Food is a major determinant of our health and general well-being. That's why it's the primary target for people seeking to maintain a healthy lifestyle. However, contrary to widespread perceptions, you do not need to starve to maintain a healthy lifestyle. Instead, you need to align your diet with your preferred lifestyle.

Also, avoid heavily processed red meat like hot dogs, refined grains, and alcohol.

  1. Gluten-free Diet: Put simply, a gluten-free diet includes various types of food that don't contain gluten. Gluten is a form of protein naturally found in foods like wheat and barley. A gluten-free diet is suitable for people who are either allergic to gluten or whose bodies cannot process it. However, people who have not been diagnosed with gluten-related conditions also adopt a gluten-free diet. That's because a gluten-free diet could boost energy and reduce bloating. This diet typically involves low-fat dairy products, fruits and vegetables, and beans.

  1. Vegetarian Diet: Vegetarian diets have become mainstream in recent years. While some sociological concerns have given rise to vegetarian diets, these diets equally provide significant health benefits. Research shows that vegetarian diets may be instrumental in reducing cancer risk and preventing Type 2 Diabetes. Harvard research has also found that a vegetarian diet could be instrumental in enhancing longevity and reducing the risk of chronic diseases. A vegetarian diet is primarily focused on plant-based foods. It includes healthy foods like fruits, vegetables, beans, tofu, and nuts. However, it is essential to note that you may need nutritional supplements if you are on a vegetarian diet. For instance, vegans are likely to have lower creatine levels in their blood and tissues due to meat and dairy exclusion. Thus, if you intend to adopt a vegan diet, you might want to add creatine supplements to your diet. This way, you can ensure that you have a significant amount of the nutrients your body needs.

  1. Nordic Diet: A Nordic diet generally includes a lot of whole grains, fruits, and root veggies. It cuts down on red meat, sugar, and dairy consumption. A Nordic diet also emphasizes whole foods. Essentially, your diet will include more natural foods and less processed foods. Top food options for a Nordic diet include salmon, tuna, root vegetables like beets and carrots, fruits, barley, and low-fat dairy. Research has shown that a Nordic diet could reduce inflammation, promote healthy weight loss, and reduce the risk of heart disease.

  1. Paleo Diet: A Paleo diet includes foods that were eaten by early humans. It's believed that these foods were natural, fresh, and healthy. According to the National University of Natural Medicine, a paleo diet can help reduce blood pressure, improve insulin sensitivity, and enhance weight management. A paleo diet mainly includes lean meats, eggs, nuts, fruits and vegetables, and fish.

Trays of Christmas Dainties

 

Christmas Tray of Dainties



Back in the day (and I am dating myself here), long about this time of year various ladies' groups would put on teas.  They were a great way of the organization earning funds for their charities.  Members of the organization would be asked to donate a pan of squares or sweets.


These pans of squares and sweets would then be divided into plates or trays of what were called "Dainties," with a variety of squares being put onto each plate.

I also remember this being done for Christmas teas, and other occasions such as Wedding or Baby Showers. Any time a group of women would be getting together for a special occasion to celebrate one milestone or another.


In the springtime here in the Valley there is something which is called the Apple Blossom Festival.  Its been going on since long before I was born.  Each town picks a capable young women to be the Princess of that town and then the princesses of all the towns are presented Teas all through the valley throughout the festival, culminating with the crowning of the Apple Blossom Queen at the Saturday night ball.


You can almost guarantee many trays and plates of Dainties will be served!

You would find such delectable bars such as Nanaimo Bars on these plates.  Aso popular would be Oh Henry Bars.  



I thought it would be fun today to share some of my favorite squares which I have baked through the years.  Some of which would be very pretty on a Dainty tray.  I was inspired by a box of Dainties that I picked up at the shops.

I could not resist buying a box of them. I have popped them into the freezer now and we will enjoy them on Christmas eve along with some fruitcake, mince pies and wedges of a good cheddar while we play some games and just enjoy each other's company.


I wish I had time to make a bunch of dainties for the occasion, but alas, time is running out on me, and these will have to suffice. I may be able to get my mother's Feather Squares done now and some shortbreads. It just wouldn't be Christmas without them!


I may have time to bake a few of the pther recipes on offer below, but I also have my Tourtiere, Nuts and Bolts, and some other odds and sods to make before the holiday. Every year I say I am going to start earlier, and every year I somehow find myself falling behind. I think it's that way with us all!  Tell me I'm not wrong!



