Meals of the Week, August 31st - September 6th, 2025


Hello everyone and welcome to my Sunday Meals of the Week post! On Sundays I like to share with you all of the delicious things that I have enjoyed as my main meals over the past seven days, along with any recipes I used and menu suggestions.  That's seven days of tastiness!  


I might live on my own, but I like to keep my meals interesting. Never boring. I try to eat a variety of things. I like to cook my own food as much as possible. Obviously, there is the odd time that I need to resort to something quick and easy, but for the most part I cook everything myself, and I can tell you that I am never bored with what's on my plate.


I am also a senior living on a fixed income, so I have a certain amount allotted for groceries each week and try to keep my meals within that budget.


These are only my main meals, which I usually eat around early afternoon. For breakfast I will have a protein shake or some toast, occasionally I will enjoy some of my homemade granola with yogurt and, if I have them, berries. If I don't have berries, I like to spritz a bit of date syrup over top. So yummy. In the winter I like to have oatmeal and fruit, with a naughty drizzle of cream.


I try not to eat anything substantial later in the day. I really don't like going to bed with anything heavy on my stomach. So, my "supper" usually consists of a salad, sometimes a sandwich, occasionally a bowl of cereal, maybe some fruit. Nothing too complicated.  I try not to snack on anything at all after 7 p.m.


That's what works for me! 


Here are the meals that I enjoyed over the past seven days. I hope that you will see something here that you may want to cook for yourself and that I have inspired you to want to cook for yourself. It's not really that hard!  I promise you I don't do complicated!



Oven Braised Beef Stew


SUNDAY, August 31st - Oven Braised Beef Stew

Dad was still in hospital and so I took a container of this delicious beef stew that I had frozen out for my dinner. Cindy wasn't hosting a dinner this week as well. No small wonder as we have both been run off our feet running back and forth.  This is why I keep containers of things like this tasty stew in the freezer. They come in handy for times such as this!


This is a stew recipe that I particularly love. I have been making it for years. The meat gets browned off and then everything else is added, ready to pop the whole thing into the oven for a long slow braise. It really is delicious and went down a real treat on this particular day. Stews are a great way to make a small amount of meat go further as well.  



All you need on the side of this tasty stew is some crusty bread to sop up all of that tasty gravy.




Bread, Cheese & Tomato Omelet




MONDAY, September 1st - Bread, Cheese & Tomato Omelet




Another day of hospital visits, etc.  I made myself a simple supper/lunch of a Bread, Cheese & Tomato Omelet.  I had not made one of these in a very long time.  Meatless Monday, worked well for me.  It was also Labor Day, so a holiday here in Canada. I could smell people's BBQ's. They smelled some good.


This omelet always makes a tasty meal. Filled with plenty of cheese, toasty cubes of buttery farmhouse bread and fresh sliced tomatoes.  You really don't need anything else, but a green salad would round off the meal beautifully!





Chicken Valdostana



TUESDAY, September 2nd. - Chicken Voldastana



I had a bit of a break on Tuesday and only went in to the hospital in the evening. Dad was doing really well and to be honest I was exhausted from all the running back and forth.  I had some time to make myself a proper meal as well.  Chicken Voldastana.



This is a delicious Italian dish, composed of chicken cutlets, seasoned and dusted with salt and pepper before browning.  Some white wine and stock are added to the pan and they are briefly braised so create a lush pan sauce.  Sliced Italian ham and fontina cheese are on top. The cheese melts and everything is salty, savory, gooey, delicious. Especially with some of that pan sauce spooned over top.



I enjoyed this with a frozen pasta and vegetable side. The garlic and herb one. It was my first time using this and I quite liked it!




Tomato & Lentil Soup



WEDNESDAY, September 3rd. - Simple Tomato & Lentil Soup



This went together very quickly in the morning, and I was able to enjoy a nice hearty bowl of it before I went into visit Dad at the hospital. Simple ingredients put together in a really delicious way.



Lentils, tomatoes, celery, onions, carrots, stock. some vinegar, honey and seasonings. All together in one very tasty bowl of soup.  



I enjoyed this with some crackers and was well fed.  Plus, I had some leftovers to pop into the freezer for another time.





Beans on Toast





THURSDAY, September 4th - Beans on Toast



I just made myself a simple supper of beans on toast.  A nice, toasted slice of homemade brown bread topped with some tasty Sprague Baked Beans, and a handful of cheddar cheese grated on top.  I had some salad on the side just to add something green and healthy to the mix.

 



I love Beans on Toast.  It's one of my favorite quick fix suppers.  I don't always have cheese on top, but I had a good cheddar in the fridge which needed using and went with it!



A simple supper, but filling and delicious.


Homestyle Baked Haddock

 











FRIDAY, September 5h - Homestyle Baked Haddock


Dad was allowed to come home from the hospital on Friday so that was great!  I had the time to cook a real, proper meal.  Homestyle Baked Haddock is a family favorite. All you will need is some seasoning, cracker crumbs, butter and of course the fish.  The seasoned haddock gets placed in a buttered dish. You just sprinkle a layer of buttered cracker crumbs over top and bake.


It comes out delicious and perfectly cooked every time. I like to squeeze a bit of lemon over top to finish it off. This was delicious with some mashed potatoes and fresh vegetables on the side. I really enjoyed it.


Spicy Ranch Turkey Burgers




SATURDAY, September 6th - Spicy Ranch Turkey Burgers


I felt like having a burger on Saturday. I had not had one in a very long time. When it comes to burgers, I enjoy Turkey Burgers more than any other kind. These spicy ranch turkey burgers are some of my favorites! 



Ground turkey is mixed with minced jalapenos, grated carrot, onion, garlic and green Tabasco sauce. So, a bit spicy.  Shaped into patties and grilled with a slice of Jack cheese melted on top at the end, they are served tucked into toasted buns with a cool and creamy homemade ranch dressed coleslaw tucked in with the burger.



If you are not fond of ground turkey, you could use ground chicken in its place! I enjoyed with a few oven chips that I cooked in the air fryer. They always come out nice and crisp.




And there you have it, that was my meals of the week for the past seven days. I think I ate rather well considering. I am happy now that Dad is home where he belongs. Things are back to normal and as they should be!
