Quick & Easy Banana Pudding 

 


I was looking for a quick and easy dessert the other day. I haven't been feeling too well this week and I was really wanting something that was comforting and delicious and that wouldn't require a lot of time and effort on my part.

If you are a purist you probably should look away now because this is going to push all your buttons.  It is a huge cheat of a dessert in comparison to the real thing, but I am posting it anyways because there may be a few people out there who, like me, want a delicious dessert that isn't going to take oodles of time or ingredients!
 


Quick & Easy Banana Pudding

  


Banana Pudding is a delicious dessert usually attributed to the South of America, consisting of a rich vanilla custard layered in a dish with sliced bananas and vanilla wafer cookies.  It is usually served topped with whipped cream and more cookies and sliced bananas for a garnish.

I confess I have never had the original Banana Pudding so I can't really say how this compares, but I can say to you now that it is delicious no matter what.  Quick and easy too.

It is also sized perfectly for just two people.  Although, certainly, you could multiply the amounts to serve as many people as you are wanting to feed. That would not be hard to do at all.


It does make heavy use of convenience food ingredients, but you can also cut back on the sugar and fat in doing so by using lower sugar/fat ingredients.

You basically only need a few things.  Bananas. Vanilla Pudding. Vanilla Wafer Cookies.  Whipped Cream. 



Quick & Easy Banana Pudding 



    WHAT YOU NEED TO MAKE QUICK & EASY BANANA PUDDING

As I said only a few simple convenient ingredients are needed.  These amounts are for two people. If you want to serve more, multiply as required.


  • 1 small fresh banana
  • 2 vanilla pudding pots
  • 8 vanilla wafers
  • 1/4 cup (60ml) whipping cream
  • 1/2 tsp sugar
  • few drops of vanilla
  • banana slices to decorate

By pudding pots I mean the single serving pudding pots that come in four packs that you would buy to put in children's lunch boxes.   You can get them in low fat and no sugar options.

You will need two of them, that's all.  If you are in the UK, you could use a small tin of ready made custard.

Vanilla Wafer cookies are a round crisp vanilla flavored cookie that you can buy in boxes.  Generally speaking they are relatively low in fat anyways. You can get them in mini or regular size which are about the size of a loonie/1 pound coin.

I do not mean the kind of wafers that you would find in a kitkat bar or that are available as biscuit fingers. These are round and like a cookie.  

I suggest in the UK you use custard creams (remove the filling) or malted milk  biscuits(cookies), or shortbread fingers or rounds. "Nice" biscuits would also work.  You will probably have to break them up.

You could of course use artificial cream, squirty cream or the frozen whipped cream product for the cream on top if you wish, but I do prefer to use real cream rather than a frozen petroleum product.



You might also use ready whip or dream whip as it is called here in Canada, but I think "real" whipped cream will give you the best result. You don't need a lot of it and it whips up really quickly.

HOW TO MAKE QUICK & EASY BANANA PUDDING


 No great skills are needed. If you can spoon things out and layer them, then you can make this. Children could easily make this.  The hardest, longest part is waiting the half an hour for it to set up. 


You will need two dessert glasses or small juice sized drinking glasses for this. You could even use plastic disposable glasses such as the ones you might use at a party.

Take two glass dessert cups. Press three vanilla wafers down into the bottom of each cup. Top with 1/2 pot of vanilla pudding.

Slice the banana into coins. Reserve two slices to decorate. Divide the remaining banana between the two cups, placing the slices over top of the pudding.

Divide the remaining pot of vanilla pudding between the two dessert glasses, putting half into each on top of the bananas.


Whip the cream with the sugar and vanilla until soft peaks form. Spoon over top of the pudding. Place in the refrigerator to chill for half an hour.

Decorate the top of each with a vanilla wafer broken in two and a slice of banana. Serve immediately.


If you are planning on leaving it for any length of time, you may want to brush the sliced banana with lemon juice to prevent it from turning brown.

