Almond Joy Chia Seed  Pudding

  

As a type 2 Diabetic I need to really watch my carb intake. That means that I am not often able to enjoy a lot in the way of treats. I need to watch how much bread, pasta and potatoes I eat and as far as desserts go, I really need to be careful about what I eat there! 


Type 2 Diabetes runs in my family. Even my sister who is stick thin is borderline.  We are all consistently checking our glucose levels and watching what we ingest as far as sugars go.  When it comes to desserts, we are all in the same boat. 


One thing which my sister makes that we all enjoy is this fabulously delicious Almond Joy Chia Pudding!

I first had it at her house and I was so impressed with how very delicious it was.  At first I thought, hmmm . . . chia seed?  But I tasted it to be polite. 
 

I was so surprised! It was fabulous. I went in for a second taste and then I just had to ask my sister for the recipe!

WHAT IS CHIA SEED

I bet you are all familiar with chia seed without even knowing that you are.  If you bought a Chia Pet back in the 1980's (and who didn't!) then you have already had an experience with it.  Yep!  Chia seeds are the same seeds that we used to plaster onto our chia pets and watch sprout and grow! 

Who knew just what a nutritional powerhouse they were!  I didn't, that's for sure!  At best they were a novelty.

These tiny nutrition-packed “superseeds” are now a common staple in many health-conscious households. Thanks to their small size, mild taste, and versatility, it’s also very easy to incorporate chia seeds into your diet.

Filled with insoluable fiber they help to keep you regular, keep you full longer and  deliver healthy fats, protein, and cell-protecting antioxidants, plus a multitude of minerals.

On the diabetic front, Chia seeds may help control blood sugar. A randomized controlled trial published in Diabetes Care determined that adding chia seeds to normal type 2 diabetes treatments improved cardiovascular disease risk and helped to maintain good glucose and lipid control.

In short, they are very, very good for you.

They have a very mild taste, and tend to take on the flavor of whatever you put them with. When added to liquids, such as this pudding, they plump up to several times their size.  In the case of this pudding they help to thicken it without having to use thickeners or cooking it. 

These days they are very popular additions to smoothies, puddings, granola and protein bars, salad dressings,  baked goods and drinks.  

They are becoming more and more available in the shops and can also be readily purchased online, in both whole and ground versions.

They work really well in this pudding which tastes very much like an Almond Joy chocolate bar.  Rich and creamy, this delicious no cook pudding uses only a few basic ingredients and has a lovely coconut, almond and chocolate flavor!

You can use either unsweetened almond milk or unsweetened coconut milk to make it. My sister likes to use the coconut milk.  I like it both ways.

WHAT YOU NEED TO MAKE ALMOND JOY CHIA PUDDING

As I said only a very few ingredients are needed to make this delicious, sugar free, diabetic and keto friendly low carb pudding! 

  • 1 1/2 cups (360ml) unsweetened coconut milk
  • 1/2 cup (120ml) heavy whipping cream
  • 1/4 cup (19g) unsweetened coconut flakes
  • 1/4 cup (28g) cocoa powder
  • 1/4 cup (50g) natural granulated sweetener
  • 1 tsp coconut or almond extract
  • 1/3 cup (57g) chia seeds
To garnish: (optional)
  • unsweetened whipped cream
  • sugar free chocolate chips
  • toasted flaked almonds

My sister likes to use a monkfruit sweetener and I use Swerve.  Both are completely natural plant ingredients and highly suitable for things like this. 


Make sure you use unsweetened cocoa powder and not chocolate drink mix.  I have seen other people use chocolate almond milk, thereby negating the need to use cocoa powder altogether. Just make sure you use the unsweetened almond milk.


Seriously be prepared to be impressed with just how rich, creamy and delicious this pudding is!!

HOW TO MAKE ALMOND JOY CHIA PUDDING

Nothing could be easier, but do be forewarned you will need a blender (or food processor) and you do need to chill it for at least six hours in order for it to set up. 


Combine the almond milk(coconut milk), cream, the coconut, cocoa powder, sweetener and extract in a blender. Blitz until all of the ingredients are well combined. Pour the mixture into a large bowl.

Add the chia seeds and whisk for 1 to 2 minutes. Transfer the mixture to four serving cups, cover, and chill in the refrigerator for at least six hours or overnight.

When ready to serve, garnish with whipped cream, toasted flaked almonds and chocolate chips, if desired.

As you can see it is lovely and thick and despite the way it looks, it has a very smooth and palatable consistency. It tastes gorgeous.  I am in love with it.


I chose to top it with all three toppings and why not!  Cream, toasted flaked almonds and sugar free chocolate chips.  I toasted the almonds in my air fryer.  About 4 minutes at 375*F/190*C was the charm.

