Potatoes O’Brien (Small Batch) – Easy Skillet Breakfast for Two

Some mornings just call for a hearty, comforting skillet of potatoes — the kind that brown beautifully, smell amazing, and make you feel like you’re starting the day on the right foot. This small‑batch Potatoes O’Brien is perfect for one or two people, with tender par‑boiled potatoes, sweet onions, and colourful peppers coming together in a buttery, golden fry. 



It’s quick, budget‑friendly, and full of flavour, making it ideal for breakfast, brunch, or even a simple supper. If you love easy skillet recipes that deliver big comfort without a lot of fuss, this one is sure to become a favourite.

The potato has always been my favorite vegetable. I eat and love them in any way shape or form.  One of my favorite ways is just plain boiled and broken open with lots of butter melting into the broken flesh and perhaps a few chopped fresh herbs and some salt and pepper.  I also love LOVE them fried.


When I was growing up was always a great night when our mom would make us pan fried potatoes for our supper! She would use leftover boiled potatoes, thinly sliced and then browned on both sides in real butter. A simple dusting of salt and pepper was all they needed. I still make them the same way.


Potatoes O'Brien is a delicious twist on those old favorites. Cubed and browned with onions and peppers, they also make for a really delicious side which you can enjoy  for supper or with your eggs at breakfast.  They have an additional seasoning besides salt and pepper. I like to use BBQ but any seasoning really works well.


This is a small batch recipe making only two generous servings. If you are a potato hog like me, you may even want to double it. Seriously I could sit and eat a whole plate-full of these and nothing else and be quite happy.


On this day however, I did enjoy them with some eggs. They went down a real treat.  I did add some diced bacon to the pan when I was frying them. I loved the chef's kiss of smoky flavor it gave to the potatoes. You might too!

Simple ingredients put together simply and in the most delicious way! 



  • 2 large Yukon Gold potatoes, peeled and diced into 1/2 inch dice
  • 2 TBS butter
  • 1 cup (100g) chopped onions
  • 1 small red bell pepper chopped
  • 1 small green bell pepper chopped
  • 1 fat clove garlic, peeled and minced
  • 1 tsp BBQ seasoning (Or to taste)
  • salt and pepper to taste (optional)

Yukon Gold potatoes are ideal because its naturally buttery flesh browns beautifully while staying tender inside . It also holds its shape well in the skillet, giving you crisp edges and a soft center. Peel and dice it into even ½‑inch pieces so everything cooks evenly.

🧈 Butter

Adds richness and helps the potatoes brown deeply and evenly . Butter gives that classic diner‑style flavor, but vegetable, avocado, or olive oil can be used if you prefer.


πŸ§… Onion

Chopped onion brings sweetness and savory depth to the skillet . Yellow or sweet onions work beautifully, softening into the potatoes as they cook.


🌢️ Bell Peppers (Red & Green)

A mix of red and green peppers adds color and a mild sweetness that balances the buttery potatoes perfectly . Any color works — use what you have on hand.

One minced clove adds a savory, aromatic base that ties the whole dish together . Fresh is best, but jarred garlic works too (about ½ teaspoon).

This homemade seasoning gives the dish its savory warmth and gentle spice, and the recipe is written around its flavor profile . If you don’t have it, Creole Seasoning, Lawry's Seasoning, salt and pepper, garlic salt, or lemon pepper are perfectly fine substitutes. I have a recipe here to make your own Creole Seasoning.

🌟HOW TO MAKE POTATOES O'BRIEN🌟 



This really couldn't be simpler. You could speed things up even more by using leftover cold cooked potatoes, cubed.


  1. Bring a saucepan of lightly salted water to the boil. Add the potatoes, cook for 3 minutes, then drain well. (They should be al dente.) (Alternately you could use leftover cooked/boiled potatoes, peeled and cubed. Make sure they are cold.)
  2. Melt the butter in a medium non-stick skillet. Add the potatoes to the skillet. (Leave undisturbed for about 5 minutes before stirring to allow the potatoes to form a crust on the bottom.)
  3. Cook, stirring occasionally until the potatoes begin to brown. (I use a wooden spoon.)
  4. Add the peppers and onions. Sprinkle to taste with the BBQ seasoning, salt, and pepper. Once again, cook stirring occasionally until the peppers and onions are softened and the potatoes are golden all over. (Again, I use a wooden spoon.)
  5. Taste and adjust seasoning as desired. Serve hot.

  • Soggy potatoes? Pan too crowded or not hot enough — spread out and increase heat .

  • Hard centers? Steam briefly with a splash of water and cover, then crisp uncovered .

  • Sticking? They need more time to form a crust — wait until they release naturally

    Cut the potato into ½‑inch dice so everything cooks at the same rate and you avoid a mix of soft and firm bites .

  • Par‑boil for crispiness.
    Boil the diced potato for 3 minutes to soften the center — this ensures the skillet crisps the outside instead of leaving the middle hard .

  • Use a hot pan and sizzling butter.
    The butter should be melted and sizzling before the potatoes go in. A hot surface sears on contact and prevents sogginess .

  • Keep everything in a single layer.
    Crowding causes steaming, not browning. A larger skillet gives each piece room to touch the hot surface and crisp properly .

  • Let the potatoes sit undisturbed.
    Don’t stir too soon — leave them for 3–4 minutes so a golden crust can form and the pieces release naturally from the pan .

  • Season well.
    BBQ seasoning adds savory warmth, but salt, pepper, garlic salt, or lemon pepper work beautifully too .

  • Use cast iron if you have it.
    It holds heat exceptionally well and gives the best color and crispness.

    CAN THESE BE BAKED RATHER THAN FRIED?

    Sure. Just toss all of the ingredients with melted butter and roast  on a baking sheet at 400*F/200*C/gas mark 6 for 20 to 25 minutes until golden and tender.  Stir halfway through the bake time.


    CAN I ADD CHEESE OR BACON?

    Yes! Stir in shredded cheddar cheese during the last minute of cook-time for a cheesy version, or cook several rashers of streaky bacon in the skillet first and use the drippings instead of butter.
