When it comes to burgers we are more fond of turkey burgers in this house than we are of beef burgers. I am not sure why that is. I think we just prefer the taste of turkey more and I know (Speaking for myself) I prefer the texture of ground turkey to beef. Turkey is also one of those things that you can really adapt well with other flavours such as the additions I have made here today.
Today's recipe is one which I adapted from one I found in the cookery book "The 8-Week Blood Sugar Diet Recipe Book." The original sounded really delicious.
The original recipe called for chopped dried apricots and Haloumi cheese. I had neither one of those in my larder, so I decided to go with dried cranberries and goat's cheese which I do have.
Because I had changed out the fruit and cheese in the recipe, I decided to use different herbs also. In the original they had used coriander flakes (cilantro) and red chillies.
I didn't think either one would go well with cranberries or goat's cheese and so I chose to use sage, parsley and thyme, with fabulous results! I use an adjustable measuring spoon that works really well for this. You can adjust it according to the amount you need. No need for a variety of spoons!
Make sure you really chop your cranberries and spring onions very finely. The burgers will hold together better if you do. Zirconia Ceramic Knives do the job perfectly. Good knives are your best friend in the kitchen. I always hated it when I went to my mom's and had to use her knives. They were old, dull and alot of the handles were broken and taped together. (My mom's was never a keen cook.) After the first couple of times, I used to bring my own knives with me.
Cranberries and goat's cheese go very well with each other and with turkey! These burgers are really moist and delicious!
Lately we have forgone the buns when it comes to burgers. They mostly fall apart when you are eating them and we end up eating them with a knife and a fork anyways, so its just easier to eat them plain. At least for us it is, and as a Diabetic, it is the healthier option for me!
These were served simply with a red slaw, which is a recipe I also got from the book. Red cabbage, shredded carrot and apple are simply mixed together with a simple slaw dressing.
2 TBS of mayo along with 1 TBS each of olive oil and cider vinegar do the trick. There is a bit of sweetness from the apple, and plenty of colour and crunch. One apple, one carrot and half a small cabbage, shredded finely. This 5 in 1 vegetable shredder makes really short work of that! Plus it has a handy bowl which you can mix the salad together in for serving and storing. I love kitchen gadgets like this which are not only attractive, but also useful and work well.
I did cook Todd some potatoes to enjoy with his. I really love potatoes, but in trying to keep my carbs under control, more often than not I have to forgo them.
These tasty burgers made for a lovely light supper that we both enjoyed very much!!!
Healthier options for me, whilst still satisfying my skinny husband who can eat whatever he wants. We both felt like winners!

Turkey Burgers with Cranberries & Goat's Cheese
These moist and delicious burgers are also fabulous made as meatballs. Just shape them into smaller balls and roast in a hot oven (220*C/400*F/ gas mark 7) for 15 to 20 minutes until golden brown and cooked through.
ingredients:
500g minced lean turkey (generous pound)
4 spring onions, finely chopped
4 TBS dried cranberries, finely chopped
100g soft goat's cheese, crumbled (1/2 cup)
1 medium free range egg, beaten
1/4 tsp dried sage
1/2 tsp each dried thyme and parsley
salt and black pepper to taste
1 TBS olive oil for frying

together in a bowl, mixing well together. Shape into 6 flat patties and place onto a plate. Set
in the refrigerator for about half an hour or so to firm up.

I really, really loved these tasty burgers. Simple to make and delicious, they went down a real treat. It was all I could do to keep my appetite in check and eat only one. Never mind, I filled up on salad. Bon Appetit!