I suppose Banana Pudding is the closest thing they might have in North America to a Trifle.  A Trifle is also a layered dessert with cubes of cake or lady fingers soaked in sherry and layered in a glass dish with custard and berries.  Topped with whipped cream in much the same way.


Both desserts are delicious.  


So there you have it quick and easy Banana Pudding.   Simple. Easy to make and very tasty!  This is the lazy man's Banana Pudding!

Peanut Chicken Flatbread Pizza 

 

One thing which I always try to keep in my freezer are flat breads of some sort.  You can get rectangular ones (like you see here) or round ones.  I also like Lebanese Pita breads and Indian Naan.



Not only do they come in handy to serve with  meals, especially soups, stews and tagines, but they also make fabulous pizza bases!

Today I used a rectangular one to make a Peanut Chicken Flatbread Pizza. I am not sure if this would be considered fusion cooking or not, but I like to think that it combines something Italian with something Thai.


I adore pizza. I adore Peanut Chicken.  The two together?  Fantabulous!

You could of course make your own pizza base or flatbread from scratch and there are no end to the recipes available to do just that.  It all depends on what you are looking for.


For ease and speed, I highly recommend a good store bought one. This one is Presidents Choice Original flatbread.  It is plain and simple and just the right size to feed four.

From there I slathered it with a delicious homemade Thai peanut sauce, topped it with some mozzarella cheese and a scattering of chicken breast cubes I had marinated and cooked in a Thai marinade.


I baked it and then finished it off with a scattering of chopped roasted peanuts and spring onions and I have to say, it was very delicious!   Not to mention, very quick and easy to make!

WHAT YOU NEED TO MAKE PEANUT CHICKEN FLATBREAD PIZZA


The ingredients for this are actually quite simple, and if you are like me and keep an assortment of oriental condiments, etc. in your store cupboard, it won't take a special trip to the shops, but if it does, trust me when I say it is worth it. 

For the chicken:
  • 1 large free range boneless skinless chicken breast
  • 2 tsp soy sauce
  • 1 tsp liquid honey
  • 1/2 tsp cornstarch
I like to use dark soy sauce. Cornstarch in the UK is called corn flour.  You can use any liquid type of honey. I like clover.

For the peanut sauce:

  • 1 tsp cooking oil
  • 1 clove garlic, peeled and crushed
  • 1/2 tsp grated fresh ginger
  • 1 1/2 TBS sweet chili sauce
  • 1 TBS hoisin sauce
  • 1/3 cup (80ml) water
  • 1 1/2 TBS smooth peanut butter


In a pinch you can sub powders for the fresh garlic and ginger.  I would use 1/4 tsp each of powdered ginger and garlic powder (not salt).


Also if you don't have sweet chili sauce, then you can make a suitable substitute by subbing 1 TBS plum sauce whisked together with 1/2 TBS sriracha sauce.  It is pretty hard to find a substitute for hoisin sauce. I would try equal parts of BBQ sauce, molasses and dark soy sauce.

You will also need:

  • 1 4-serving sized prepared flat bread (you can also use 2 medium naan bread)
  • 2 TBS light olive oil
  • 8 ounces (225g) grated mozzarella cheese
  • 1 spring onion, trimmed, washed and finely chopped
  • 3 TBS chopped roasted peanuts 


You could use chopped coriander instead of the spring onions. (Cilantro)  I happen to think that spring onion works perfectly here.  I think also you want the mild flavor of the mozzarella cheese rather than another cheese. It melts beautifully, quickly and won't take away from the flavors of the other ingredients.

HOW TO MAKE PEANUT CHICKEN FLATBREAD PIZZA

This goes together very quickly and simply once you get each element sorted.  You will have more peanut sauce than you need, but trust me when I say that you can drizzle the leftover sauce over the cooked pizza as desired and nobody will be complaining. 



I could eat that sauce with a spoon and be quite happy.

Begin by preparing your chicken. Cut it into cubes. This is best done if the chicken is semi-frozen. You can get nice clean cuts. I cut mine into a 1/2 inch dice.



