As promised yesterday I am back today with a delicious casserole that you can make with some of your leftover cooked pork. I think that this casserole would also work well with leftover cooked chicken, beef or lamb as well.
I am a great lover of the casserolee and of using up my leftovers.
We eat a lot of chicken in our house. Chicken and fish. Red meat only makes a rare appearance. We sometimes go weeks without eating red meat until a craving hits.
Then I am more than likely to choose a good steak, or some chops or sausages. But that's a whole 'nother story. Today we're talking about chicken!
I confess that I am not overly fond of drumsticks . . . thighs and breasts, they are my favourites. The breasts because they lend themselves to all sorts of quick cooking methods and are so adaptable.
The thighs because they are tender and juicy. Today however, we had chicken leg quarters, which contained both the drumstick and thighs.
These chicken pieces are beautiful flavoured by marinating them in a spicy marinade. I like to use a sharp knife and cut slashes into the chicken pieces so that those delicious flavours really penetrate the meat.
This is only something which I started doing over these past few years and I have to say it really does make a difference. The meat somehow ends up really tender as well.
The marinade itself is very simple . . . sweet paprika (not hot or smoked), dry mustard powder, salt, pepper, Worcestershire sauce and olive oil. Simple.
Simple flavours, expertly combined. Really flavour-filled.
I bet you have all of those things in your house right now. You just mix them all together and then rub them into your chicken pieces.
Then leave them to marinate, covered in the refrigerator.
Half an hour will do the job. But, as with any kind of marinade, the longer you keep the chicken in it, the chicken will absorb more of the flavours.
I think at least an hour or two is better.
Its a bit spicy and a lot tasty . . . trust me on this.
I bake it in the oven covered for about an hour at a lower temperature, and then I uncover the meat, increase the heat and finish it off for a quick roasting 15 to 20 minutes should do it.
This helps to brown if off a bit and get that tasty skin really nice and crisp.
The end result is very tender and juicy chicken. The flavours are excellent. The skin nice and crispy.
In short, chicken perfection. And I know my chicken.
Of course, if you are against chicken skin, you can discard the skin after cooking, but once in a while, I think a bit of chicken skin is a.o.k
Especially if it is as nicely flavoured and crispy as this! My sister does shake and bake chicken with skin on chicken thighs and it is to die for. My father just loves it.
I served it simply with some mashed roasted sweet potatoes that were baking in the oven along side of those delicious chicken pieces, and some sauteed rainbow chard.
Actually funny story of the chard. I went to sprinkle on it what I thought was pepper, but it ended up being cinnamon. Quite different! I've had worse!

Mustard Baked Chicken
Fabulously tasty chicken! You marinate in a tangy marinade for at least 1/2 hour prior to baking to perfection! Finger-licking good!
ingredients:
- 4 chicken bone-in leg/thigh quarters (chicken pieces with both leg and thigh attached)
- 1/2 TBS sweet paprika
- 1 tsp dry mustard powder
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 TBS Worcestershire sauce
- 1/2 TBS olive oil
instructions:
How to cook Mustard Baked Chicken
- Trim any excess fat from the chicken quarters and discard. Cut some slashes into the tops of them on both the thigh and the drumstick sections with a sharp knife. Place into a container. Whisk together all of the remaining ingredients until well-blended. Rub into the chicken in the container, coating it on all sides. Cover and place into the refrigerator to marinate, for at least a half an hour, or up to 8 hours maximum, turning them over in the marinade every now and then.
- Preheat the oven to 165*C/325*F/gas mark 3.
- Lay the chicken pieces, skin side up in a baking dish large enough to hold them. Brush and drizzle any marinade over the chicken on the tray. Cover tightly with aluminium foil.
- Roast in the preheated oven for one hour. Increase the oven temperature to 220*C/425*F/ gas mark 7. Uncover the chicken and roast for a further 10 to 20 minutes, or until the chicken is crisp and glazed and the juices run clear when pricked with a fork.
- Serve hot with your favourite accompaniments.

