Meals of the Week,  March 29th - April 4th, 2026 




Hello everyone and welcome to my Meals of the Week post for this the end of March beginning of April!  Every Sunday I like to do a delicious recap of all of the delicious meals that I have enjoyed as my main meals over the past seven days. I have to say I am most appreciative of the feedback that I get from these posts. It is clear that you are being inspired from what I am cooking and eating and that makes me very happy!


Whether you are a singleton, or a couple empty nesters, or even a couple who just live on their own, its always nice to have some idea of what other people in the same situation do when it comes to preparing meals.



My mother was on her own for about 30 years prior to my sister moving in with her and my mother cooked herself a supper every day. They might have been simple things, but they were always nutritious and balanced.  



I am not entirely on my own at the moment as my oldest daughter is staying with me temporarily while she looks for a place of her own. I quite enjoy having someone else to enjoy my meals with and I think she is enjoying me cooking for her and revisiting some of her old favorites.



Except for the occasional meal out I do cook for myself every day.  I will sometimes cook a bit extra and freeze that in single serve portions ready to enjoy on a day when I can't be asked to cook, or I am in a rush and don't have time to cook.


In any case here is what I cooked for us and that we enjoyed over this past week. This is only a reflection of what I had for my main meals of the day. Lunches (my evening meal) and breakfasts are a lot simpler and usually don't require much effort. I usually eat my main meal (if I am eating at home) at lunch time.  


For my breakfast I will have a muffin, or a bowl of cereal, maybe some toast, and occasionally I will enjoy some cold pizza from the night before. In the evenings I will enjoy a sandwich, or a salad, or a bowl of soup.  Sometimes another bowl of cereal. It all depends on if I am hungry or not and how hungry I am.

Classic Pot Roast For Two

 


SUNDAY, March 29th - Classic Pot Roast for two


Normally on Sundays we will go to my sister's for a family dinner.  This week we didn't as they were all full of colds and we didn't want to risk getting one.  Instead I cooked Eileen and I a Sunday dinner at home.


I had picked up a pot roast in the shops on Saturday and that's what we had. There is nothing much more satisfying than a fall-apart tender meaty pot roast to feed the soul and tummy. We enjoyed it simply with some boiled potatoes (this time) carrots, turnips and a salad on the side.  What I love about this roast is it comes out tender and juicy and I don't end up with a ton of leftovers. Just a small amount to use in a casserole, etc.


Chicken Crumble Pot Pie



MONDAY, March 30th - Chicken Crumble Pot Pie


Sometimes you are craving a pot pie but you don't want to go to all the trouble of rolling out pastry, etc.  This delicious casserole solves that problem. It has all the creamy, hearty comfort of the traditional dish, but instead of a pastry crust, it’s topped with a golden, savoury Parmesan crumble that bakes up crisp, buttery, and completely addictive.    With plenty of tender chicken, vegetables and a rich creamy gravy.


We enjoyed this simply with some salad on the side. If you wanted to you could also serve some potatoes. Mashed potatoes would be lovely with this.



James Beard's Roast Beef Hash


TUESDAY, March 31st - James Beard's Roast Beef Hash


We had some leftover potatoes and roast from our Sunday dinner and so I made us a delicious hash. WE both love hash of any kind and this was lovely.

I had mine just as is with some salad on the side. Eileen enjoyed hers with an egg on top, that golden yolk torn open and dripping all of that rich yumminess down into her hash. We were both very pleased with this simple dinner.



Turkey Club Platter



WEDNESDAY, April 1st - Dinner out with Dad and Cindy

We went out to supper with Dad, Cindy and Hazel on Wednesday night to the same place we usually go to.  Eileen had a Gam Gam Burger with F'rings. Cindy had fish and Chips. Hazel had grilled haddock. Dad had a Hamburger Steak Platter and I had a Club sandwich, which I really enjoyed.  I had it on it's own with nothing else, although Eileen did share a few of her fries and her onion rings with me.


We said next time maybe one of us can order the sandwich and the other the F-rings and then we can spit the two down the middle between us.


In it's place I am sharing my recipe for a Turkey Club Platter.  A triple decker sandwich with turkey, ham, bacon, cheese and tomato. A favorite Diner restaurant special. Served with home fries and a coleslaw on the side, it always goes down a real treat!



Lazy Lasagna for Two




THURSDAY, April 2nd - Lazy Lasagna for Two 


Eileen had a special Easter dinner with her friends from the CSS program on Thursday and I was still basking in the deliciousness of that lazy lasagna that I had made last week so I made it again. Originally we were supposed to be going to Glenna's for supper with the missionaries. (My cousin who lives across the road.) But her daughter is here visiting so she cancelled the dinner. In the meantime I had bought in everything to make the lasagna, so I decided to just use some of the supplies and make a small version of lasagna. We had enjoyed it so much the week before.


Quick, easy and delicious.  Even though Eileen had had a huge lunch, she managed to tempt herself into eating a small portion of it as well. Yes, it IS that good!


I enjoyed mine with a tasty salad on the side.  No garlic bread this time.



Air Fryer Honey & Lime Ham Steaks






On Friday I decided to treat us to a small pre-Easter Dinner for just us two.  We are going to my sister's on Sunday and I wanted to cook Eileen and myself a small intimate dinner that we could enjoy together.


I made Air Fryer Honey & Lime Ham Steaks. Just the right size for the two of us. Two thick ham steaks, cross-hatched and glazed with a Honey & fresh Lime glaze.  Roasted to perfection in the air fryer in less than 10 minutes.


We enjoyed them with some boxed scalloped potatoes, carrots and buttery corn.  For dessert we enjoyed some Lazy Daisy Cake.  What a lovey dinner it was! We both enjoyed it very much.



Cheesy Tortilla Garlic Bread





SATURDAY, April 4th - Cheesy Tortilla Garlic Bread with tomato soup


We had the first day of my bi-annual church conference today, with four hours of talks, split up into two sessions.  Not a lot of time for cooking on this day. I made something quick and easy for myself and Eileen enjoyed some leftovers from Thursday and Friday by way of lasagna, scalloped potatoes and vegetables. But at least we got everything used up!


Cheesy tortilla garlic bread is made from two flour tortillas, spread with softened butter, then sprinkled with garlic powder and cheese. I also sprinkle on some Italian seasoning for additional flavor.  I stacked them to give this tasty creation a bit of depth. 


This went down beautifully with a quick cup of instant tomato soup.  I was happy. Eileen was happy. My fridge was happy!


And there you have it! My meals of the week for the past seven days. Delicious, easy and economical!  I think we ate rather well don't you?