Mom's Feather Squares
 


MOM'S FEATHER SQUARES - When my mother had these in the oven, we knew Christmas was just around the corner. We only ever got them at Christmas.  With their delicious buttery cake base, jam filling and toasted coconut meringue topping, they delighted us with every mouthful!



Sugared Date Squares




SUGARED DATE SQUARES - These delicious date squares are very easy to make.  Filled with loads of crunch, from rice crispies and sweetness from the dates, I find them incredibly moreish. On their own they are lovely but cut into small squares and rolled in icing sugar they become melt in the mouth delectable!



Mars Bar Squares



MARS BAR SQUARES - Melted mars bars, plenty of crisp rice cereal, melted chocolate on top. If you can melt chocolate, you can make these lovely squares.  Seriously, they are that simple! Rich and delicious, I find them to be incredibly moreish. I can never eat just one and I am guessing you won't be able to either! 


Cherry Cake Squares



CHERRY CAKE SQUARES - These are a blondie type of a bar with a pretty basic batter.  Dense and chewy, and filled with lots of candied cherries. Topped with a rich buttercream frosting and halved candied cherries, they look really pretty on a dainty tray. They are delicious!


Classic Date Squares




CLASSIC DATE SQUARES - With their oaty crumble topping and base and sweet sticky date filling, these have always been a family favorite. Again, they were only something my mother would bake for us at Christmas, and we looked forward to them each and every year! 


Sweet Marie Slices




SWEET MARIE BARS - These delicious bars taste just like the old chocolate bar they used to make called the Sweet Marie Bar. Like the chocolate bar, they are chock full of crunchy-ness, and chewy-ness, and peanuty-ness, and scrummy-ness . . . with just the right amount of chocolaty-ness to make them incredibly moreish, can't put me down . . . addictive-ness . . .


Flash in the Pan Chocolate Squares




FLASH IN THE PAN CHOCOLATE SQUARES - This is a lovely and moist chocolate bar/cake.  Not too sweet, but with just the right amount of chocolate flavor. It is more like a cake than a bar. I don't think you could call it a brownie, unless you are wanting a very cake-like brownie. I like to top each square with a walnut half before baking.  You could frost if  you wished.


Queen of Pudding Cakes




QUEEN OF PUDDING CAKES - Delightful little cakes.  Perfect for parties!  It's a one bowl method cake so it's perfect for little hands to help with.  They will also enjoy topping the finished cakes with those dainty crisp meringues.  


Strawberry Jam Tray Bake




STRAWBERRY JAM TRAY BAKE - These boast a flaky short crust pastry bottom.  This is topped with sweet strawberry jam. I like to use the seedless jam. A cake batter is baked on top and then once baked a decorative glaze is applied. Delicious!


Chocolate Raspberry Pie  Bars




CHOCOLATE RASPBERRY PIE BARS - With these squares, you end up with a crisp and buttery brown sugar, almost shortbread-like crust. That is topped with a sweet milk chocolate filling, cookie dough crumbles, semi-sweet chocolate chips and fresh raspberries. What's not to like about that! Not a heck of a lot I say!  Not a heck of a lot!


Walnut Meringue Bars



WALNUT MERINGUE BARS - what you have here is a square with a beautifully moist caramel flavoured cake base. Brown sugar keeps it moist and gives it that lovely caramel flavour. I would say it is very similar to a blondie base. This gets topped with a delectable brown sugar and walnut meringue. Together the two are undeniably delicious!

Ravioli with Sausage & Brussels Sprouts






I picked up a magazine at the supermarket the other day that I could not resist. It was entitled Quick & Simple Cooking for Two.   It was not cheap, but in glancing through it, I saw quite a few recipes that I would probably like to cook so I bought it.


I am a person who likes to use what I buy and point in fact, I've only had it for a couple of days and already I cooked one of the recipes I had flagged in it!

Ravioli with Sausage & Brussels Sprouts.  Not only did it look and sound delicious, but it also used things that I already had in my house!


It also looked very quick and simple to make, plus I figured that I could cut it down again to feed only one person, Moi!   (I did so quite satisfactorily as you can see!)

What I ended up with was a dinner that was quite generously sized for little old me, and which was filled with color and flavor. It also only took a few simple ingredients, always a bonus.



And I could have it on the table in about fifteen minutes time, tops!  I could not go wrong!

I did see a much more elaborate version of the recipe online here, but why fix what isn't broken?  This version I tried was absolutely delicious and I didn't feel it could be improved upon.

I think, if you try it, you will agree!  This recipe is perfect just as is! 



