I had just spent almost a whole day out running the roads and shopping with my sister. I got home hot, exhausted and starving. The temptation was there to open a bag of potato chips, slap some peanut butter between two slices of bread and call it a day!


That's not how I really like to eat, however. As a person who lives on her own, it can often be a challenge to eat a decent meal. Those frozen dinners can look really appealing, but experience has taught me that they are almost always a huge disappointment when compared to the photograph on the outside of the box. They are also not nutritionally sound, being loaded with fat, salt, sugar and calories.


We all have nights where we are pressed for time, feel tired, maybe starving. When we are looking for something quick and easy to get on the table for supper. We want a quick and simple meal, but we also want delicious! Is this too much to ask for?  I think not!

On this particular day, I decided to have a quick rummage in my refrigerator and cupboards and make something tasty to eat out of the things I already had on hand. Something that would go together quickly and easily, without a lot of effort, and something that would taste delicious when it was done.


This BBQ Chicken Flat Bread recipe that I came up with fits the bill on all counts. Not only is it very simple to make, but it goes together really quickly.  It also happens to be really tasty!!  


I promise you that I was sitting down and enjoying it in about half an hour from start to finish.  A simple bagged salad on the side and dinner was served!  I didn't need to hop in the car, crack open my wallet or wait for a delivery guy. I considered this to be a win!


Note - if you are cooking the chicken from scratch it may take a bit longer than half an hour.

WHAT YOU NEED TO MAKE BBQ CHICKEN FLAT BREAD


Just a few simple store cupboard ingredients and a fresh chicken breast. You can also use leftover cooked or rotisserie chicken for this. If you do that it will cut down on the time it takes to make this even more!


  • 1 large chicken breast (see notes to use rotisserie chicken)
  • 1/2 tsp light olive oil
  • 1/4 tsp dried oregano
  • 1/8 tsp dried tarragon
  • pinch salt
  • black pepper
  • 1 flat bread
You will also need:
  • 1/3 cup (81g) your favorite BBQ sauce
  • 1 garlic clove, peeled and minced
  • 3/4 cup (90g) grated mozzarella cheese
  • 1/2 small red bell pepper, chopped
  • 4 TBS chopped red onion
  • 1 TBS chopped fresh coriander
  • 1 TBS red pepper flakes (optional)
  • 2 TBS grated Parmesan cheese
  • more BBQ sauce to drizzle on the finished flatbread

If you have fresh herbs, by all means, use them, bearing in mind you will need twice as much to get the same flavor impact.


If using already cooked chicken or a rotisserie chicken, you will need the equivalent of one cooked breast of chicken, or about 1 cup. This is what I used.


Use a good, bottled BBQ sauce or make your own from scratch. Its just as easy to use a good bottled one and cuts down on the time needed to make this meal. I used  Sweet Baby Ray's Honey BBQ Sauce. It had a nice sweetness to it which went well with the chicken.



Flat Bread





This is the kind of flat bread that I used for this. You could also use Naan bread or Lavash.  I like the PC flatbread. It comes in both plain and garlic. I used the plain for this. It also cuts nicely into 4 squares.



I chose to chop up my onion and my bell pepper. If you are not fond of red bell peppers you could use green or yellow. Well, any color really. 



Fresh coriander is cilantro. I know some people are not overly fond of it so if you are one of those just leave it out or use parsley in its place.

HOW TO MAKE BBQ CHICKEN FLAT BREAD



Just a few easy steps and a few simple ingredients and you, too, can be enjoying this tonight! Quick and easy to make.


If you are using your own chicken, pat the chicken breast dry and trim off any fat, etc. and discard. Sprinkle all over with oregano, tarragon and salt.


Heat the oil in a skillet over medium high heat. Add the chicken and cook for 8 to ten minutes per side until cooked through. The inside temperature should register 165*F/74*C. when done.


Once cooked, remove from the pan and leave to rest for 10 minutes then cut or shred into bite sized pieces.

