The other day my sister Cindy and I went to the local hardware store to buy some canning jars. We were going to be canning applesauce, and I needed 1/2-pint jars. When I lived in the U.K. I had some really lovely Weck canning jars, but of course all of that got left behind when I moved back to Canada.
When we were on our way to the checkout with our case of jars what did we spy with our little eyes! Something new that we had never seen before!
I set a timer for about 15 minutes. There were no timings included, which is the only drawback that I can come up with. I went off to do a few other things and checked back at the end of that time. I thought it could use a bit longer and set the timer for a further 10 minutes.

Hooray for Summer and for Ice Cream Season! I had my first hard ice cream of the year the other night at supper. Strawberry Ice Cream and it was so good!! Made from fresh local berries.
I wanted to make some homemade ice cream for myself and popped the bowl of my ice cream machine into the freezer a couple of days ago. I had found what looked to be a fairly simple recipe on The Recipe Rebel for a Homemade Butter Pecan Ice Cream.
I only ever really eat ice cream in the summer months. It is a rare treat for me. Usually I will use ready made, even though I have an ice cream machine, but this one looked really easy to make and so I went for it!
- 1 1/2 cups (360ml) heavy whipping cream
- 1 1/2 cups (360ml) full fat milk
- 3/4 - 1 cup (150g-200g) soft light brown sugar, depending on how sweet you want it to be
- 4 large free range egg yolks
- 1 TBS pure vanilla extract
- 1/4 tsp salt
- 1 cup (115g) toasted and chopped pecans

Homemade Butter Pecan Ice Cream
Ingredients
- 1 1/2 cups (360ml) heavy whipping cream
- 1 1/2 cups (360ml) full fat milk
- 3/4 - 1 cup (150g-200g) soft light brown sugar, depending on how sweet you want it to be
- 4 large free range egg yolks
- 1 TBS pure vanilla extract
- 1/4 tsp salt
- 1 cup (115g) toasted and chopped pecans
Instructions
- Freeze the ice cream maker bowl overnight according to the manufacturers instructions.
- Measure the cream, milk, sugar and egg yolks into a saucepan and whisk together until thoroughly combined and smooth.
- Cook over medium heat, whisking constantly, until thickened. (It should be like custard.)
- Whisk in the vanilla and salt. Strain the cooked mixture through a sieve into a bowl. Cover the top with cling film to help prevent a skin from forming.
- Refrigerate until completely cold. (You can speed this process up by putting it into the freezer and stirring it every ten minutes. Do not let it freeze solid or form crystals.)
- Pour the chilled mixture into the ice cream machine bowl and place into your ice cream machine. Churn for 20 minutes, until a soft serve consistency is achieved. Add the toasted pecans during the last five minutes of churning.
- Scrape into a glass loaf pan or baking dish, cover tightly and freeze until firm, four to six hours.
- Leave to sit at room temperature for 5 to 10 minutes before scooping. Store tightly covered in the freezer for up to 3 months.

When I was growing up, this quick and easy dessert would have been considered the epitome of sophistication! Invented back in 1893 by the French Chef Escoffier at the Savoy Hotel in London, it was designed to honor the Australian songstress, Nellie Melba. Whatever it's origins, and however dated it may seem to some, I think it's nice to dust off these oldies and enjoy them every now and then, especially during the warmer months when fresh fruit is so readily available.
Well today is my birthday. Boo Hoo Fifty nine years old. However did that happen. No matter, happen it did and I am celebrating! Ten friends are coming over for lunch today and we are going to do it in style. I am looking forward to seeing and spending time with them.

I wasn't ever sure either about making them at home. Would my old blender be up to the job? Would I end up with anything even remotely resembling a milkshake? I had my serious doubts.
I am trying to eat healthier lately and so I decided that I would just throw some frozen berries into the Optimum 9400 along with some milk and a bit of honey, plus some vanilla. A milk shake has to have vanilla! I also added a bit of lemon juice to keep the colour nice and pink.
In less than two minutes I had the most delicious, creamiest milkshake I have ever eaten. No kidding! It had a beautiful thick texture.
Just look at that . . . and the taste. It was seriously delicious! I haven't enjoyed my breakfast so much in a long time and I absolutely loved the fact that I was drinking/eating something which was quite healthy and yet seemed totally luxurious!
You can be sure that now that I know it's so easy to have something this delicious in my hands at almost the blink of an eye . . . okay flick of a switch . . . I will be enjoying these tasty milkshakes a lot more in the future. I can't wait to try out some other flavours. Peach. Nectarine. Blueberry. SUMMER BERRY!
