One of my favorite things about the local Chinese Buffet here where I live now (when it was open) were the chicken wings. You could tell they were everyone's favorite because it was a difficult time getting your hands on any.
The proof of the pudding was that the container holding them was always empty, because they were so popular. You would have to wait until they brought out another one and then get up to the buffet fast so that you could get some before they all got taken again!
Beautifully flavored with a lovely crisp skin, they were the worst thing for you, lol. Deep fried and filled with fat. Why is it that the worst things for us are always the most delicious???
Its not fair!
I am slowly coming to terms with my air fryer. I am no longer cremating things in it. I think its called reading the instructions. DUH. I am so impatient when it comes to learning.
I tend to just jump in and start doing. I am learning there is a great folly in that and am making myself pay better attention to things like reading the instructions for my appliances. I am a person who generally learns best by doing rather than reading.
This doesn't always work.
Anyways, the last few things I have done in the air fryer have worked beautifully. Remember the Air Fryer Turnip Fries I did the other day? They came out perfectly.
So much so that I have done them a few more times with a variety of seasonings. Today I used Everything Bagel Seasoning with excellent results.
These Air Fryer Chicken Wings came out perfect as well. Not dried out in the least. Succulent and tender, with a beautiful crispy skin.
Perfectly seasoned and almost identical in flavor to the wings from our local Chinese, with no frying or msg. Just a perfect mix of seasonings. They turned out perfectly delicious!
WHAT YOU NEED TO MAKE AIR FRYER CHICKEN WINGS
I used only one half of the wing, in this case today, all the flat bits. I will tell you why shortly.
- 1 pound chicken wings, split, tips removed
- 1/4 tsp fine sea salt
- 1/4 tsp black pepper
- 1/4 tsp white pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp sweet paprika
When we buy chicken wings at our local shops, they are organic, grain fed chicken wings and already split, with the tips having been removed and discarded.
When you look at a chicken wing which has been split, there are two very different pieces to each wing. One flat piece and one drum stick shaped piece.
For today's purposes I used all of the flat bits and froze the drum stick pieces for another day. You can use both, but cook all the flat pieces together, and then all the drum stick shaped pieces together.
The reason for this is because they cook in different times and you want continuity of cooking. The flatter pieces will be done before the rounder pieces. Makes sense. If you are cooking the drumstick pieces they may take slightly longer to cook than the times suggested in the recipe I am sharing today.
HOW TO COOK AIR FRYER CHICKEN WINGS
Easy peasy when you know what you are doing!
Place the chicken wings into a zip lock baggie large enough to hold them comfortably so you can shake them.
Mix all of the seasonings together. Add them to the zip lock baggie with the chicken and give everything a good shake and rub, making sure that the seasonings are evenly distributed between the chicken pieces.
Spray the basket of your air fryer with some cooking spray. Add the chicken wings in one layer.
Air fry on 360*F/185*C for 10 minutes. Flip the wings over. Cook for a further 10 minutes at 360*F/185*C. Increase the temperature to 390*F/190*C and cook for a further 6 minutes, or until the juices run clear when pierced at the thickest part.
I did not add any oil or spray the wings with any cooking spray and as you can see they turned out perfectly. Crisp and yet not dry in the least. They were most enjoyable.

These were delicious. I am so pleased that I decided to give my air fryer another go and try these in it. Success lies all in the timings and the temperatures! I really hope you will try them yourself.
You could also cook these in a regular oven. The temperatures would be about the same, but they will take a bit longer to cook. You may also want to add a bit of oil.
Air Fryer Chicken Wings

- 1 pound chicken wings (I use all of the same part of the wing for even cooking, and freeze the other half for another time, so you will want 1 pound of one half or the other)

I think of all the part of the chicken, the wings are my favourite part of all. There is not a lot of meat on them admittedly, but what there is, is succulent and bone sucking delicious! And these Crispy Baked Hot Wings are the most delicious of all!
They are also rather inexpensive when compared to the rest of the chicken. When I was raising five children, we would often have chicken wings for supper rather than the more expensive other parts. Ain't nobody was complaining about it either!
I would buy a couple of big packages of them and throw them into a large roasting pan, season them all over and then roast them in a hot oven until they were crispy and finger-lickingly delicious. With five children, you needed a lot of them!
Of all the kinds of chicken wing recipes that are out there, I think Hot Wings are my favourite of all. Oh I do like the Hot Wings from KFC, but these . . . I don't mind saying . . . are twice as good as those! Seriously!
No frying involved. You just trim the wings, joint them, pat them dry and then shake them with a dry seasoning mixture and bake in a hot oven . . .
Until they are golden brown and crispy tasty!
While the oven works its magic you heat some more special ingredients to create a spicy sweet sauce. I use Franks hot sauce in this. I buy it from Amazon at a premium price . . . but it is worth every penny for dishes like this.
Its just Franks and brown sugar and water . . . heated gently until the sugar completely melts.
Once the wings are done and crispy and golden . . . I toss them into this special sauce . . .
And then I pop them back into the ovn until they are nicely glazed and truly finger-licking delicious to be sure!
These are so delicious I could easily be greedy and eat them all by myself, but . . . I share.
Coz I'm nice like that. I enjoy these with some good blue cheese dressing for dipping, but I know some people prefer ranch. Whatever floats your boat!
Crispy Baked Hot Wings