We are huge fans of Turkey Burgers in our home. In fact I would go so far as to say that we actually like them far more than we like regular burgers. These are really delicious turkey burgers. I saw a lot of recipes floating around that used apple and spring onions to flavour the burgers. I expanded on that a bit by using some grated honey crisp apple, minced red onion, along with some finely grated orange zest for plenty of flavour.
I only used the ends of the apple in the actual burgers, the rest of it was sliced thinly and grilled along with the burgers. I shaped the burgers and then chilled them for several hours so that they really took in the flavours and firmed up nicely.
They grilled up lovely. When the burgers were almost done, I brushed the apple sliced with some honey mustard and popped them onto the grill plate. I didn't want them to get soggy, but preferred them to retain some of their natural crispness.
I thought the grill lines would look lovely and enhance their flavours a bit. The honey mustard also added a bit of a tang to work with the sweetness of the apple.
Once I had them the way I wanted them, I popped them onto the grilled burgers and piled on the grated cheddar, leaving it just long enough to melt down over those apple slices and the burgers. Oh boy . . . were we in for a real treat!
These were fabulous served on toasted brioche buns along with some baby rocket leaves, which added a peppery touch. (Baby Arugula if you live in North America.) Altogether these were pretty wonderful! I served them with some coleslaw for a really tasty supper!
*Turkey Burgers with Cheddar & Apple*
Serves 4
Moist and juicy with just a hint of orange. Serve with coleslaw for a real family pleasing combination!
450g ground turkey (1 pound, preferably a mix of light and dark meat)
2 TBS honey Dijon mustard, plus additional for spreading
1/2 TBS finely minced onion
1/2 tsp finely grated orange zest
1/2 tsp salt
1/2 tsp black pepper
1 large honey crisp apple, unpeeled
60g strong white cheddar, grated (1/2 cup)
4 brioche burger buns, lightly toasted
rocket leaves
Crumble the ground turkey into a bowl. Add the mustard, minced
onion, orange zest salt and pepper. Cut the ends off of the apple.
Grate the ends to give you 1 1/2 to 2 TBS of grated apple. Add this to
the ground turkey and then mix all together to blend evenly. Wrap the
remainder of the apple in plastic wrap. Shape the turkey mixture into 4
flat patties. Place on a plate, cover and chill in the refrigerator for
about 1 hour until firm.
Heat the grill on
high for about five minutes Core the remaining apple and cut into 4
rounds. Grill the burgers for 5 to 6 minutes per side, until the juices
run clear. For the last few minutes of cook time, brush the apple
slices with a bit of honey mustard and grill them along side of the
burgers, for about 1/2 minute per side. Place one slice of apple on top
of each burger along with 1/4 of the cheese. Grill for a further
minute to allow the cheese to melt, before removing.
I wonder how much longer we are going to blessed with this fabulous grilling weather! It hasn't been quite as hot this week, but we still haven't had a lot of rain and its been really quite pleasant sitting out in the garden . . . cooking, eating and reading. I hope it keeps up for a while longer!! In any case, if you are looking for a deliciously different turkey burger this weekend, look no further. You are going to love these. I guarantee! I know what you are thinking . . . Turkey Hash? It's not anywhere near a holiday is it. Well, unless you count Pancake Day (Feb 28th this year) no, it is not anywhere near a holiday. But . . . one of the things about writing a cookery book is that you have to cook things that you want to go into the book at odd times, and I found myself roasting a turkey one day last week, hence . . . . Turkey Hash. I needed to do something with the leftovers!
I had some leftover poached turkey and some ham which needed using the other day and so I decided to make a Ham and Turkey Pie. I thought that it would be fabulous and I was right! You could also use chicken, but with the holidays coming up I thought it would be nice to show you it with turkey.
This is so simple to make and so delicious!

The Canadian Thanksgiving is coming up in just a few weeks now and the American about a month or so later and then of course Christmas is on top of that. If you are a small family that don't want to cook a whole turkey, or a larger family that wants a bit extra on top of the family turkey, or even if you just want to cook some turkey to have for the week ahead to use in sandwiches or casseroles, I have a real winning recipe for you here today. This always results in a moist and well flavoured roast, which is perfect sized for all of those needs!
As I mentioned last week, I was challenged recently by the people from The Laughing Cow to come up with some recipes for the new year using their Laughing Cow Extra Light Spreadable Cheese, and leftovers. Last week I showed you some delicious Hot Ham and Cheese Rolls and today I am showing you a recipe I made for Turkey Monte Cristos, which you can not only make using leftovers (turkey and cranberry sauce) but which are also quite healthy in comparison to the original version!
Back to healthy eating here in my house. We've had enough of over-indulgence. Time to get back on the horse and moving forward. You see a lot of these slider type of sandwiches about. They are very popular with families and for footie games. I thought I would try to create a somewhat healthier version by using ground turkey, and by jove I think I cracked it!
I scored some cheap Turkey Breast Fillets at the shops last week. We love turkey in this house, turkey burgers being a real favourite. You often see turkey steaks or turkey chunks, but I have only ever very rarely seen Turkey Breast Fillets, so I did what any turkey lover would do. I bought them. I froze one and then used the other one to make this delicious casserole!
I got to go to Costco the other day with some friends and I picked myself up a nice big pack of lean ground turkey breast for about £10. What a bargain compared to what you pay for it in the shops. I was able to divide it up into 3 (1 pound) packages and still had half a pound leftover that I used to make these delicious meatball sarnies/sandwiches! This is cooking for two. If you want to make more, just double the quantities!
I really love turkey burgers. I love the fact that they are supposed to be healthier for you than regular burgers and I love that they are made from turkey. I love turkey. It's flavourful and it's lean and it makes great burgers Turkey is also supposed to be a super food. So all round, it's a favourite with me.
I know that all of my North American friends are cooking their Thanksgiving turkey's today. I am also cooking a turkey Thanksgiving Dinner this year. Tomorrow our fridges will be filled with all of the leftovers and we will be scratching our heads and trying to come up with new and interesting things to do with them. Here are some tasty ideas this morning to help you use up some of those scrummy leftovers. Of course you could just have a reheat of the leftovers, but it's also nice to dress them up in a few different ways too!