One thing I like to bake every Christmas is my Cinnamon Swirl Tea Bread. It is a recipe I got from my good friend Leona many years ago, and it is delicious!
Normally I just bake it plain, but during the Holidays I like to dress it up with a glaze!
Its incredibly moist and buttery and goes down very well with a hot cup of whatever floats your boat.
Tea, coffee, herbal infusions, hot cocoa . . . you can enjoy this with any hot drink.
The rich batter contains butter and sour cream, which helps to make it incredibly moist. This is one of those breads that just gets better with each day that passes.
It will be just as good, if not better on the third or fourth day as it was on the first.
Tea Breads are called Tea Breads because they are delicious served with cups of tea, not because they are made with tea.
The same way breakfast coffee cakes are not really made with coffee but meant to be enjoyed with hot coffee . . .
This delicious loaf has a lovely cinnamon flavour . . . both in the swirl which uses lots of soft light brown sugar and ground cinnamon . . .
(Oh boy, the smell . . . amazing.)
And in that sweet sticky glaze.That's right. There is the flavour of cinnamon in the glaze as well.
The swirl comes from layering in the cinnamon brown sugar mixture and then swirling it with a round bladed knife. Try not to overdo it with the swirl.
You want it to be distinct and if you work too hard at it, it will be absorbed into the bread instead of giving you a swirl. Part of the charm of this bread is that distinct swirl.
Sometimes it ends up a bit more swirly than others. You can never tell what its going to be until you cut the cooled bread open.
No matter where the cinnamon ends up, one thing is for sure. This is fabulously delicious!
Cinnamon Swirl Tea Bread
Yield: Makes 1 loaf

Terrifically tasty. Moist, yummy and oh so cinnamony!
ingredients:
- 115g butter, softened (1/2 cup)
- 2 large free range eggs
- 120g of sour cream or plain yogurt (1 cup)
- 2 tsp vanilla extract
- 190g caster sugar (1 cup)
- 280g plain flour (2 cups)
- 1/2 tsp bicarbonate of soda
- 1 tsp baking powder
- pinch salt
- 6 TBS soft light brown sugar, packed
- 2 TBS ground cinnamon
- dash ground cardamom
Optional Glaze:
- 65g icing sugar, sifted (1/2 cup)
- milk to thin
- pinch ground cinnamon

How to cook Cinnamon Swirl Tea Bread
- Preheat the oven to 180*C/350*F/ gas mark 4. Butter a 9 by 5 inch loaf tin and line with baking paper. Set aside.
- Measure the butter, eggs, sour cream, vanilla, sugar, flour, soda, baking powder and salt into a bowl. Beat together until well combined, but do not over beat. Stir together the brown sugar, cinnamon and cardamom.
- Spread half of the batter into the prepared baking tin. Sprinkle with half of the cinnamon sugar mixture. Spread the remaining batter over top. Sprinkle with the remaining cinnamon sugar. Using a round bladed knife gently cut through the batter to swirl the cinnamon sugar through.
- Bake for 55 to 60 minutes until well risen and a toothpick inserted into the centre comes out clean. Cool in the tin for 10 minutes before removing to a wire rack to finish cooling completely. Store wrapped tightly in cling film. Serve cut in slices, toasted or not, and spread with butter.
- To make the optional glaze, whisk the icing sugar and cinnamon together with just enough milk to give you a drizzle icing. Flick it over the top decoratively.

This also makes wonderful gifts for neighbours and friends. Bake, wrap well and freeze, then take out on the day, glaze and then let the glaze set, pop it onto a giftable bread board, wrap with some cellophane and tie it with a red ribbon. I have never had anyone throw it back!

I saw these marshmallows at Asda the other day and I just could not resist picking up a package! They are so cute. Little snowman faces. I just couldn't pass them by without picking up a package! (or two)
Hot cocoa has never been my favourite drink. First of all I am not fond of chocolate milk, or chocolate ice cream. I adore chocolate candy and chocolate bakes, but when it comes to milk, I could take or leave it.
Add to that the fact that most hot cocoa powders you get to use at home and largely disappointing. You end up with watery hot cocoa with lumps and bits of cocoa powder in them, because no matter how hard you try you just can't get the cocoa to dissolve completely!
About the only place you can get a decent hot chocolate is at one of the coffee shops and then it costs more than a coffee and is far too sweet for my taste.
Todd, on the other hand, really loves a nice cup of hot cocoa, although in all truth he finds the packaged hot cocoa mixes a huge disappointment as well.
One exception is the Strawberry Hot Cocoa Mix that I make myself. That is perfectly delicious. I saw a recipe on a blog called Baking Mischief the other day for a creamy rich hot chocolate sized for one person the other day and so I printed it out and decided to try it for Todd.
Oh boy . . . this is the Cadillac of Hot Chocolates! Its rich and creamy and quite delicious!
I adapted it to our tastes and measures. I left out the espresso powder as we don't drink coffee drinks in our home as we are Latter Day Saints.
Do feel free to add it if that isn't a problem for you, its only 1/4 tsp. I also adapted it so that I could make it in the microwave without having to dirty a saucepan.
I confess I had a little sip and it was absolutely gorgeous! That's coming from me who doesn't really like hot chocolate, so you know it must be really good! Todd felt very special when I set this down in front of him.
Creamy and Rich Hot Cocoa For One
Yield: 1