As a diabetic its nice to know that I can enjoy treats like this chocolate pudding every now and then. Its surprisingly delicious! I love it! You will need a blender for this. Also it does need to chill for six hours prior to serving, so plan ahead.

Ingredients

  • 1 1/2 cups (360ml) unsweetened coconut milk

Celebrity Pantries: How to create your own on budget

This year, Khloe Kardashian shared exclusive images of her new £11.3 million ($15m) Hidden Hills mansion - and the internet went wild for the reality star’s extremely organised pantry.

The Kardashians are not the only ones jumping on the pantry trend. According to Google search volume data, “Pantry organization” and “Pantry ideas” have seen a 49% and 22% increase in searches compared to this time last year.  



With this in mind, UK kitchen design and retail experts, Magnet, have commented on the kitchen storage trends celebrities like Khloe Kardashian have incorporated into their homes. The Magnet team have also shared their top tips on how to design and organise your own pantry based on the most popular pantry trends of 2022! 



Lizzie Beasley, Head of Design at Magnet commented:

“Walk-in pantries are one of the most desired kitchen features in 2022 so it is no surprise to see celebrities jumping on this trend.  


Khloe Kardashian has been one of the latest celebrities to share an insight into her pantry. The star is known for her impressive organisation, initiated by her viral cookie stacking technique. It is, therefore, no surprise all her products are immaculately displayed on illuminated shelves in £1,500 worth of labelled jars and organisers. Other celebrities such as Chrissy Teigan, James Charles and Rochelle Humes have also shared their organised walk-in pantries in the past via social media, and have given many ‘pantry envy’. 



Pantry items are an essential part of your kitchen storage, as there’s usually a large number of products you need to access regularly. Not everyone will have the space for a walk-in pantry but there are great alternatives that can replicate their practicality. A slimline pull-out design works well, or you could add drawer inserts (like spice holders or dividers) to help keep things organised.  


To replicate the organisation of a celebrity, you may want to consider putting as much as you can into containers. Glassware and ceramic storage pots add a polished finish to your kitchen and help to ensure the packaging does not detract from your overall design. You could even display these on shelves or your countertops to save cupboard space.”

Even if you do not have the space to have a walk-in pantry as extravagant as a Kardashian, you can still incorporate this trend into your kitchen using space-saving solutions. 


Lizzie Beasley, Head of Design at Magnet has shared eight top tips on how to create and organise your own pantry, based on the most popular pantry trends of 2022.


  • Create a vertical pantry 

Whatever the size of your kitchen, you can make the most of vertical wall space by opting for long and narrow pantry cabinets or shelving. This way, you can save valuable floor space whilst still creating optimal storage for your food items. 

Depending on the height of your storage, you might need to organise its contents seasonally. Place out-of-season items higher up and put your essentials within reach. You could even add a wooden sliding ladder to help you reach higher-up items, whilst also adding to the rustic aesthetic of your kitchen.  


  • Label baskets and clear containers 

To make your items look unified, remove your food items from their original packaging and store them in suitable jars or containers. Keep your organisation simple and label all your items so you can easily find what you are looking for. 


  • Incorporate tiered Shelving 

Avoid forgetting what you have stored in the back of your cupboards and add multi-tier shelf organisers. This simple addition to your pantry will help you clearly see what items you have whilst making them more accessible. 


  • Utilise neglected corner space

Optimise your corner cabinets using a corner carousel to make tight spaces fully accessible. Pull-out storage space is also a practical way to help make your organisation more efficient.


  • Add a pantry blackboard 

Add an extra function to your pantry by adding a chalkboard, or chalkboard paint, to your pantry door. This fun and practical trend can help you keep track of pantry stock when writing your shopping list! 


  • Install a freestanding pantry 

If you are limited on space and budget, you can add a freestanding pantry to your kitchen to offer storage and style. This way you do not have to commit to a kitchen refurb to get the pantry of your dreams. 


You can buy a purpose-built pantry, or if you are feeling crafty you can even repurpose furniture such as an old book cabinet. Choose a colour that seamlessly blends your freestanding pantry among your kitchen cabinets, or you can paint your pantry in a bold colour to create a statement piece in your kitchen. 


  • Add fluted or frosted pantry glass doors

Pantry doors with glass windows are a statement piece on their own. However, you can add an extra layer of elegance, texture and privacy by opting for fluted or frosted glass. This decorative glass can make your pantry become a focal point of your kitchen whilst letting light flow through.


  • Add a spice rack to your pantry door 

The inside of your pantry door can be used as a space-saving solution. Attach a shallow spice, condiment or wine rack so you can easily view all your kitchen essentials. 

Make sure to organise your spice rack regularly and throw away any old or expired items.