In the quest to use up some of those lovely sauces and mayonnaises I received in my recent sandwich hamper, I decided to make us some delicious turkey burgers the other day. We love turkey burgers almost more than we love regular burgers. No word of a lie.
I have created quite a few turkey burgers in the past . . . with Thai flavours, Mexican flavours, Spiced Chipotle, Buffalo Wing Flavours, etc. This time I wanted to do something completely different. I put my thinking cap on . . . and here is what happened next.
One of our favourite casseroles to make here, after we have enjoyed a roast turkey, is my turkey divan casserole (or chicken, you can make it with both). You know the casserole I mean, it incorporates the delicious flavours of sour cream, mayonnaise, lemon, curry, onions and broccoli cuts. Oh, and cheese, lets not forget the cheese!
I used fresh lean ground turkey and incorporated all of those flavours into a burger, but not just any burger . . . a Turkey Divan Burger!! By using some of the Hellman's Twist of Lemon Mayonnaise, chopped cooked broccoli, chopped red onions, some salt and pepper, curry powder and some grated strong cheddar (I used the dyed one this time for colour) I was able to come up with a delicious burger with all of the flavours of a Divan casserole.
It was moist and delicious . . . with a tiny bit of crunch and loads of colour from the broccoli, red onions and cheddar . . . flavours from the lemon mayonnaise and the curry powder. It was sooooo good. I topped them with an additional slice of that same rich cheddar cheese, let it melt down over that juicy burger and then I served them on toasted ciabatta buns, spread with some more of that gorgeous Twist of Lemon Mayonnaise and some shredded baby gems along with more thinly sliced red onions. These were fabulous to say the least. I hope you will give them a go!
*Divan Turkey Burgers*
Serves 4
A new take on our favourite Turkey Divan Casserole, created especially for
picnic and barbecue season! They are nice and moist and filled with a lovely blend
of delicious flavours.
1 pound of lean ground turkey
about 6 frozen broccoli florets, thawed and chopped,
and then well drained
180g of grated strong cheddar cheese (1 1/2 cups)
(I used the dyed one this time for colour)
1 small red onion, peeled and finely chopped
4 TBS Hellman's mayonnaise (if possible use the one with lemon
in it. If you can't get that, then add a teaspoon of finely grated
lemon zest)
1 tsp medium curry powder
fine sea salt and coarsely ground black pepper to taste
4 slices of strong cheddar cheese to melt over top
To serve:
4 ciabatta buns
Hellman's Mayonnaise (Lemon or toasted onion are good)
shredded lettuce
finely sliced red onions
Mix the turkey, broccoli, grated cheese, chopped red onion, mayonnaise, curry powder, salt and pepper together in a bowl to combine. Shape into 4 evenly sized patties, each about 1/2 inch thick. Heat the outdoor grill, if
using, or a large non-stick skillet. You may want to lightly grease it
so that the cheese doesn't stick.
Once hot, add the turkey patties. Cook for five minutes on one side, until golden brown and then flip over and cook for a further five minutes on the other side until golden and cooked through. The juices should run clear. Place a slice of cheese over top of each and allow it to melt.
Heat the buns in a hot oven and cut in half through the centre. Spread the bottoms with some mayonnaise and top with the shredded lettuce and red onions. Place a burger pattie on each and top with the bun tops. Serve immediately.
Deliciously different!
