Cookies & Cream Fruit Dessert - The Ten Minute Dessert

It's hot as hades out and you don't want to turn on the oven, but you still want to be able to serve your family a delicious dessert. Perhaps some unexpected company has dropped in and you have managed to throw together a simple and quick supper, but you are looking for a quick and easy dessert that you can whip together at the last minute.
Here I am to come to the rescue. This Cookies & Cream Fruit Dessert is the perfect solution. Using only a few simple store cupboard ingredients and not a lot of time, you can have this made and served.
No time is needed for anything to set up either. Simply fold together a few ingredients, layer them on top of some tinned or fresh fruit, sprinkle with a bit of cinnamon sugar and Bob's Your Uncle. Dessert is served!
I have used diced peaches here, but you needn't limit yourself to those . . . fresh strawberries, lightly crushed . . . raspberries and blueberries . . . blackberries, cherries . . . tinned fruit cocktail, pears, apples . . . you name it!!
One thing I really like about this quick and easy dessert is that it uses things that I almost always have in my house. Tinned fruit. Whipping cream. Greek yogurt. Chocolate coated biscuits. (Yes, I do have a weakness for chocolate coated biscuits.)
All put together simply and quickly and, dare I say it, deliciously! You can thank me later!
WHAT YOU NEED TO MAKE COOKIES & CREAM FRUIT DESSERT
There is nothing complicated about this. If you keep a well-stocked store cupboard you will never be very far from being able to create this tasty dessert!
14 ounces (411g) tin of fruit in juice (peaches, apricots, pears, etc.)
1 cup (240ml) double/heavy cream whipped to soft peaks
1 cup (200g) thick plain Greek Yogurt
10 chocolate covered biscuits
1 tsp ground cinnamon
2 TBS demerara sugar (Turbinado)
You can use any tinned or fresh fruit to make this dessert. On this day I used a couple of those fruit cups, diced peaches. I dare say you could even use applesauce in a pinch, which would go really well with the cinnamon sugar topping.
The original recipe used a box of extra heavy cream, which is not available here in Canada. I substituted whipped heavy cream in its place, which worked fine. The Greek yogurt is thick as well and adds a nice tangy contrast to the sweetness of the cookies/biscuits.
I used chocolate shortbreads on this day, which are a shortbread cookie with chocolate on the bottom. I just put them in a zip lock baggie and gave them a bash about.
HOW TO MAKE COOKIES & CREAM FRUIT DESSERT
So easy to make it is almost embarrassing. Remember this is not a dessert that you want to make too far ahead of time. It is more like a quick and easy last-minute dessert, put together with store-cupboard ingredients. Perfect for when unexpected company drops by.
Drain the fruit, reserving half of the juice. Chop up in rough pieces and divide them between 4 dessert bowls. Spoon the reserved juice over top. (If using fresh fruit, just cut into pieces and put into the dishes.)
Whisk together the cream and yoghurt.
Break up the biscuits into rough bits and then fold them into the cream/yoghurt mixture. Spoon this mixture over top of the fruit.
Mix together the sugar and the cinnamon. Sprinkle evenly over top of the cream mixture.
Serve immediately.
A FEW OTHER SIMPLE NO BAKE DESSERTS
NO BAKE CHEESECAKE - This old classic was one of our mother's favorite desserts. A simple filling composed of a few ingredients whisked together, poured into a graham cracker crust and chilled. We enjoy it with cherry pie filling spooned over top.
EASY LIME REFRIGERATOR CAKE - With very little time, only five ingredients and a refrigerator you can have one of the most delicious desserts ready to feed your family. This is a favorite around here in the summer months.

A quick dessert that is not only very easy to make but uses things I normally have on hand. You can use any fruit you enjoy. Tinned or fresh. Try strawberries when they are in season or a mix of fresh berries. You can use chocolate coated hobnobs or shortbreads instead of chocolate covered digestives. Delicious!
NOTE: this dessert needs to be served as soon as it is made as it does not keep well.
Ingredients

This is a book I wrote several years ago, published by Passageway Press. I am incredibly proud of this accomplishment. It is now out of print as my publisher went out of business after Covid, but you can still find used copies for sale here and there. If you have a copy of it, hang onto it because they are very rare.
