This is a really delicious chilli that you can make either in the slow cooker or on top of the stove. It works well either way, so in the summer when it's hot out, I do it in the slow cooker, and in the cooler months when I don't mind a bit of heat in the kitchen, I do it on the stove! It's hearty and delicious and actually very healthy!

I am really enjoying my overnight oats! I loved the peanut butter and banana ones and the other day I tried Raspberry Bakewell Oats, with some of the berries from our garden! Delicious!

I love to watch shows on the Cooking Channel like Diners, Drive Ins and Dives, and You Gotta Eat Here. I often take notes and try to replicate what I have seen that sounds pretty delicious. This channel is a result of that, except that I lost my notes and so I had to try to remember what went into this delicious looking Panini I saw on the show last weekend. I can't remember where he was eating, but this sandwich looks fabulous and so I tried to make one here at home, with most delicious results!

These Chicken Caesar Wraps make a really lovely and quick light supper or lunch for those days that its just to hot to cook, or when you are lacking in time and inspiration. Wit a bit of salad on the side, you have a delicious meal that is really very simple to make.

These sandwiches make for a nice light and healthy supper when it gets too hot to cook, or when you are starving at the end of the day and can't be asked to cook. Not only are they quick and easy to make, but they are diabetic friendly also!
I found the cutest little baby bell peppers in the store today and I just couldn't resist picking them up! I am such a sucker for baby anything . . . kittens, puppies, duckings . . . baby vegetables!!
We've had some really nice weather this week, a bit cool, but the sun has been shining and that's always a plus in my book! The other day I made us a delicious rice salad to go with some grilled chicken for our supper. We had spent a bit of time working in the garden, so quick and easy was the order of the day!
This is a fresh and simple salad that you will find yourself using a lot over these next few months. I know it feels a bit like Winter here this week, but it won't be too long before temperatures will be soaring and you will be popping out the grills and BBQ season will be upon us!
I know it might not seem like it sometimes, but I do try to eat healthy. All the cake recipes etc. you see on here, I didn't bake them all at the same time. I try to only bake two things a week and those I bake at the weekend. The rest of the week I eat other things. As a type 2 diabetic with diverticulitis and IBS, and severe exema, finding a healthy balance can be really difficult, and a bit of a mine field, if not down right depressing from time to time.
Bowl eating has definitely become somewhat of a trend in the recent couple of years. You can call them power bowls or health bowls, Buddah bowls, etc. but there is something quite inspiring about eating out of a bowl.
Bowls are not just for soup or cereal anymore! It's like bowls have now become the hot new plates!
I created a healthy Spring Veggie Bowl for my lunch yesterday and I have to say I quite, quite enjoyed it.
I am not sure it would have brought me quite the same enjoyment had it been served on a plate, but eating this from a bowl was incredibly tasty and left me feeling very much like I was doing something good for myself.
Filled with spring vegetables . . . English peas, asparagus, purple sprouting broccoli and chard . . . each vegetable quickly cooked until crispy tender with very little use of any fat.
I used an olive oil cooking spray and a non stick pan . . . if you are afraid that the veggies will burn or stick before they are crispy tender, you can add a splash of water, which works very well, with just a touch of seasoning.
I used whole wheat pasta . . . which is a low GI carb.
Our bodies need healthy carbs. That is where we get our energy from.
There is a light dressing on the pasta . . . for a bit of extra flavour, and I topped it with some coarsely grated Parmesan cheese and chopped toasted walnuts.
Walnuts are a superfood, and so is chard and broccoli. Altogether this makes for a very colourful, quite delicious and healthy bowl full of food!

I really love Broccoli Cheese Soup. I love broccoli. It happens to be one of my favourite vegetables. It wasn't something we ever had when I was a child. I think I was fully grown and married before I ever saw it, but it was love at first bite for me.
I pretty much love it in every way shape or form, except over cooked. (I don't think anyone likes it that way and I can't say that I blame them!) Unfortunately at this stage in life, Broccoli doesn't always love me.
Broccoli and cheese are a beautiful flavor combination that works beautifully in soup. There are ton of recipes out there for Broccoli Cheese soup, but most are filled with tons of fat and calories.
What if I told you that you could easily create a light broccoli soup, which contains cheese and it despite it being light it could still be delicious?
I really, really love Broccoli Cheese Soup . . . but it can be really high in fat and calories. With all of that cream and cheese . . . sigh . . . kind of takes away from all of the positives of eating broccoli.
I am about to change that. Big time. With a heart healthy broccoli cheese soup.

I took our favourite broccoli cheese soup recipe, which has bazillion calories in it, and I made a few changes in it. I came up with a soup recipe which I think is just as creamy and delicious as the original.

There is no cream in it whatsoever, only 1 TBS of butter (instead of the original 2 ounces plus 1 TBS) and this delicious lighter version uses but a fraction of the cheese.

I used a large potato instead of cream to both thicken the soup and to help give it that creamy texture. It works amazingly well.

I used a small amount of milk and only a fraction of the cheese. I opted to use a low fat sharp cheddar (lots of flavor) and finely grated Parmesan.

