My daughter was here for a sleepover at the weekend and I wanted to cook  us a bit of a special meal, including a dessert.  I didn't really want to have my oven on for a lot of time. I did roast us a chicken, but I dd it in my Our Place Air Fryer Oven, which doesn't really heat up the kitchen.


 I have a cookbook by the Australian Women's Weekly, entitled "Slow Cooking." It is a fabulous compendium of recipes  to cook long and slow, in the slow cooker (crock pot), stove top or in the oven.  I had flagged this Chocolate Fudge Pudding a long time ago, and I thought to myself, there is no time like the present!


I have made Chocolate Fudge Pudding in the oven many times, and its a real favourite, but I had never considered doing it in the slow cooker.  I didn't want to drag out my large slow cooker however, nor did I want to have to deal with oodles of leftovers, so I threw caution to the wind and halved the recipe.


With great success I might add!  It worked out beautifully, and was done in roughly 3/4 of the time. (I would start checking it halfway through the recommended cook time just to be sure.)


Chocolate Fudge Pudding has always been a real family favourite of ours.  Its the kind of pudding that goes together simply and then bakes itself pretty much, with the end result being a delicious fudgy cake type of pudding (much like a steamed pudding), along with a rich chocolate sauce that bakes like magic at the bottom of the pudding.


This was delicious served warm with lashings of pouring cream on top. Vanilla Ice Cream also goes well. This is the perfect dessert for these hot days when we don't want to be turning on our ovens and heating up the kitchen!

INGREDIENTS NEEDED
TO MAKE
CHOCOLATE FUDGE PUDDING (CROCK POT)


Everything is pretty simple. There is nothing extraordinary here.


  • 90g butter (3 ounces) (6 TBS)
  • 180ml milk (3/4 cup)
  • 1 tsp vanilla
  • 190g caster sugar (1 cup)
  • 225g self raising flour (1 1/2 cups + 2 TBS)
  • 2 TBS good quality cocoa powder
  • 1 large free range egg, beaten lightly
  • 200g soft light brown sugar (1 cup, packed)
  • 2 additional TBS of cocoa powder
  • 625ml boiling water (2 1/2 cups)
To serve (optional):
  • pouring cream
  • vanilla ice cream







NOTES ON INGREDIENTS



  • I use salted butter. It is all I keep in my house.
  • I use whole milk. Again, it is all I keep in my house.
  • Caster sugar is a fine granulated sugar. You can whiz regular granulated sugar in a food processor for about 30 seconds to make caster sugar.
  • You can easily make your own self-rising flour. For every cup (120g) of flour required add 1 1/2 tsp of baking powder and 1/4 tsp salt. I usually make up two to three cups at a time and store it in the freezer.
  • Make sure you use cocoa powder and not chocolate drink mix or hot chocolate mix.







HOW TO MAKE CHOCOLATE FUDGE PUDDING IN THE CROCK POT


Its really quite easy. Even a child can do it.


  1. Butter a 4 1/2 litre (18 cup) slow cooker bowl.  (Do not skip this step.)
  2. Melt the butter in the milk over low heat.  Let cool for several minutes and then stir in the sugar and vanilla.  (Do not allow to boil, you basically just want the butter to melt.)
  3. Sift together the flour and first amount of cocoa powder.  (I use a fine mesh sieve for this. It helps to remove any lumps from the cocoa powder.)
  4. Stir this into the milk /butter mixture along with the egg, mixing all together well.  Pour into the buttered slow cooker bowl. (Make sure the batter is smooth.)
  5. Sift together the brown sugar and remaining cocoa powder.  Sprinkle evenly over top of the batter in the slow cooker.  (Do NOT stir this in.)
  6. Pour the boiling water evenly over all. 
  7. Cover and cook on high for 2 1/2 hours or until firm. (It should not be jiggly. The top should look dry.) 
  8. Remove the bowl from the slow cooker.  Let stand five minutes and then spoon out into bowls to serve.  Pass the cream or ice cream!





HELPS & TIPS FOR MAKING CHOCOLATE FUDGE PUDDING
(CROCK POT)



1. Halving the Recipe Works Beautifully

If you’re cooking for one or two, you can halve the recipe with great success — Marie did this herself and it cooked perfectly in about ¾ of the usual time .


2. Only Use Half the Egg When Halving

Beat the egg lightly and use half of it. This works very well, and you can even use a tiny “pee wee” egg if you have one .


3. Start Checking Early

Even with the full recipe, it’s smart to start checking halfway through the recommended cook time to avoid overcooking .


4. Use the Right Size Slow Cooker

A 4½‑litre (18‑cup) slow cooker is ideal for the full recipe, ensuring the pudding cooks evenly and the sauce forms properly at the bottom .


5. Don’t Stir After Adding the Topping

Once you sprinkle the brown sugar and cocoa over the batter and pour the boiling water on top, do not stir. This is what creates the magical self‑saucing effect at the bottom of the pudding .


6. Serve It Warm for Maximum Gooeyness

This pudding is at its absolute best when served warm, with cream or vanilla ice cream — both are delicious options .

Yes! You can successfully halve the recipe and it turns out beautifully. I have done this before. You will find that it is cooked perfectly in about 3/4 of the usual time. I do use a smaller crock pot.

A delicious gooey chocolate sponge pudding that makes its own sauce.  This cooks in the slow cooker.  You can very successfully cut this in half for the smaller family or smaller appetites.

ingredients:

  • 90g butter (3 ounces) (6 TBS)

When I started reading this I was thinking that Todd dislikes chocolate lol, but this will turn even the strongest dislike of chocolate around lo, I have been making this pudding for many years and it’s a family favourite, we also eat it with ice cream, yum!   3. Hi Marie, I never miss reading your recipes. I've made this recipe in the oven but never in the slow cooker and want to try that. Since I live alone, I want to do like you did and make just half the recipe. Only thing is, this recipe calls for one egg. Did you still use one egg when you halved the recipe?

    1. I beat up the egg and only used half of it Judy! It worked quite well. You could probably also use a pee wee sized egg. Thanks so much for your sweet comment!   4. I made this with my six year old granddaughter today. She was able to help with the majority of the recipe! We were so excited when it was done, and we are delighted with it! This pudding cake is so delicious and chocolatey! She wasn’t three bites in before asking me to please send the recipe to her mama. A few more bites and she declared that her whole family would love it. I say it’s really something when a six year old gets so excited about baking results! She must have said how good it is at least a half dozen times. A major success, and I’ll make this again!