Crisp and delicious! I like to enjoy these with some blue cheese dressing for dipping.
Ingredients:
For the chicken:
- 2 pounds of chicken wings, jointed and wing tips discarded
- 1 TBS baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp garlic powder (not salt)
For the sauce:
- 60ml Franks hot sauce (1/4 cup)
- 150g soft light brown sugar (3/4 cup packed)
- 1/2 TBS water
To serve:
- Your favourite blue cheese dressing
Instructions:
- Preheat the oven to 225*C/425*F/ gas mark 7. Line a baking tray with a heavy sheet of aluminium foil and spray it with some non-stick cooking spray.
- Pat the chicken wings dry with some paper towel and pop them into a bowl. Mix together the remaining ingredients and sprinkle them over the wings, tossing all together to coat.
- Arrange the wings skin side up on the baking tray. Spritz with a bit of non-stick cooking spray.
- Bake in the preheated oven, turning them every 20 minutes until they are done, crisp golden brown and the juices run clear.
- Make the sauce while the wings are cooking. Measure all ingredients into a large saucepan. Stir and heat until the sugar completely dissolves. Set aside.
- Once the wings are cooked, dump them into the saucepan with the sauce. Stir to coat and then return them to the baking tray. Return to the oven for 5 minutes maximum.
- Arrange on a platter to serve and pass the blue cheese dressing if desired!

I declare, looking at these photos this morning makes me want to go out and buy some more wings and make this again. These are truly some delicious. Naughty perhaps, but very nice!
I love chicken wings and I know I am not alone in this. They are always the first thing to disappear on buffet tables, and I know that at the Chinese All You Can Eat Buffet back home, they are really hard to get your hands on. People just inhale them!
Chicken wings are a relatively inexpensive cut of chicken to buy. You can usually but big packs of them for not a lot in comparison to other cuts. Mind you they are mostly bone, but that's okay. The meat on them is succulent and delicious.
I used to buy lots of large packs of chicken wings when my children were growing up. It was one way of feeding my hungry lot for not a lot of dosh! I used to just season them all over and bake them long and slow and they were delectable.
This recipe here today is a simple one, and so tasty. It makes a great starter for those summer get togethers with your friends and family. The chicken has a lovely zippy flavour that goes wonderfully with that creamy blue cheese dressing.
You do need to start them the wings marinating the night before you make them to impregnate them with the most flavour that you can. They are spicy but not overly so. I would say they are just right.
I am not a fan of food that bites back. Your food should never be so hot or spicy that you can't tastte what you are actually eating.
These are just right. You get a nice amount of heat and spice without it being over the top. Of course if you want yours even hotter, you can add more spice if you like.
*Spicy Chicken Wings with Blue Cheese Dressing*
A starter for 4
Put the chicken into a large zip lock bag. Combine the
marinade ingredients and pour over the chicken in the bag. Zip the bag
closed and squelch the chicken around in the bag to coat. Place on a
plate and leave in the refrigerator to marinate overnight, giving them a
squelch around every now and then.
Whick all of the ingredients together for the dressing. Be judicious with the salt as the cheese is salty. Taste and adjust as required. Place into a covered dish and chill until needed.
When you are ready to cook, bring the chicken to room temperature. Preheat the oven to 140*C/300*F/ gas mark 1. LIne a large baking tray with a double layer of foil. Tip the wings out onto the tray in a single layer and poru over the marinade. Cook for 2 hours, turning them every now and again to make sure they don't stick and dry out.
Serve heaped on a platter with the bowl of dressing so everyone can help themselves.
You can also use minced a minced fresh red chili pepper if you want, just discard the ribs and seeds, prior to mincing (and wear gloves!), or you can use crushed chili pepper flakes. All work well. Bon Appetit!