Preheat the oven to 375*F/190*C/ gas mark 5. Line a baking sheet with baking parchment. Lay the flat bread on top.


Whisk the BBQ sauce together with the garlic. Brush the top of the flat bread evenly and generously with the BBQ sauce, leaving a bit of an edge all around the flatbread.


Sprinkle with the Mozzarella cheese to cover.


Add the chicken, coriander, onions and chopped peppers. Sprinkle with the Parmesan cheese.

Bake in the preheated oven for 10 to 15 minutes until the bread is browned, everything is heated through, and the cheese is melted and bubbling.


Leave to stand for a few minutes. Drizzle with additional BBQ sauce and cut into squares or manageable pieces to serve.


Notes

If you wish you can use rotisserie chicken instead of cooking your own chicken for this. If doing so just toss the shredded chicken with the seasonings in the recipe for the chicken and proceed as per the recipe instructions for putting the flat bread together. 

 Store leftovers in an airtight container in the fridge for up to 4 days, reheat in the oven, air fryer or microwave. You can also freeze any leftovers in an airtight zip lock bag or freezer container for up to 3 months.

This was really delicious. I loved the ease of preparation.  The chicken had lovely flavors and the whole thing was on the table really quickly!  Bonus!  Especially on days when you are really busy!



I served it simply with some sliced cucumbers, but you could enjoy it with any type of salad or raw veggie sticks.  


You could also cut it into smaller squares and use them as nibbles with drinks on party nights!

Easy Pull Apart Garlic Buns

 

Do you struggle to use up all the bread that you bring into the house? I know I do. It is especially challenging when you are a person who lives all on their own. The birds in my back yard probably eat more of the bread that I buy than I do!  


I have tried freezing it, but in all honesty, that only works in the short term. I have found that it just doesn't keep as well as I would like it to. The quality is not the same, and so I just end up throwing it out to the birds anyways. There are some things you can do with it such as make breadcrumbs or croutons, but again, you can only use up so much of those as well.



Easy Pull Apart Garlic Buns  


It is hard to buy dinner rolls where I live in an amount any less than one dozen.  I always struggle to use them up while they are still fresh. Inevitably I end up having to get rid of most of them after a day or two when they go stale.


I stumbled across a recipe the other day on Brown Eyed Baker which repurposed dinner rolls in a novel and delicious looking way! I immediately bookmarked it to try the next time I had rolls that needed using up.


I made them today. Easy Pull Apart Garlic Buns. I found myself wondering why I had not thought of this myself! DUH!  I make garlic bread all the time with sliced bread or French bread, but why NOT use dinner rolls!


These are created by making diagonal cuts into the rolls almost all the way through and then applying a rich and delicious melted garlic butter and some cheese before wrapping them in foil and toasting them in the oven. The end result is a garlic dinner roll that has an abundance of crispy buttery crevices loaded with savory garlic and cheese.


Can you spell D-E-L-I-C-I-O-U-S!!  (This is a small batch recipe which makes only six buttery, delicious, garlicky rolls. You can easily double it to make more.)





Easy Pull Apart Garlic Buns 


WHAT YOU NEED TO MAKE EASY PULL APART GARLIC BUNS


The main thing you will need is the rolls. Aside from them you probably already have everything you need in your kitchen!



  • 6 dinner rolls, homemade or store bought
  • 1/4 cup (60g) butter, melted
  • 2 cloves garlic, peeled and minced
  • 1/4 tsp salt
  • 1/2 TBS minced fresh parsley
  • 1/4 cup (45g) grated Parmesan cheese

I had store bought dinner rolls.  They usually come 12 in a pack, folded in half in the middle so that when you look at the package, you see full rolls on both sides. They are all joined together.


I used salted butter.  That is all I keep in the house.


I use ready minced refrigerated organic garlic. It comes in a small jar and keeps for quite a while in my refrigerator. I found that when it came to fresh garlic, I just wasn't using it like I used to as there is only me in the house. I was throwing a lot of it away, so I moved to the jarred garlic.