Whisk together the ingredients for the marinade in a bowl and pop the diced chicken into it. Leave to sit for about 10 minutes while you make the sauce.

To make the sauce, heat the oil in a small saucepan over medium heat. Add the garlic and ginger. Cook until quite fragrant.



Whisk in the remaining ingredients, bring to the boil, and then simmer until it has thickened.  Remove from the heat and allow to cool.

Heat a small skillet over medium high heat. Add the marinated chicken and cook, stirring frequently, until golden brown and cooked through.



Preheat your oven to 375*F. 190*C/ gas mark 5.  Place your flat bread onto a baking sheet.  Brush around the edges with the olive oil.



Spoon about 1/2 cup of the peanut sauce in the middle of the flat bread and spread it around up to the edges. Sprinkle the cheese  evenly over the peanut sauce.  Scatter the cooked chicken pieces over top of the cheese.

Pop the baking tray into the preheated oven and bake until the cheese has melted, the crust is crisp and golden brown and the chicken is heated through.



While the pizza is baking chop your spring onions and peanuts for the topping.

Remove the baking sheet from the oven and let sit for a few minutes, then sprinkle the chopped peanuts and spring onions over top.  


Cut into wedges to serve!  Prepare yourself for praise and accolade, because you will surely receive them!!  This is some good!! 

Like I said, you can serve any additional peanut sauce for people to dip their pizza slices in, or you can drizzle it over top.

Cut into wedges as is, this makes a fabulous supper served with a nice salad on the side. Chinese Chicken salad is nice, or you could stir fry some vegetables.



You could also cut it into smaller squares and serve it as appetizers or game night bites for your friends and family with sauce for dipping.  



No matter how you decide to serve this one thing is for certain, everyone is going to love, Love, LOVE it!!  I guarantee!!

Favorite Thai Peanut Chicken flavors on a flatbread pizza. This is incredibly deliciously moreish.

Ingredients

For the chicken:

  2. To make the peanut sauce, heat the oil in a small saucepan over medium low heat. Add the garlic and ginger. Cook until very fragrant. Add the sweet chili sauce, hoisin sauce, water and peanut butter. Whisk together until smooth. Simmer until thickened.
  3. Preheat your oven to 375*F/190*C/ gas mark 5.
  4. Heat a small skillet over medium high heat. Add the chicken. Sauté the chicken pieces until cooked through and golden brown. Set aside.
  5. Place the flat bread (naans) onto a baking sheet. Brush the edges with the olive oil. Spread about 1/2 cup of the peanut sauce over top of the bread evenly.
  6. Sprinkle the cheese over the peanut sauce. Scatter the cooked chicken over top of the cheese.
  7. Bake for about 10 minutes in the preheated oven until the cheese has melted, everything is heated through, and the crust is golden brown around the edges.
  8. Remove from the oven. Scatter the spring onion and chopped peanuts over top. Cut into wedges to serve. Serve hot with or without additional peanut sauce for dipping if desired.

Food And Wine Combos


Are you planning to invite some friends and family over in the coming few days? Here are some food and wine pairings to spice up the dinner table. 


There are no rules when it comes to food and drink. Our taste buds are unique, and therefore we tend to enjoy different combinations. With that being said, there is something called “perfect harmony” that can be found in some textbook combinations rather than in practical life.

 

Here are some very well-known food and wine pairings that people have been enjoying for years. If you want to create a refreshing palette for your next occasion, then keep on reading.

Can You Get Wine Delivered to Your Doorstep?

In a few states, ordering wine online is not feasible due to state regulations. For example, there are no wine clubshy that ship to Utah. With special authorization, you can order wine online, but you'll most likely have to buy it from a supermarket or convenience store. Restaurants, liquor stores, bars, taverns, and other facilities exist, however, there are no direct home delivery options to specific states like Utah.

 

This law does not apply to all states, so once again, make sure to look into the laws in your designated states before proceeding to order your wine online.

