Meals of the Week, October 26th - November 1st, 2025


Hello everyone and Happy Sunday.  Welcome to my Sunday Meals of the Week Post.  The one where I share with you all of the deliciousness of the past seven days that I have enjoyed as my main meals along with the pertinent recipes and any side dish suggestions!


This is something I really enjoy doing every week.  I try hard to keep my meals varied and exciting.  And, as a Senior on a tiny budget, I also try to keep what I eat within budget and as low cost as possible. With the rising costs of today's food this can really be a challenge.  I grew up with a mother who could get a dollar out of a dime however, so I find it quite doable. She taught me well.


These are only my main meals. I don't include my breakfasts or suppers (I tend to eat my main meal at noon, unless I am eating out or with friends/family.) For breakfast I will have something simple. Often a protein shake, sometimes my homemade granola with some yogurt and fruit, and on the rare occasion, cold pizza.  (I love cold pizza for breakfast!)


I will eat my main meal in the early afternoon, usually about 12:30 or 1:00 pm. This is what works well for me. With there only being myself to please, I can eat pretty much whenever I want.  I have eaten it as late as 2 or 3, but that really doesn't work well for me because then I am not hungry again until later in the evening and I don't like to eat before I go to bed.


Later in the day, usually about 6 but always before 7, I will have a light supper. This could be a sandwich, or a salad. Sometimes a bowl of soup or occasionally a bowl of cereal.  Sometimes it is toast. (I love toasted raisin bread, buttered.) This will be my last meal of the day. I don't like going to bed with anything on my stomach.  Oh the joys of aging!


So, without further ado I give you my meals for this, the last week of October 2025.  I think I ate rather well. I try to vary things up from one week to the next.  I hate being bored. I hope you enjoy them and that you will be inspired to want to cook a few of them for yourself!





Oven Fried Chicken



SUNDAY, October 26th - Sunday Dinner with the family 



Most Sundays I have Sunday Dinner with the family. My sister Cindy, her husband Dan, Dad and then of course myself.  Usually, Cindy will cook a roast or something like that. We were both tired from spending all of Saturday in the hospital and so we decided to get Mary Brown's Chicken for supper. We had both checked out a video of Greeno Eats in the U.K. eating at Mary Browns in the U.K. earlier in the week and we had both been craving it!  He made it look so good.  Happy for the people in the U.K. that they now have it. We love Mary Browns.


We treated the family to a bucket of chicken, wedges, gravy, coleslaw and also got some of their new biscuits that they have on the menu. We all enjoyed every bit of it.  Even the biscuits.  In it's place I am sharing my recipe for Oven Fried Chicken with Buttermilk Mash. Pieces of chicken are coated in a tasty potato chip crumb coating and oven fried to perfection.  I serve it with Buttermilk mash (recipe also included) and any vegetable on the side goes well!



Roasted Autumn Vegetable Pizza




MONDAY, October 27th - Roasted Autumn Vegetable Pizza


Meatless Monday with a delicious roasted vegetable pizza.  I took advantage of the local ripe autumn vegetables we are enjoying at the moment. Squash, red onions, sweet potatoes are tossed in a pesto and honey mixture before roasting to caramelized perfection.  


While they are roasting, I make a simple white pizza sauce. This gets spread over a homemade wheat bread base, topped with a mix of cheeses and then the roasted vegetables.  Baked in the oven until the crust is all golden brown and the cheese and sauce are bubbling; this always goes down a real treat.


I enjoyed a couple of slices of this with some salad on the side. Meatless Monday never tasted so good! I shared some with my next-door neighbor and then froze a few slices for me to enjoy another time.



Potato Pudding




TUESDAY, October 28th - Leftover chicken with Potato Pudding


I had some chicken leftover from Sunday, two pieces, and a biscuit so I warmed them up and enjoyed them with a fresh Potato Pudding bake.  Potato Pudding is a lovely vintage British Recipe. I am not sure which area of the U.K. it comes from. It is a recipe that I got from a small traditional British recipes booklet for recipes from the kitchen garden.