Ravioli with Sausage & Brussels Sprouts 






WHAT YOU NEED TO MAKE RAVIOLI WITH SAUSAGE & BRUSSELS SPROUTS

Very few, simple ingredients! There is nothing elaborate or complicated here.

  • 8 ounces (230g) cheese ravioli
  • 1 TBS olive oil
  • 4 ounces (115g) Italian sausage, casings removed and discarded
  • 6 ounces (170g) Brussels sprouts, trimmed and thinly sliced
  • fine sea salt and freshly ground black pepper
  • 1/4 cup (60ml) chicken broth
  • grated Parmesan or Romano cheese to serve

I actually used Spinach and Cheese Ravioli for this, and it worked beautifully. I had been a tiny bit worried that the flavor of the spinach wouldn't work with the sprouts, but there was no conflict at all!  

I used part of a package of fresh ravioli found in the chiller cabinet in the shop. The rest I packaged into smaller serving sized zip lock baggies and froze for a later date.

I used PC "Free-From" Sweet Italian Sausage.  They are quite plump and nicely flavored. There are five sausages in a package. I used one for making the single sized serving, so two of them would work very well for the full recipe feeding two people.


The Brussels Sprouts I bought the other day were the size of a golf ball! I have never seen such large ones, but they were nicely flavored and worked well in this recipe where I was only going to be shredding/slicing them thinly anyways!

For chicken stock I used some of the stock that comes in a small container that you can reconstitute to make larger amounts. You could also use powdered bouillon or bouillon cubes, stock pots, etc.


I did not need to use a lot of seasoning for this, except for pepper. If your ingredients are good quality, this is often the case. I happen to love lots of pepper in things and since I was making this only for myself, I could use as much as I wanted to! One of the plusses of living on your own.

HOW TO MAKE RAVIOLI WITH SAUSAGE & BRUSSELS SPROUTS

This was probably one of the quickest and simplest pasta dishes I have ever made!


Cook the ravioli as per the package directions, drain well and keep warm. (Generally speaking, most fresh pastas do not take long to cook at all.)

While the ravioli is cooking heat the oil in a skillet. Add the sausage and cook, breaking it up with a spoon, until it is browned and cooked through, about 7 minutes.


Add the sprouts to the pan and cook, stirring frequently for a further 2 minutes. Season lightly with salt and black pepper.


Add the chicken broth and bring to a simmer.


Serve this sauce spooned over the cooked ravioli, sprinkled with cheese if desired.

I think that this is a dish that could very easily be doubled to feed more than two people.  Halving it made a very generous serving for just me, so I can imagine that doubling it would make a perfect supper for four people.

You could also add some toasted pine nuts if you wanted to add a bit of crunch and texture.  To toast pine nuts, I simply bake them on a small baking sheet in a hot oven (400*F/200*C) for about 8 minutes or so.  

Keep an eye on them as they can burn very quickly!

There was a ton of things to love about this dish!  Not only was it quick and easy to make, but it was incredibly delicious!  I loved the variety in texture, colors and flavors.


I also loved the speed at which this went together.  In a week which is a really busy week I was really needing something that was not only simple to make but easily put together as well as being nutritious!  I could not love this more!

If you are also an empty nester and looking for smaller, simpler meals, you might enjoy the following:


CLASSIC POT ROAST FOR TWO - Who says if you are on your own you can't enjoy comfort food such as pot roast without having to eat it for a week!  This smaller version feeds two people amply with just enough for one meal of leftovers!  And it's delicious, lacking none of the flavors of the full-sized version!


EASY CHICKEN PARM FOR TWO - Chicken Parmesan has to be one of my favorite meals.  Tender breaded pieces of flavor filled chicken topped with a rich tomato sauce and plenty of cheese. This smaller version is every bit as delicious as its full-sized counterpart!

Gingerbread Rocky Road 
 




My son and his family are coming over from New Brunswick for Christmas this year. I am really looking forward to seeing them!  It will be the first time I have had Christmas with my son in 24 years and the first time I have ever had a Christmas with grandchildren involved!


Lots to celebrate. This week I will be making up treats for the boys in anticipation!  I have quite a few Christmases to make up for!


Gingerbread Rocky Road 






Rocky Road is one of those things' children all love and is such a simple thing to make!  It is known to be Prince Williams' favorite dessert.  I have made it before on here and it is delicious.


When I saw this Gingerbread version the other day on Foodie Quine, I knew that I had to recreate it for my boys! It was just so darned cute!! 


Gingerbread Rocky Road 



Imagine a sea of little gingerbread men swimming in a sea of milk chocolate, along with a bundle of penguin eggs. (That's what I am calling the Christmas colored candy covered chocolate eggs.)