Parmesan cheese has so much flavor that a little bit goes a very long way. Using a low fat cheese which contains tons of flavor is a trick to getting more cheese flavor into things without all the fat calories.

I also made some really tasty whole wheat crackers to go along with it. I used some Warburtons whole wheat wrap breads, that I spritzed with some water and sprinkled with some herbs and seasoning.

I cut into squares using a pizza cutter (easy to do coz the wraps are square) and then baked them in the oven until they were crisp! I had my soup with some of these and my husband had his with a whole wheat roll. ( I have never quite gotten over my love of having crackers with soup.)
All in all this was very delicious, and made nice light supper. Plus it gave me another way of getting broccoli with is so good for you into my husband, who declared it to be very tasty and went back for seconds.

My
attempt to make one of our favorite soups a tad bit healthier. I
think I've done just that! Personally I thought it was as good as the
original!
1 TBS butter
1 medium onion, peeled and chopped
1 cup milk (250ml)
3 cups chicken broth (750ml)
1/2 pound fresh broccoli, chopped (separate stalks from the florets)
1 large carrot, peeled and chopped
4 ounces grated strong cheddar cheese, lower fat (1 cup)
2 ounces finely grated Parmesan Cheese (5 TBS)
Melt
the butter in a large saucepan. Add the onion, carrot and broccoli
stalks. Sweat over low heat for about 10 minutes, without browning and
stirring frequently. Add the chicken broth and chopped potato. Bring
to the boil. Reduce to a slow simmer, cover and cook for 15 minutes.
Uncover and add the broccoli florets. Bring back to the boil, then
reduce to a simmer and cook for an additional five minutes. Stir in the
milk and nutmeg. Blitz smooth using an immersion blender to your
desired consistency. I like it a bit chunky, but Todd prefers it
smooth. I try to get it somewhere in beween. Stir in both cheeses to
melt. Gently reheat without boiling. Adjust seasoning with some salt
and black pepper. Serve hot.

I have osteo-arthritis, which is a very painful and somewhat debilitating disease and so I need to be eating my broccoli, and lots of it. This delicious soup can make that process very painless. ;-)

I threw together this delicious salad at the weekend, using some fruit which I had left in the refrigerator, a bit of pasta and some leftover chicken and a few other odds and sodds. Spring has me craving salad. This was light and flavourful and yet hearty enough to make a meal. The lemon and poppyseed dressing is a dressing that goes well on a lot of salads, but it especially went well on this.
One of my favourite things to get when we are eating out is a Chicken Sandwich or Burger. Yes, I know . . . we eat chicken all the time at home, and dollars to donuts I eat it again when we are out and about. I am just a boring person I guess! Chicken Sandwiches or Burgers can often be very high in fat and calories however and so today I created one which is delicious and a little bit healthier than normal, well certainly healthier than those breaded deep fried ones you get in the restaurants . . . and not only that, but it is pretty economical as well.
One of my favourite soups has to be broccoli and cheese soup. I just love it. I love broccoli anyways, and when you combine it with cheese, well . . . that is just a match made in heaven. This delicious casserole today had very similar ingredients as broccoli cheese soup, except it's not soup, it's a fabulous casserole that will have your family scrambling for seconds!
I have been taking a Cooking for Diabetes Class thru the NHS on Thursday afternoons for the past month. Today is my last class. I really wasn't sure if I would learn anything by taking the course, but I have to say that I have been pleasantly surprised and I have really learned an awful lot. Plus everything we have cooked has been healthy, low in fat, high in fibre and quite surprisingly delicious!
After all the comforts of the Christmas period, the thought of a detox can be daunting. But what if you could still eat foods packed with flavour AND be healthier at the same time? The ‘Mediterranean diet’ is exactly this, having been at the forefront of the media in recent years due to its appealing balance of delicious food and enormous health benefits. The tomato is a key ingredient in many Mediterranean dishes and tinned tomatoes are used just as frequently as fresh produce, with Cirio’s authentic tinned tomatoes being the best loved in Italy!
Back to healthy eating here in my house. We've had enough of over-indulgence. Time to get back on the horse and moving forward. You see a lot of these slider type of sandwiches about. They are very popular with families and for footie games. I thought I would try to create a somewhat healthier version by using ground turkey, and by jove I think I cracked it!
I know what you are thinking . . . skinny mac and cheese? Can it be possible. Well, in all truth, there is no such thing as truly skinny mac and cheese, and a better name would probably be skinnier mac and cheese, but hey! If you can cut the calories in a dish like this and not lose any of the flavour, and end up with a dish that still tastes somewhat indulgent, then I would say job well done!
It's not surprising when you start to add up all of the calories in all of the dishes, mains and sides, that people in the UK and other Western countries take in by eating Christmas lunch alone we are talking at a massive amount of caloric intake, for just one meal, not to mention the whole day through . . . as the feasting begins in the morning and continues on up into the night! I have tried to come up with a few sides this year that won't break the calorie bank, and yet are still delicious and which feel luxurious. This Skinny Sprout and Carrot Gratin I am showing you today is one of them.
