Meals of the Week. May 18th - 24th, 2025


True to form the week has flown past and here we are at another Sunday, another Meals of the Week Post. I have been doing this for about a few years now and these weekly round ups have become something which I really enjoy sharing with you each week.



I am determined to cook myself decent meals even though I find myself living on my own.  I don't ever want to be that person who indulges in overly processed premade meals and takeaways.  Most Sundays I will eat a family dinner at my sister's (or they might come here) and occasionally I will eat out with my father or the family.  I used to do that every week, but have cut back on that lately.



In any case I have provided a suitable alternative that compares well with what I have eaten when I was out. I do think that home cooked food, whilst more labor intensive for sure, is always better for you and better tasting in most cases!



Sharing these recipes with you has inspired me to cook regularly as well.  I love sharing my recipes with you and I really do hope that you are inspired to want to cook them and to cook regularly for yourself as well!  Together we can all eat healthier, well managed and complete meals that don't necessarily require a whole lot of work to put together!



I also try to keep things as healthy and low cost as I can. In these days of rising food costs, every little bit helps! As a senior I am also living on a fixed budget so I try to stretch my food dollars as far as I can!



In any case, here are the delicious main meals that I enjoyed over the past seven days. I hope that you will get some ideas about how you can cook some of them for yourself, save some money and eat as well as I do!



Classic Pot Roast for two


SUNDAY, May 18th - Family Dinner at Cindy's


As with most Sundays I had a family dinner at my sister's place.  She cooked a pot roast this week. She does a really nice pot roast. It always melts in the mouth.  My father loves it. He says she cooks a roast beef just like his mother used to make.  She had roasted potatoes, onions and carrots with it along with yellow beans and gravy


I am sharing my recipe for a Classic Pot Roast for Two in its place. This also melts in the mouth!



Scottish Tattie Soup


MONDAY, May 19th - Scottish Tattie Soup


It was a cold and wet day and I decided to make myself some soup for my supper.  Not just any soup though a Scottish Tattie Soup. Tattie is what the Scots call their potatoes and this soup is fantastic.  With only a few simple ingredients. Leeks, onions, potatoes, carrots and some good stock.  It is gluten free and dairy free and if you use veggie stock it is vegan and vegetarian friendly.

I enjoyed a lovely bowl of this along with some crisp crackers on the side.


Spicy Ranch Turkey Burgers


TUESDAY, May 20th - Spicy Ranch Turkey Burgers


I was working extra hard on Tuesday to get ready for my brother's arrival on Thursday.  There is always lots to do when you have company coming to stay.  I made myself a Spicy Ranch Turkey Burger. I love turkey burgers. I would rather have a turkey burger than any other kind.


I make a lot of turkey burgers, but this one is a real favorite with me. They really have lovely flavors.  From the cool and creamy ranch slaw that gets tucked into the buns with the burgers, to the spiciness of the burger they are a real taste sensation! I just love them!


On this occasion I cooked myself a few chips in the air fryer to enjoy along with my burger.



Tender Beef & Noodles


WEDNESDAY, May 21st - Tender Beef & Noodles

The crunch was on for my brother's arrival on Thursday and so I took something out of the freezer. I had one serving of the beef and gravy from this recipe frozen and only had to cook some noodles and a vegetable to enjoy on the side.


What you have here is a delicious dish of tender, fall apart, melt in the mouth beef in a delicious gravy, served along with some hot buttered noodles.


You can either cook this in a slow cooker/crock pot or in a small Dutch oven on top of the stove. Its a very simple recipe with loads of flavor. I usually will cook a simple vegetable on the side like string beans or carrots.


Meat Loaf & Scalloped Potatoes


THURSDAY, May 22nd - Meatloaf & Scalloped Potatoes


For my brothers first night here, I cooked Meatloaf and Scalloped Potatoes for the family. He was tired from the trip and it was a simple meal to prepare and to enjoy.  Everyone loves meatloaf. 


It was all delicious. It was all simple. It all cooked in the oven at the same time. This meal reminded me very much of a meal that my mother might have cooked for us when I was growing up.  It was really tasty and simple to make.


On this occasion I served carrots and broccoli on the side.


Classic Tuna Casserole



FRIDAY, May 23rd - Classic Tuna Casserole


Fish for Friday with a classic tuna casserole.  This is an old, old favorite that everyone loves. With bow tie pasta, peas, a rich and creamy sauce and tuna.  There is some dillweed and lemon in there a well as cheese. Topped with moreish and crisp plain potato chips of course!


This went down a real treat with a nice mixed salad on the side!



School Cafeteria Pizza


SATURDAY, May 24th - Pizza from Hal's


Whenever my brother is down we always get Pizza from my cousin Hal's restaurant. Well, technically it's not his restaurant any longer, he has sold it to his niece and her husband, but it is still in the family. This has become somewhat of a tradition, treating ourselves to Hal's pizza while David is here.


In its place I am sharing my recipe for School Cafeteria Pizza. Always a real treat and very simple to make.  It goes very well with a salad on the side. In the U.K. they would serve this with chips no doubt. They love to layer their carbs. Lasagna and chips, Spaghetti Bol and chips, Pizza and chips. You gotta love it!


And there you have it, my meals of the week for the past seven days. I think I did pretty well. Things were well within budget and very tasty!  What will you cook?