I wasn't able to get mini gingerbread men as cute as the ones on that other blog. I did get these red sprinkled ones from Voortman. 



Gingerbread Rocky Road 




I actually picked them up a week or so ago. The advert said they tasted like the old Windmill cookies. They do kind of taste like Speculaas. I love Speculaas.


I had no idea in mind that I would be able to use them in such a sweet creation!  It must have been in the stars for these delicious bars to be made!

One thing I really like about Rocky Road is that it is so easy to make, and another thing is that it keeps for quite a while.  That makes it the ideal make-ahead treat for the holidays!


And if you are making up Cookie Trays, Rocky Road is the perfect addition!  I guarantee nobody will be turning their noses up at it!


Normally you use just ordinary broken biscuits in it, like Maria biscuits or Social Teas but broken gingersnaps add an especially festive touch!

WHAT YOU NEED TO MAKE GINGERBREAD ROCKY ROADS

A bit of this and a bit of that.  A whole lotta chocolate! Yum!


  • 1/3 cup (75g) Butter
  • 18 ounces (500g) Milk Chocolate (split into 11 oz/ 300g and 7oz/200g)
  • 4 Tbsp Golden Syrup
  • 16 crisp Ginger Nut Biscuits
  • 1 1/2 cups (75g) Mini Marshmallows (I used multicolored ones)
  • Mini Gingerbread Men and Christmas Eggs to decorate the top

You can use any milk chocolate that you can get your hands on. It doesn't have to be really special. I used a mix of bars that I had in the house. 


There were some Green & Blacks, Cadbury's and a couple of Hershey bars. They all worked beautifully.

Golden syrup is available at any British goods shop, or on Amazon, but don't worry if you can't get it. You can use golden corn syrup or light corn syrup.

I would not use maple syrup or honey. I don't think it would work the same way.

The ginger biscuits that I used were a Newfoundland variety that I just happened to have in the cupboard by Purity.  Just use any ginger biscuits you have on hand.

The only requirement is that they are crisp!  You don't want to be using soft ones.


I used the multi-colored mini marshmallows, but you can use all white if that is all you can find!

HOW TO MAKE GINGERBREAD ROCKY ROAD


When I say it couldn't be easier to make than this, I really mean it!


Have ready an 8-inch square baking tin that you have lined with baking paper.


Put the ginger biscuits into a plastic bag and give them a bash with a rolling pin to break them up a bit. You want some crumbs some small chunks and a few larger chunks, but no really big/huge bits.


Melt the larger amount of chocolate along with the golden syrup and the butter in a heavy based saucepan over medium low heat on top of the hob, whisking together until smoothly amalgamated. Remove from the heat and allow to cool for a few minutes.



Gingerbread Rocky Road 





Stir the broken biscuits into the chocolate mixture, then fold in the marshmallows. Press the mixture evenly into your prepared tin, pressing as compact as you can. (I just use my hands.)


Melt the remaining amount of chocolate and pour it over top of the mixture in the tin, spreading it out evenly to cover.


Break your gingerbread men cookies in half and place them haphazardly over top of the melted chocolate, pressing them down into it a bit. Add the chocolate eggs in between.


Place in the refrigerator to chill for several hours. Once cold, cut into squares with a sharp knife.


Store in a tightly covered container. This will keep for quite a while.

These are just so darned cute!  Even ugly gingerbread men aside! I think the boys will really like them. You know kids. If its sweet, they are on it!


I can promise you no gingerbread men were hurt in the making of this recipe, lol.

MELTING SNOWMEN & RUDOLPH BARKS - There is nothing cuter. Children love this. It's also a fun thing to make together.  There are two kinds.  Melting snowman using white chocolate and Rudolf using milk chocolate.  This also makes fabulous gifts!

This is a book I wrote several years ago, published by Passageway Press. I am incredibly proud of this accomplishment. It is now out of print, but you can still find used copies for sale here and there. If you have a copy of it, hang onto it because they are very rare.

Welcome, I'm Marie
Canadian lover of all things British. I cook every day and like to share it with you!
A third of my life was spent living in the UK. I learned to love the people, the country and the cuisine. I have always been an Anglophile. You will find plenty of traditional British recipes here in my English Kitchen. There are lots of North American recipes also, but then again, I am a Canadian by birth. I like to think of my page as a happy mix of both. If you are looking for something and cannot find it, don't be afraid to ask! I am always happy to help and point you in the right direction, even if it exists on another page, or in one of my many cookbooks.
