!)
Did you know that 79% of women in the UK blame rain and cold weather for making them feel unproductive? It doesn't help that only 39% of these women eat their daily allowance of fruit in the winter! I know it's officially Spring now, but that doesn't mean that eating fruit, and especially Florida Grapefruits! Yum!
I was feeling very nostalgic today and so I made a Date & Nut loaf. I just love Date & Nut loaf, and so does Todd.
My mother always made a beautiful one. We loved it when she made it and when she made her War Cake for us at Christmas. (It was full of fat sticky raisins! I love raisins.)
I couldn't find mom's recipe today though . . . so I used my ex mother in law's. It's a really good recipe too. Moist and scrummy . . . and filled with lots of walnuts and sticky dates.
Oh so perfect with a hot cuppa herbal tea. Spread with butter . . . of course. In for a penny, in for a pound!
Perfect for elevensies, or afternoo tea . . . or for just munching on when you feel a bit peckish.
It's very low fat . . . there are only 2 TBS of fat in the entire loaf. That's not bad eh!

*Mrs R's Date and Nut Loaf*
Makes one 8 by 4 loaf
Printable Recipe
A moist and delicious loaf to serve with tea.
1 cup dates, chopped (170g)
3/4 cup boiling water (6 fluid ounces)
1 tsp bicarbonate of soda
2 TBS butter
3/4 cup sugar (145g)
1 large free range egg
1 tsp vanilla
1 3/4 cup flour (150g)
1/2 tsp salt
1/2 cup chopped walnuts (60g)
several whole walnuts to decorate
Preheat the oven to 160*C/325*F/ gas mark 3. Butter and flour an 8 by 4 inch loaf tin. Set aside.
Put the dates into a bowl. Pour the boiling water over top and add the soda. Mix, cover and let stand until the mixture cools.
Cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla. Stir in the flour and salt, then add the cooled date mixture. Stir in the chopped walnuts Don't over mix. Spread in the prepared loaf tin. Smooth over the top. Place a few whole walnut halves on top in a decorative manner. Bake for 1 hour or until well risen and a toothpick inserted in the centre comes out clean. Allow to sit in the pan for 5 minutes, before tipping out onto a wire rack to finish cooling completely.
Store covered in an airtight container. This tastes even better the next day. We like it sliced and spread with softened butter.
