Meals of the Week, September 28th - October 4th, 2025



Hi everyone and welcome to my weekly Meals of the Week post! Every Sunday I like to do a post about all of the delicious meals I have enjoyed for my main meals over the past seven days. I share all of the recipes and menu suggestions as well!   You all seem to enjoy these posts, which is great, as I really enjoy writing them.


It is a good thing for me to be able to take stock like this and see what I have been eating. It helps me to plan my meals in the future as well and to pick up on any changes to my diet I might need to make.  


I like to cook for myself for the most part, except for the occasional meal out or for dinner at my sister's place on Sundays.  I don't really like eating frozen dinners or ready meals. They are always high in salt and fat, sugar too. Also, they never look or taste even a fraction as good as the photograph on the outside of the package.


I cook simple, budget friendly meals for the most part.  Food using honest and whole ingredients.  East to prepare as well.  I don't like to get too fancy in my everyday cooking, unless I am having people over to supper.  Most of the time I do keep things fairly simple.  I had enough of complicated in my work life. Now, in my retirement, I find that simple suits me just fine.



I am also on a limited budget as most seniors are and so I try to keep things down, cost-wise, and take advantage of specials, etc. I live by myself, so most of my meals are now tailored to suit small families, of only one or two people, although most of my recipes can certainly be doubled to feed larger groups.


I try to keep my meals varied and somewhat healthy, with plenty of vegetables most of the time and not a lot of fried foods.  I do like my cheese. But there are far worse things I could indulge in, and I don't eat cheese every day. 


I do enjoy sharing these weekly menu and recipe roundups with you and I know from the feedback that you give you enjoy me sharing them as well.  If I can inspire someone to cook for themselves and eat a varied menu then that makes me very happy!!



NOTE: This does not include the meals I eat for my breakfast or my light suppers. (I eat my main meal usually around noon, so supper is usually something light like toast, cereal, a salad, etc.)



Sheet Pan Omelet for Two



SUNDAY, September 28th - Sheet Pan Omelet for Two


Sunday was a bit of a busy day with us both having to go to our different churches.  Normally I would have gone to my sister's for supper, but not this week.  I made my daughter and I Sheet Pan Omelet for two.  This is a bit like a Western Sandwich filling. 


This is a great little omelet. Not only is it baked, saving calories on frying, but it is loaded with small amounts of meat, cheese and vegetables for color and flavor.  There is nothing over the top here, but it all works together and comes out delicious anyways!


I had some chopped peppers and onions leftover from us making a pizza and I added a bit of chopped ham. This worked very well. I did top with the sliced tomato and cheese. My daughter picked hers off as she doesn't like tomato. That's okay!  I added some Tater tots that I cooked in the air fryer and some toast. This was a filling and very satisfying meal!



Inside Out Bacon Cheeseburgers



MONDAY, September 29th - Inside Out Bacon Cheeseburgers


I am loving having my daughter here as I am able to indulge in a few treats that I don't normally enjoy! Inside Out Bacon Cheeseburgers are one of those things.  These are a really simple burger to make. The burger is actually stuffed with the cheese which melts inside as the burger cooks. I use two different kinds of cheese, a good strong cheddar and some Emmenthaler cheese (Swiss).


These always go down a real treat with some oven chips on the side (I do my chips in the Air Fryer) and with our favorite toppings added. For me that means grilled onions, sliced tomatoes, lettuce, some Dijon mustard and sweet pickle relish. There is also bacon on the burgers. Very naughty I know!


Air Fryer Tacos



TUESDAY, September 30th - Air Fryer Turkey Tacos


I ended the month with some tasty tacos. The filling for them gets cooked in a skillet.  I like to use ground turkey as it is a bit healthier than ground beef. I also like it better than ground beef.  Once filled, the tacos are then finished in the air fryer.  I use flour tortillas.  They get nice and crispy without being too hard.


We enjoyed just the tacos with our favorite toppings. For me that is Sour cream, Salsa, chopped olives, lettuce, chopped onions, cheese and guacamole! Another delicious treat!  The heartier eater could enjoy some rice on the side, or tortilla chips, or even a salad!


Sheet Pan Glazed Apricot Chicken


WEDNESDAY, October 1st - Glazed Apricot Chicken with veggies


I started off the month of October by making us a delicious Sheet pan supper. Tender and juicy chicken breasts with a lush apricot glaze, baked on a lipped baking sheet with an assortment of vegetables.  My daughter is not overly fond of potatoes, but she does like them roasted.


I combined potatoes, carrots, sweet potatoes and some sugar snap peas, with some oil and seasonings for a delicious roasted blend.  The glazed for the chicken is composed of whole grain mustard, Dijon mustard and apricot preserves.  Easy peasy.

Altogether this was really simple and delicious. You could also add a tossed salad to the side if you wished. 



Beans On Toast


THURSDAY, October 2nd - Beans on Toast


On Thursday we did a trip up the valley with my sister to check out all of the farm markets. We had a lot of fun with that. We also checked out a few other places.  I love our road trips. We usually stop at Jonny's Cookhouse for a lunch, early supper on the way back, but it had already closed for the season!  Quelle surprise!  We were all disappointed. 


After we dropped my sister off we had to go to Eileen's place as the pest control man was supposed to be going there to deal with the wasp problem in her and Tim's apartment. We did that and came home. It was quite late in the day by then and so I just made us Beans on Toast for our supper. She has been wanting me to make it and this was the perfect time!  


A nice, toasted slice of toasted sourdough bread topped with some tasty Sprague Baked Beans, and a handful of good cheddar cheese grated over the top. This is one of my favorite quick fix meals!



Easy Oven BBQed Pork Chops


FRIDAY, October 3rd - Easy Oven BBQed Pork Chops


These Easy Oven Barbecued Pork Chops are cooked in a tangy BBQ sauce that is lick-your-fingers-smack-your-lips good! You get delicious BBQ flavor without ever turning on your grill. They cook simply in the oven. I like to use thick cut, bone-in chops for the best flavor.


We enjoyed these with some mashed sweet potatoes and green beans. You could add a baked potato for the heartier eater.  We also enjoyed some coleslaw on the side. This was another delicious meal I got to share with my girl!




Sausage & Blackberry Tray Bake





SATURDAY, October 4th - Sausage & Blackberry Tray Bake


This was my daughter's last night staying with me. I made us a lush Sausage & Blackberry Tray Bake. 
This moreish traybake is very autumnal and filled with lush flavors and textures. You can prep all of the vegetables up to a day ahead, banging them onto the baking tray with the sausage when you go to cook supper. If you line the tray there isn't any clean up. No fuss, no muss and perfectly delicious!


What you have here are thick and meaty sausages roasted on a baking sheet with butternut squash, parsnips, red onions and some fresh blackberries.  There is a glaze of grainy mustard and maple syrup added to the sausages and veggies near the end just prior to the blackberries being added. The blackberries cook only briefly so that they hold their shape.


Altogether this is really tasty.  I served with a baked potato on the side for me and some rice for my daughter! You could also add a salad if you wished.

And those were my meals of the week, for this, the last week of September and beginning of October! It was so much fun having my daughter with me. I think she has enjoyed the time a much as I have!
