Happy Sunday and welcome to another of my Meals of the Week posts. On Sundays I like to share with you my dear readers, all of the deliciousness that I have enjoyed as my main meals over the past seven days. You also seem to enjoy reading these posts. I see it as a win/win!
This was not a really great week. I was in a lot of pain for the most part and so I kept my meals really simple. There was not a lot of real cooking going on. I know you will forgive me for this.
I didn't resort to frozen dinners at any rate. I don't have anything like that in the house. My meals were simple store-cupboard affairs, but they were delicious.
I have not been able to get out and buy any food so I have very much been relying on my store-cupboard for my meals. Looks like we are in for some very bad weather in the coming days as well.
Still not well, but doing the best that I can. Without further adieu, here were my Meals of the week for this the third week of January, 2026.
SUNDAY, January 18th - Drop off dinner by Cindy
Not well at all after the procedure I had so my sister dropped off dinner to me. Usually I would go there on Sunday night for dinner, but I was not moving far from the house. My sister was kind enough to drop off a dinner to me. Roast beef and all the fixings. Delicious.
In it's place I am leaving you my recipe and technique for Perfectly Cooked Roast Beef. This is a beef roasting technique that I got from the grandmother of a friend many years ago. It yields perfectly cooked roast beef each and every time. I have been using this recipe for over 50 years now. It is also the recipe that I used to use to cook the Prime Rib when I cooked at the Manor. You cannot go wrong with this!
MONDAY, January 19th - Beans on Toast
Beans on toast. It doesn't get much simpler or easier than this. I was still not very well and so I made myself some beans on toast. True comfort food.
Hot buttered toast with baked beans spooned over top. You can also top the hot beans with some grated cheddar cheese for extra flavor and protein. Always delicious. Very comforting. Quick and easy to make as well.
TUESDAY, January 20th - Tomato & Rice Soup
I did open a tin for this. Not well at all. You cannot beat tomato soup for comfort and tomato and rice soup is an old favorite of mine. It has been so since I was a child.
In it's place I am sharing my homemade recipe for Tomato & Rice Soup. Its very easy to make homemade tomato soup and it really isn't much further of a stretch to make Tomato & Rice Soup. I quite adore it. If you are like me, and you keep cans of good tinned tomatoes in your store cupboard, with a few other bits, you are never far away from a tasty bowl of tomato soup.
Soup and crackers. You can't get much better than that. You can make a heartier meal by enjoying this with a grilled cheese sandwich. Classic.
WEDNESDAY, January 21st - Bread, Cheese & Tomato Omelet
More nursery food. Normally on Wednesday night I will go out to supper with my sister and my father. It did not happen this week. Still very unwell.
If you have eggs in the house, however, you always have a simple supper in the making. They are so very versatile, and most people like them.
This was my supper on Tuesday. Simple supper fare. It's amazing what you can do with a few simple ingredients, a stale slice of bread, a couple of eggs, some onion, some cheese and a tomato. Gorgeously delish!
A salad on the side goes wonderfully.
THURSDAY, January 22nd - A Simple Corn Chowder
Once again, not well. I managed to scrape together a simple corn chowder for myself. This has long been a family favorite and it is a really simple store-cupboard/pantry meal. I used to make this every Sunday after church when the children were growing up. Not only was it delicious, but it was also very quick and easy to make. More importantly, everyone loved it.
Corn chowder with either crackers or a crusty roll. This makes for a really delicious supper. And because its also not that heavy you can feel justified in having a bowl of ice cream afterwards. 😁
FRIDAY, January 23rd - Classic Tuna Melt
Feeling somewhat better. At least I wasn't in a lot of pain. Still unable to stand for very long to make a real meal and so I treated myself to a Tuna Melt. I really love Tuna Melts and this one is a classic. There are no bells and whistles here. Just a tasty tuna filling, cheese and a good bread.
If you were wanting to turn this into a meal you could add some oven chips or potato chips, or even a bowl of soup. Hearty and delicious.
SATURDAY, January 24th - Oven Braised Beef Stew
Yesterday I remembered that I had frozen some single serving sized pots of Beef Stew from when my son was here. I thawed one of those out and enjoyed it as a simple supper. This is one of my favorite stews to make and as you can see it freezes very easily. If anything it tastes even better.
