- 2 TBS good quality mayonnaise
- 1 TBS Dijon mustard
- 2 six inch pieces of a French baguette, split
- soft butter for spreading
Notes
If you want to take this on a picnic. Assemble the filling with the exception of the lettuce ahead of time and place into a covered container. Carry the lettuce separately as well as the buttered pieces of baguette. Fold the lettuce into the filling and assemble at the picnic site.

Chopped Ploughman's Sandwich
Ingredients
- 1 (1/2 inch thick) slice of a crisp head of iceberg lettuce chopped

- 1/2 small apple, seeded and chopped
- 1 inch piece of unpeeled cucumber, chopped
- 2 TBS good chutney or pickle
- 2 TBS good quality mayonnaise
- 1 TBS Dijon mustard
- 2 six inch pieces of a French baguette, split

Instructions
- Butter both cut sides of the baguette with softened butter. (Note, I did not cut the baguette all the way through, but more like an open book.)
- Make sure all of your fresh ingredients are chopped about the same size. I used a 1/4 inch chop. Place the chopped lettuce, cheese, ham, cucumber, pickled onion and cucumber into a bowl.
- Fold in the chutney, mayonnaise and mustard, combining everything well together.
- Stuff the buttered baguettes with the ham filling and serve immediately.

Down East Fish Cakes
ingredients:
- 250g salt cod (1/2 pound, 8 ounces)
- 250g mashed potato (1/2 pound, 8 ounces)
- 1 small onion, peeled and grated on the fine edge of a hand grater
- 1 1/2 tsp summer savoury
- salt and black pepper to taste
- 2 medium free range egg yolks, beaten
- flour for dusting
- sunflower oil for frying

How to cook Down East Fish Cakes
- Soak your cod in cold to reconstitute it according to the package directions, draining and changing the water several times. It will pong, but don't worry, it tastes beautiful.
- Once your fish is ready to cook simmer it in boiling water to cover for about 20 minutes. Drain it at the end of that time and set it aside to cool. (You can be cooking and mashing the potatoes while you wait.)
- Flake the cod into a bowl with a fork, or your fingers. (I use my fingers as I find it easier.) Add the mashed potatoes, and the seasonings, herbs. Taste and adjust as needed. Beat the egg yolks and then stir them in to combine well. Shake into a fat log, wrap in cling flim and chill over night.
- The next day when you are ready to cook them, have a shallow bowl of plain flour ready.
- Heat some oil, about 1/4 inch in a non-stick skillet until hot. Slice the fish mixture into 1 inch thick patties and coat them in flour, shaking off any excess. Place them in the hot fat, and cook until golden brown on both sides. Serve hot.
The Yorkshire Pudding Wrap
Ingredients:
- 110g plain flour (3/4 cup)
- 1/4 tsp salt
- 1 large free range egg
- 250ml milk (1 cup plus 2 tsp)
- oil to cook
- 1/2 pound of cooked roast beef, sliced thin and heated
- a quantity of leftover cooked vegetables, heated (carrots, swede, parsnips, onions, cabbage, peas, etc.)
- 2 TBS horseradish sauce
- 1 TBS grainy mustard
- salt and pepper to taste
- leftover beef gravy, warmed
Instructions:
- Whisk all of the ingredients for the pudding wrap together in a bowl until smooth. Let stand at room temperature for 10 minutes while you preheat the oven to 220*C/ 425*F/ gas mark 7.
- You will need a jelly roll tin, approximately 12 inchs by 17 inches. Pour a quantity of oil into the pan, about 1 1/2 TBS. Put the pan in the oven to heat. Once the oil has heated pour in the yorkshire pudding batter and return the pan to the oven. Cook for 20 to 25 minutes until risen and golden brown.
- Have ready a clean tea towel the size of the pan.
- Warm your roast beef, gravy and vegetables.
- When the pudding is done remove it from the tin, flipping it onto the tea towel. Roll it up tighly from the short end, and leave it for a few minutes. Unroll and then cut it in half crosswise so that you have two pieces of pudding 12 inches by 8 1/2 inches in size.
- Spread each piece with 1/2 of the mustard and horseradish sauce., followed by the thinly sliced beef, warmed vegetables and a bit of gravy drizzled on top. Roll up and serve. Pass some extra gravy on the side if desired.