 

Now, without further ado, let’s get into our combinations.

 

Cabernet Sauvignon

Nothing beats a homemade steak or a juicy burger that’s fresh out of the grill. So what’s the best choice of beverage to go with a delicious, fatty platter? A choice everyone can agree with is Cabernet Sauvignon (or just Cabernet) which has a crisp, refreshing and fruity flavor to it.

 

As you can probably tell, it is meant to go with dishes that are on the heavier side. After a few mouthfuls, it’ll freshen up your mouth and wash away the oiliness, getting you ready for more. This is because of the tannins in Cabernet.

Champagne And Cava

If you are planning to prepare something much lighter than steak, then choosing sparkling, sweet wines like champagne or cava will make for a clean meal. Champagne goes well with many salty and savory dishes; you can pair it with cheesy pasta or lasagna. It also wonderfully complements mushroom dishes.

 

Thinking of ways to add a fancy and romantic element to your movie night? Try substituting your favorite soda with Champagne! It’s perfect for snacks like popcorn, chips and assorted nuts.

 

Pinot Noir

Pinot Noir has a rather complex flavor profile; it's a perfect blend of raspberries, cherries, and mushrooms, giving it an earthy yet acidic taste. If you’re skipping the meat and settling for a fish filet, then Pinot Noir is your go-to beverage. Like champagne, this light and silky wine go well with mushrooms, various pasta dishes and of course, grilled salmon or Tuna.

 

Pinot Noir also complements certain meats like duck and beef (particularly beef stew).

 

Chardonnay

Chardonnay is more on the neutral side of some wines mentioned here. Because of its mildness, you do run the risk of muddling its subtle flavor by pairing it with the wrong kind of food. You can pair this wine with mild food as well - nothing too spicy or tangy. To put it simply, do not serve chardonnay with any dish having strong flavors.

 

Chardonnay is best enjoyed with fatty fishes and shellfish, like cod, halibut, shrimp, crab, and lobster. It also goes splendidly well with any dishes having creamy and silky textures like risottos and pasta dishes.

Merlot

Merlot is considered a wine that’s quite easy to drink, especially because it can be paired with a variety of foods. It’s a mix of darker fruits, like blackberry, black cherry and plum with a hint of vanilla and mocha. It’s great to have with roasted chicken or turkey (perfect for a family dinner).

 

What truly makes it special, however, is that you can have it with your favorite fast foods. You can pour yourself a glass of wine with pizza, burger and also with soul food like mac-n-cheese. If you aren’t sure of which wine you should go with, or couldn’t find any other choice of wine, then Merlot is your safest bet.

 

Wine To Serve With Desserts

Your meal doesn’t end after the main course - we still have deserts! After having a filling dinner or lunch, you can sit down with your guests to have something nice and sweet. For a luxurious experience, you can also try serving wine with your desserts.

 

Dark chocolate is great, but sometimes its bitterness can be a little overpowering for some people. If you’re giving your guests some dark chocolate, then why not try pouring a glass of Ruby Port with it too? It’s perfect for combating the bitterness of dark chocolate.

 

Vanilla-flavored deserts are best enjoyed with wines like Muscat. Muscat is mildly sweet and helps tone down the sweetness of some desserts. It’s great for those who don’t have much of a sweet tooth.

 

If you’re sticking to a simple apple pie for dessert, then you can try serving it with Riesling. Riesling is a highly acidic wine. Like Muscat, this also helps reduce the sweetness of desserts.

In Conclusion

Bringing in a bottle of wine for any occasion is a great way to elevate the experience of having the meal. The right kind of wine will put you in a good mood, boost your appetite and help freshen up your palette with every sip. Some will mix strong flavors, making the meal a balanced one while others will help intensify the flavors of your dishes.

 

Indeed, pairing food with wine is an art that takes a little practice and experimentation. Remember, first learn the basics and go with something easy. Once you’ve acquired enough experience, you can start experimenting with different wine flavors and foods. Good luck!