I confess I did not have fresh parsley in the house today. I used freeze-dried parsley flakes. It worked fine.


Try to grate your own Parmesan cheese if you can and use a good one. There is not a lot of cheese in these and so you want to use one that tastes good and will have a greater impact flavor wise.

HOW TO MAKE EASY PULL APART GARLIC BUNS


These only look complicated. Trust me when I tell you that they are a lot easier to make than they look!


Preheat the oven to 350*F/180*C/ gas mark 4. Line a 7 by 11-inch baking dish with some aluminum foil, leaving a large overhang of six inches on both long edges.


Using a serrated knife, cut across the tops of the dinner rolls at 1-inch intervals in one direction, stopping short about 1/2 inch from the bottoms. Turn the rolls 180 degrees and repeat so that you have 1/2-inch squares cut through the rolls, whilst leaving them intact on the bottom.


Place onto the center of the foil in the baking dish.


Whisk together the melted butter, garlic, salt and parsley.

Gently pry open the cuts on the rolls and drizzle some between each of the cuts, dividing it as equally amongst the rolls and reserving some for the end.


Push some Parmesan cheese down into the cuts. Drizzle the remaining butter over the tops.


Pull the foil from the sides up over top of the rolls and seal shut on all sides.


Bake for 15 minutes. Pull open the foil and bake for a further 5 to 8 minutes until the rolls are lightly browned and the cheese has melted.


Serve immediately to your appreciative family!




Easy Pull Apart Garlic Buns




You don't have to use stale rolls to make these. You can use fresh rolls as well. I used the ones that you buy at the grocery store that are baked all together that you just pull apart to serve.  They usually come 12 to a pack. At least they do here.


You could also use dinner rolls that you have made yourself. I have an excellent recipe for Pull Apart Dinner Rolls here. They are excellent! I highly recommend!

These were really, really nice.  The cuts got all crisp, buttery and golden brown. Quite moreish really. It was an excellent way to repurpose some dinner rolls that might have otherwise been thrown to the birds.



I highly recommend. I think chopped pepperoni would also be nice between the cuts, or is that going a bit too far??? You decide!

ADDITIONAL GARLIC BREAD RECIPES YOU MIGHT ENJOY



I am one of those people who thinks the addition of bread of some sort turns just about any meal into a celebration. I am awfully fond of garlic bread, especially with pasta.  Here are a few other garlic bread options that are simple to make and that you might also enjoy! 




GUY FIERI'S GARLIC BREAD - This is quite unlike the usual garlic bread. It is loaded with texture and flavor. Two secret ingredients, chopped spring onions and hot sauce, take it over the edge to create one of the most delicious garlic breads you could ever want to eat!



GARLIC PARMESAN PULL-APART BREAD - This is a simple garlic pull-apart bread created with biscuits.  I have given you the option of using either a refrigerated brand of biscuits or a homemade one from scratch. Either way it is delicious. Excellent served with soups, stews and salads, but they also make a fabulous side dish on Italian nights, or even game nights, with hot marinara sauce for dipping them in!

Cheese & Onion Muffin Bread

 

I am ashamed to say that for most of my life I was a cheese virgin.  I grew up with plastic wrapped processed cheese slices and Velveeta. I was always bit squeamish about trying anything stronger. My mother would buy a bar of cracker barrel cheese every Christmas for my father.  Sometimes she would offer us a taste. I always turned it down.


It wasn't until I grew up and got married that I started getting a bit braver about cheese, and of course when I moved over to the U.K. my palate really broadened.


There used to be a beautiful indoor market right next to the old bus station in Chester where I lived. It was filled with all sorts of stalls.  Butchers, green grocers, a fish monger, a cheese seller, etc. The cheese seller always sold bags of mixed cheese crumbs for 50 pence. I used to pick up one or two of these bags every time I went in.