Cheese & Black Pepper Potato Scones





 
 I think scones are one of my favorite things to bake (and eat!).  Who doesn't love a scone?  Quick and easy to make, they are perfectly at home and fit in with all types of social and private occasions.  



Sweet scones are lovely for teas and genteel like get-togethers, whereas savory ones love homey occasions and going to picnics.  


I especially love savory scones such as these incredibly tasty potato and cheese scones I am sharing today. They are quite simple and yet so delicious! 



 
 
Cheese & Black Pepper Potato Scones 




These fabulous Parmesan & Black Pepper Potato Scones are perfect for homey occasions, buffets and picnics,  and would go wonderfully with cold meats, salads, soups, etc.  


They are light, fluffy and savory, with a bit of the bite from the pepper.  They area also wonderful packed into lunches. Split, butter and fill with a bit of ham or other sliced cold meat.

They would be beautiful as part of a Ploughman's Lunch.  What's that you say?  Well, I'll tell you.

If you do any sort of travelling in the UK and happen to stop at a Pub for lunch you will more than likely see a Ploughman's Lunch on the menu.   I would be most surprised if you didn't.



Cheese & Black Pepper Potato Scones 




At it's very simplest,  it comprises a nothing more than a  thick wedge of crusty bread, a large chunk of tasty cheese and a pickled onion. It came into favor at a time when most pub's didn't actually serve much food at all.   So you would get a bit of this and a bit of that.

Nowadays pub's are mainly eating places, so it's become much more than that. Usually there will be a bit of salad, some cold meat, some pickle, a good cheese, maybe two, and some sort of bread to enjoy along with everything else.


I have to say it makes for a very easy meal to prepare at home on a hot summer day.

These Cheese & Black Pepper Potato Scones would be very much at home with something like that!  They would it in beautifully.


Just look at how tall they rise up in the oven.  They are light and fluffy, with a beautiful texture and great flavor.  I would consider them to be perfect for all of your savory scone-needs!

WHAT YOU NEED TO MAKE CHEESE & BLACK PEPPER POTATO SCONES

They are a bit of a cheat in a way in that they use instant potato flakes. If you are like me that's not a problem I keep them in my larder at all times. They come in handy for things like these scones, and to use as a thickener for some soups and gravies.

  • 1/2 cup (50g) instant mashed potato flakes
  • 1 tsp sugar
  • 6 TBS cold butter
  • 1 cup (240ml) sour milk
  • 2 1/2 cups (350g) plain all purpose flour
  • 1 TBS baking powder
  • 1/2 tsp bicarbonate of soda (Baking soda)
  • 1 tsp salt
  • 1 TBS cracked black pepper
  • 4 TBS coarsely grated Parmesan cheese
To finish:
  • cream to brush
  • coarsely grated Parmesan cheese to sprinkle

You can sour your own milk very easily. Just put a TBS of lemon juice or white vinegar into a cup measure and add the milk as needed to come up to the full volume of what is needed in the recipe.

Leave to sit for five or ten minutes to allow the milk to sour and clabber.  Perfect!

Everything else is pretty self explanatory. Do grate your own Parmesan cheese on the large holes of a box grated so that you get a nice coarse texture. This is one instance where you don't want it to be really fine.

HOW TO MAKE CHEESE & BLACK PEPPER POTATO SCONES 


Nothing could be easier so long as you follow the cardinal rule of scone and biscuit making. Don't handle the dough too much!  A light hand is the trick! 


Preheat the oven to 220*C/425*F/ gas mark 7.  Line a large baking tray with baking paper.

Measure the potato flakes, sugar, flour, baking powder and soda into a bowl. Add the salt and whisk all together.  Grate in the cold butter, add the cheese and stir all together.  Stir in the black pepper.  Add the milk all at once and stir with a fork to make a soft dough.  Turn out onto a lightly floured surface and knead gently a couple of times.  Pat out to a round, about 1 inch thick. Using a 2 inch sharp round cutter, stamp out rounds and place a few inches apart on the baking tray.  Gently knead together the scraps and repeat until all of your dough is used up. Try to get as many rounds stamped out of the first cutting as you can as subsequent cuts will not be as tender.

Brush the tops with a little cream and sprinkle with some more Parmesan.

Bake for 10 to 12 minutes, until well risen and golden brown.

CHERRY & VANILLA SCONES - Flaky light scones flavored with vanilla and studded throughout with bits of candied cherries. Delicious!


CARROT CAKE DROP SCONES - Flecked with sweet bits of carrot and studded with sweet sticky raisins . . . lightly flavored with warm baking spices, and glazed with a sweet glaze. 


Whether you choose to bake a savory scone today, a rolled scone, a sweet scone or a rolled out scone, why not bake your family some lovin' from your oven today!