The perfect cup of cocoa, rich and creamy and beautifully sized for just one. You don't get much better than this!
ingredients:
- 1 TBS white sugar
- 1 TBS unsweetened cocoa powder
- pinch salt
- 1 TBS boiling water
- 160ml whole milk (2/3 cup)
- 80ml heavy cream (1/3 cup)
- 2 heaped TBS semi sweet chocolate chips
- your favourite toppings (marshmallows, whipped cream, etc.)
instructions:
How to cook Creamy and Rich Hot Cocoa For One
- Combine the sugar, cocoa powder, salt and boiling water to make a paste in the bottom of a measuring cup. Add the milk, whisking to combine well. Put in the microwave and microwave on high for one minute. Whisk in the cream and return to the microwave and microwave on high for one minute longer. (Keep an eye on it. You don't want it to bubble over.) Add the chocolate chips and whisk all together to melt the chocolate chips. Transfer to your favourite mug, top as desired and enjoy!

There are ways that you could adapt this to someone who needs to watch their sugars. For one, leave off the marshmallows. Two you could use a granulated sugar substitute instead of real sugar. You could also use evaporated skim milk instead of cream and semi sweet milk instead of whole milk I would leave in the chocolate chips however. We can't take away ALL of the fun and goodness can we?
I had taken some sausages out of the freezer to cook for our supper last night, thinking I was going to cook them with some onions, apples and apple juice, only to discover today that I had no apple juice. I really should have checked before I took the sausages out . . .
I have had this Mary Berry Cookbook, called Mary Berry Absolute Favourites, based on the television series of the same name, and I am ashamed to say I haven't used it.
I just love Mary Berry, don't you? I really miss seeing her on the GBBO. To me, its just not the same without her. I love all of her television shows as well. She seems like a genuinely nice person. This book contains over 100 brand new, simple and satisfying recipes from one of her latest cooking series, and I really have no excuse for not having used it before, as the recipes in it all seem sound and quite delicious!
I was drawn to the bright colours of this dish! I also liked that I was easily able to cut it in half to just feed two people.
I hate wasting food, and so I tend to freeze my sausages in 6 sausage lots, and I had only taken one lot out.
I buy my sausages at Costco. They are just lovely. I usually get a mix of Italian and Cumberland, and then break them down and freeze them in lots.
Her original recipe called for baby new potatoes, cut in half. I did not have baby new potatoes, so I used medium white potatoes, skin left on and cut into quarters.
I used dry thyme, and reserved some fresh thyme leaves for garnishing the finished dish.
When you peel your onion, make sure you leave the root end as intact as you can, so that when you cut it into sixths the wedges don't break apart and they stay whole while roasting.
I think a mix of red and yellow peppers would also be very nice, and pretty colourful, as would red onion.
If you line your baking tray with aluminium foil, there won't be any pan to wash up either. Perfect for these busy days we are in the middle of.
You do need a bit of white wine, but if you don't have it, I think either white grape juice or apple juice would also work very well in its place.
It helps to keep the sausages from drying out and they become almost sticky. We enjoyed this with dollops of grainy mustard on the side. I had thought to do a salad, but then forgot. In all truth we were both very satisfied with just this!
Roasted Sausage & Potato Supper

A delicious recipe adapted from Mary Berry perfectly sized for two. Quick and easy also. You can add an extra vegetable on the side, but this is surprisingly filling.
ingredients:
- 6 thick pork sausages (I like Cumberland)
- 1 medium red bell pepper, trimmed, seeded, cut into chunks
- 2 medium potatoes, washed, dried and cut into quarters
- 1 medium onion, peeled and cut into sixths
- 1 TBS olive oil
- salt and black pepper to taste
- 1/2 tsp dried thyme leaves
- 100ml white wine ( 3.5 fluid ounces)
- fresh thyme leaves to garnish if desired
- grainy mustard to serve
instructions:
How to cook Roasted Sausage & Potato Supper
- Preheat the oven to 220*/425*F/ gas mark 7. Have ready a baking tray with sides, large enough to hold everything in a single layer.
- Put the sausages, potatoes, onions, and red pepper chunks into a bowl and toss together with some salt, pepper and the dried thyme leaves. Mix together with your hands and then spread out onto the baking tray, making sure that nothing is piled on top of the other.
- Roast in the preheated oven for 1/2 hour. Remove from the oven. flip over the sausages. Pour the wine around them in the baking tray. Return to the oven and roast for a further 15 to 20 minutes. The pork juices should run clear and the vegetables should be tender.
- Transfer to a heated serving dish, garnish with some fresh thyme leaves and serve with some grainy mustard.