It was always a bit of a mystery what type of cheese the crumbs came from, but I can tell you they made a really fabulous macaroni and cheese!!



Cheese & Onion Muffin Bread 



This recipe I am sharing with you today is for a delicious cheese and onion muffin bread.  It is considered to be a quick bread, which means that it does not use any yeast for leavening. There is no kneading or proofing of the dough needed either.
 

You simply mix the dry and wet ingredients together separately and then quickly combine them to make a thick batter, which then gets spooned into a round baking tin and baked. It is loaded with plenty of sharp cheddar cheese and herby spring onions.  Cheese and Onion are a beautiful flavor combination.


This quick and easy bread comes out of the oven light with a beautiful muffin-like texture and is gorgeous served warm, cut into wedges along with lashings of butter for spreading.


I could easily make a meal of just this and nothing else!  Yes, I promise you, it is that good!



Cheese & Onion Muffin Bread

 


WHAT YOU NEED TO MAKE CHEESE & ONION MUFFIN BREAD


A few simple baking cupboard and fresh ingredients. There is nothing too out of the ordinary here.


  • 1 3/4 cups (220g) of plain all-purpose flour
  • 3 1/2 tsp baking powder
  • 1/2 tsp salt
  • pinch of cayenne pepper
  • pinch of coarse black pepper
  • 1/4 cup (57g) of butter, melted
  • 1 large egg
  • 1 cup (240ml) of milk
  • 1 cup (120g) of grated strong/sharp cheddar cheese
  • 3 spring onions, washed, trimmed and coarsely chopped

I do not recommend using self-rising flour for this recipe. Plain all-purpose is what is recommended. That is the correct amount of baking powder. 


I used 1/8 tsp each of the black pepper and the cayenne pepper. Cayenne really helps to highlight the richness of the cheese.


Make sure your milk and egg are at room temperature before beginning. That will yield a much better result and mix with the melted butter better.


I used whole milk and salted butter.


Use a good quality sharp/strong cheddar and grate it yourself if possible. I used an orange dyed cheddar this time as that is all I had. White cheddar is also lovely.


Spring onions are also known as scallions or green onions.

HOW TO MAKE CHEESE & ONION MUFFIN BREAD


If you can make muffins, then you can make this delicious bread. It is simply a matter of folding wet and dry ingredients together, spooning them into a prepared pan and then baking.


Preheat the oven to 400*F/200*C/ gas mark 6. Butter a 9-inch round cake tin very well and line with paper. Set aside.


Sift the flour, baking powder, salt and both peppers into a bowl.


Stir in the cheese and onions with a fork, holding back a little bit of each to sprinkle on top at the end.


Whisk together the egg, milk and melted butter.


Add the wet ingredients all at once to the dry ingredients and stir together just to combine. Do not overmix.

Spoon the batter into the pan. Sprinkle the reserved cheese and onion over top.


Bake in the preheated oven for 25 to 30 minutes until well risen. The top should spring back when lightly touched and a toothpick inserted in the center should come out clean.


Leave to cool in the pan for about 5 minutes before lifting out to a wire rack to finish cooling.


Serve warm. Cut into wedges with a serrated knife and serve the wedges with additional butter for spreading.

HINTS AND TIPS FOR QUICK BREAD SUCCESS


If you follow my hints and tips there is no reason why you can't bake a really great quick bread successfully!


1. Make sure all of your ingredients are at room temperature unless otherwise specified.

2. Use the best quality ingredients that you can afford and at your disposal.

3. Whisk all of the dry ingredients together in one bowl and your wet ingredients together in another bowl/beaker before combining together.

4. Combine the wet and dry ingredients together quickly and do not over mix. They need only be combined until the dry ingredients are evenly moistened without any large pockets or streaks of dry ingredients. 

5. Do not over combine the dough.  A light hand is preferable.  A few lumps are perfectly okay and quite acceptable. Over combining yields a tougher bake.