Grated potato, rutabaga/swede, carrots and onions, mixed together with a bit of cream and some seasoning, spread into a baking dish and then baked to perfection.  This is a beautiful side dish, or even a great Vegetarian Main. I really hope you will give it a try.  I enjoyed with some chicken and a hot buttered biscuit, but I have been known to enjoy it on its own with some buttered brown bread and some pickles in the past.



Quick & Easy Vegetable Soup




WEDNESDAY, October 29th - Quick & Easy Vegetable Soup


I actually went out to supper on Wednesday night with my dad and my sister. We all had fish and chips.  For my lunch however I made this delicious Quick & Easy Vegetable Soup.  This was fabulously tasty and loaded with fiber and lots of vegetables.  I do prefer a homemade soup over a tinned soup any day.  I think the only tinned soup I enjoy these days is Tomato Soup, but even then, I prefer homemade over tinned.


This goes together very quickly and easily and is delicious.  For a lunch you can enjoy just as is with a few buttery croutons on top or some crackers or bread on the side.  For a heartier meal I would accompany it with a Cheese Toasty!  The ultimate comfort food meal.



Garlic Butter Pineapple Chicken




THURSDAY, October 30th - Garlic Butter Pineapple Chicken 


I love chicken and I have to say this Pineapple Chicken Stir fry is fabulous!  The chicken is tender and juicy and bursting with lovely savory sweet flavors. This is the perfect meal for a day when you know you are going to be rushed off your feed and not have a lot of time to cook. If you are looking for a chicken dish which is bursting with flavor and a tasty way to cook chicken breasts which will keep them moist and flavorful and full on delicious, then this is the recipe for you!


I enjoyed this with some microwave rice and some frozen veggies. This really hit the spot nicely!


Lasagna Roll Ups



FRIDAY, October 31st - Halloween-Lasagna Roll Ups 


I had a lot of running around to do, again and so I took some of these out of the freezer.  It is my small batch recipe for Lasagna Roll Ups. The recipe makes only four roll ups, which is just enough to enjoy on the day for just myself, and then another serving to freeze.  The recipe feeds two people generously.  I had some in the freezer which I thawed out. I will have to make some more to stick in the freezer as I really love them, and it is nice to have something like this in the freezer to take out and heat up for a supper.



They are rich and delicious. Nice and compact.  They don't slide all over the plate. Everything is tucked into a nice neat little package.  I enjoyed with some crusty bread and a salad on the side. Tasty tasty!




Pan Seared Steak with Garlic Butter






SATURDAY, November 1st - Pan Seared Steak with Garlic Butter 


Steak is not something I enjoy very often. I actually don't enjoy any kind of beef or red meat very often at all.  Occasionally though, I do enjoy a good steak. With the cost of beef in recent months, this has become a real rarity. Usually what I do is go to the Grocery store early in the day. Most of the time they will have the things which are on their sell-by date reduced by 30 to 50 % depending on the store.  That is when I will splurge and buy myself a steak or some other piece of beef. I bring them home, wrap them up tightly and bang them in the freezer to enjoy whenever.



On Saturday (Today) I was just craving a steak and so I took one out and thawed it when I got up this morning. I thought I would enjoy it simply cooked, along with some mushrooms and garlic butter.  A few vegetables on the side. I was skipping the carbs!  I figured I had done enough of those this week.  



This is a great steak recipe. Simple and filled with flavor. Tender and juicy, it is a perfectly seared, cooked and flavored steak. The garlic butter goes perfectly. A cast iron skillet works best, but if you don't have one you can use any skillet with a heavy bottom that can handle a high heat well. Oh boy but I really enjoyed this. I savored every delicious mouthful. 



And there you have it.  My Meals of the week for the past seven days. I hope that you will agree that I ate very well and that you will want to try to cook a few of these meals for yourself! You know you are worth it!
