Grilled Steak with Onion & Blue Cheese Sauce

 

I fancied a steak the other day and I happened to have two smallish sirloin steaks in the freezer. I am always looking for new ways to cook things. The ADHD in me loves exploring different tastes and flavors when it comes to cooking and eating. I never want my food to be boring!


This recipe I am sharing with you today is one that I found in a Pioneer Woman Cookbook that I have entitled, Food From My Frontier, by Ree Drummond.   The original recipe fed four people. I adapted it to feed only two.

I think I have all of the Pioneer Woman's Cookbooks. They are ones that I chose to replace when I came back to Canada.  I love her style of cooking and her recipes always work out well.  She is a woman who has done very well for herself.  I admire that.


This is a really delicious recipe. No surprise there!  You might not think that a cheese sauce would go well with steak, but this blue cheese sauce totally does!  And really cheese and steak are a brilliant combination. Think of the Philadelphia Cheese Steak Sandwich.  The state is famous for their cheese steaks. 


Steak and cheese . . .  it totally works.  Trust me on this.

WHAT YOU NEED TO MAKE GRILLED STEAK WITH ONION & BLUE CHEESE SAUCE


A few simple ingredients. If you make sure you use the best quality ingredients that you can afford, then  you really can't go wrong!


  • 2 rib eye or top sirloin steaks (4 ounces/115g each)
  • coarse sea salt, garlic powder and coarsely ground black pepper to taste
  • 4 TBS butter
  • 1 medium white onion, thinly sliced
  • 1/2 cup (120ml) heavy cream (whipping cream in North America)
  • 2 tsp Worcestershire Sauce
  • 1/3 cup (40g) crumbled blue cheese (I used Danish)

My steaks were not really large, but they were about 1/2 inch thick.  They came out lovely and tender.  That's because I do not overcook my steak.  Nothing toughens a piece of meat more than over-cooking it.  Do be generous with the seasoning, and make sure you use garlic powder and NOT salt!


I had some lovely white onions that I had bought a number of weeks back at the grocery store. I think they came from Texas. They were organic. I have been really enjoying them. This was my last onion.


You could use any kind of sweet cooking onion.

My cheese was a Castello Danish Blue. I love the stuff. You could use Stilton if you wanted to, which would give you a much stronger blue flavor, or you could use the plain stilton if you don't like blue cheese.  


You want a crumbly cheese that melts well and is creamy. A good strong cheddar would also be very nice I think! (I would use a white one, not a colored one.)  I am thinking a garlic and herb Boursin would also be lovely.

HOW TO MAKE GRILLED STEAK WITH ONION & BLUE CHEESE SAUCE


This was very simple and quick to make. I cooked my steak in a heavy bottomed skillet on the stove top, but you could also do it on an outdoor grill or even in an indoor grill. You could also broil it if you wished.  The sauce really makes this. 



Pat the steaks dry and then generously season on both sides with garlic powder (not salt), salt and black pepper.


Melt half of the butter in a heavy bottomed skillet over medium high heat. Once it begins to foam, add the steaks, cut sides down.


Cook three to four minutes per side, until nicely browned. Remove from the skillet and allow to rest, loosely tented with foil while you make the sauce.

To make the sauce, using a clean skillet, add the butter over medium high heat. Add the onions. Cook, stirring occasionally until they just start to brown, about 7 to 8 minutes


Pour in the cream and season lightly with salt and black pepper.


Add the Worcestershire sauce and allow to bubble up. Stir in the blue cheese and whisk to melt. Remove from the heat. Taste and adjust seasoning as required.


Place the steaks onto two heated plates and serve with some of the onion cheese sauce spooned over top.

This was really, REALLY good.  Excellent even. I would never have thought of pairing steak with a blue cheese sauce, but it works beautifully!  You need to try this!


I served this with some chunky potato wedges that I cooked in my air fryer with some of the garlic maple seasoning I got at the farmer's markets a few weeks back and some tasty steamed vegetables.  


I steamed the veggies in the microwave really easily. I simply added some thickly sliced zucchini and broccoli florets to a  small microwavable dish, added a TBS of water, covered, and then cooked on high for two minutes. They were perfect!

I could happily become a vegetarian if it weren't for steak.  I love a good steak, cooked properly.  Here are some other ways that I like to enjoy it which you might also like!



PAN SEARED STEAKS WITH GARLIC BUTTER - Tender and juicy perfectly seared, cooked and flavored steak. The garlic butter goes perfectly. A cast iron skillet works best, but if you don't have one you can use any skillet with a heavy bottom that can handle a high heat well. Steak and garlic are perfect partners.



GRILLED STEAK SANDWICH -  This is a delicious knife and fork sandwich, with a lovely garlic toasted sour dough, slathered with a horseradish mayo and then topped with fresh rocket  leaves (baby arugula), perfectly seasoned and cooked steaks, some melty cheese and grilled portabella mushrooms to finish them off on top.  These sandwiches make for a light and very tasty supper on their own, but add a few chips and some onions rings and even the heartiest eater will approve!

  1. Way to ruin a good steak with too much cream sauce. Much better to use sauted onions alone with a small dollop of blue cheese/butter spread.