6. Spoon into your baking pan/tin as soon as possible after combining in order to gain the maximum lift from the leavening used.

To be honest I could have made a meal of this and nothing else. It is that good.  I can see several applications for it other than just cutting it into wedges and serving it spread with butter.



I think it would make a great round sandwich to take on picnics, filled with cold cuts and cheeses.  Fill before you leave and then cut into wedges at the picnic site.  Everyone is sure to love it!


It would also be lovely for breakfast, split and buttered, with a poached egg on top and some thinly sliced ham or crisp rashers of bacon.

The possibilities are endless!

I am a lover of quick breads. They are so much quicker and easier to make with yeast breads and go with all sorts. Here are a few more of my favorites!


CHEESE & PEPPER BREAD - This Cheese and Pepper Bread recipe is a fabulous quick bread recipe that goes together in a flash and that is perfect served alongside of soups, stews or salads, or with a meat and cheese tray, or even enjoyed slice and buttered all on its own. It has a beautifully cheesy and peppery flavor that goes especially well with other things and a beautiful texture.


MINI SCONE FOCCACCIA BREADS - This was adapted from a recipe which used refrigerated biscuit dough. I created my own biscuit dough and made the recipe with that with great success. Slightly flattened, dimpled and spread with an herby oil mixture and sprinkled with pine nuts prior to baking to crispy edged perfection. These are simply lovely.

This is a lovely quick bread, baked as a round cake. It is loaded with plenty of sharp cheddar cheese and herby spring onions for a fabulous flavor and texture. It goes together quickly and easily and is delicious.

Ingredients

  • 1 3/4 cups (220g) of plain all-purpose flour
  • 3 1/2 tsp baking powder
  • 1/2 tsp salt
  • pinch of cayenne pepper
  • pinch of coarse black pepper
  • 1/4 cup (57g) of butter, melted
  • 1 large egg
  • 1 cup (240ml) of milk
  • 1 cup (120g) of grated strong/sharp cheddar cheese
  • 3 spring onions, washed, trimmed and coarsely chopped

Instructions

  1. Preheat the oven to 400*F/200*C/ gas mark 6. Butter a 9-inch round cake tin very well and line with paper. Set aside.
  2. Sift the flour, baking powder, salt and both peppers into a bowl.
  3. Stir in the cheese and onions with a fork, holding back a little bit of each to sprinkle on top at the end.
  4. Whisk together the egg, milk and melted butter.
  5. Add the wet ingredients all at once to the dry ingredients and stir together just to combine. Do not overmix.
  6. Spoon the batter into the pan. Sprinkle the reserved cheese and onion over top.
  7. Bake in the preheated oven for 25 to 30 minutes until well risen. The top should spring back when lightly touched and a toothpick inserted in the center should come out clean.
  8. Leave to cool in the pan for about 5 minutes before lifting out to a wire rack to finish cooling.
  9. Serve warm. Cut into wedges with a serrated knife and serve the wedges with additional butter for spreading.

This is a book I wrote several years ago, published by Passageway Press. I am incredibly proud of this accomplishment. It is now out of print as my publisher went out of business after Covid, but you can still find used copies for sale here and there. If you have a copy of it, hang onto it because they are very rare. This was a real labor of love for me and a dream come true as I had always wanted to write a book since I was a child. Hopefully I will be able to republish it one day. A third of my life was spent living in the UK. I learned to love the people, the country and the cuisine. I have always been an Anglophile. You will find plenty of traditional British recipes here in my English Kitchen. There are lots of North American recipes also, but then again, I am a Canadian by birth. I like to think of my page as a happy mix of both. If you are looking for something and cannot find it, don't be afraid to ask! I am always happy to help and point you in the right direction, even if it exists on another page, or in my extensive collection of cookbooks. I moved back to Canada in the year 2020 and have been busy building a new life for myself back in my homeland. I am largely retired now, except for this little space on the internet that I call home.
