Dippy Eggs & Toast Soldiers 



With most children starting back to school today I thought it would be nice  to share a recipe that is something fun for the kiddos and to mark what is a very special day for most children as they begin a new school year and are reunited with their friends, many of whom they haven't seen all summer!


I can remember going back to school in September and all of the excitement involved.  New scribblers, and pencils, crayons, etc.  If we were really lucky we would have a new book bag or pencil case.  And always there was new shoes to get used to.

There is nothing like making the children a special breakfast to be enjoyed on that first day to help add to the excitement. Dippy Eggs & Toast Soldiers are something all children enjoy.


Buttery fingers of crisp hot toast ready to dip into that beautiful rich golden yolk. Yum! Yum!  Nothing tastes better!  Rich and delicious and so much fun!

The timings of these eggs are perfect. They will give you a nice thick, yet runny, yolk, and perfectly cooked whites.  I like to serve these with egg spoons so that you can scrape the remainder of the white out of the shell.


Don't cut your soldiers too thick. You will want the children to be able to dip them into the eggs without having to try too hard.


Oh how I wish I had some kids around to make this for.  I used to have little plastic boots to hold the toast soldiers upright when I lived in the U.K. but they got left behind.  Oh well, that's life!  Happy first day of school!

WHAT YOU NEED TO MAKE DIPPY EGGS & TOAST SOLDIERS


Its simple really. Just use the best that you can afford and all will be well.


  • 2 large free range eggs
  • 2 slices of your favorite bread
  • softened butter to taste
  • salt and black pepper to taste

I always buy free range eggs. I refuse to support an industry that uses caged hens.  I would rather pay a bit more and get eggs from happy hens that have been allowed to run about.



You can use your favorite type of bread. If I was making these for children I would always use a good sturdy white bread, perhaps a sour dough.  If making for adults you could use a nice seeded bread.  The more interesting the better.


Just use plain old softened salted butter for spreading.  The butter I use is only slightly salted. In the U.K.  I always bought Lurpak. It was lovely.  If you can get European butter, do get it. It is worth every penny when used in a meal such as this one.

HOW TO MAKE DIPPY EGGS & TOAST SOLDIERS


Its all in the timing really. There is nothing complicated about this.



Bring a saucepan of water to the boil over medium heat. Carefully lower the eggs into the water, taking care not to crack or break them.



Boil for five minutes.



While the eggs are boiling, make the toast. Toast the bread and cut off crusts.



Spread the toast with softened butter and cut the toast into 1 inch fingers.

When eggs are done, using a slotted spoon, transfer them to egg cups. Tap around the top of each egg with a table knife and lift off the shell.



Season the eggs with some salt and pepper.



Serve the toast fingers alongside for dipping into the egg yolks. A small egg spoon is nice to have to eat the rest.

One dip and I was a child again. This is such a comforting breakfast.  It matters not if you are an adult or a child.  Simple.


It really is the simple things in life which bring us the most pleasure!  Crack our your prettiest egg cups to serve with these. (No pun intended.)

PROPER HAM AND EGGS -  Ham and eggs are a favorite combination.  Nice thick slices of ham, fried until golden brown and crispy edged in butter, served alongside perfectly cooked fried eggs.  Sunny side up, or over easy. You decide. This makes a lovely breakfast or a simple supper. It makes a great meal anytime!

Quick Macaroni Salad



With it being the Labor Day weekend, I wanted to make a couple of salads to go along with my Turkey Burger. If I had an outdoor grill, I might have been tempted to make a beef burger, but I don't so a turkey burger it was.


I confess I am not totally in love with Beef Burgers, but I do like to have them when they are done on a proper grill or in restaurants.  I think this goes back to my mother's burgers. I always hated it when my mother cooked burger patties for our supper.


My mom was a good cook, but when it came to ground beef her thrift made her buy the cheapest, fattiest ground beef. It was always loaded with nasty stuff. Well, nasty to me anyways.  If there was a bone or a piece of gristle in it, it always seemed to end up in my burger. As soon as it touched my teeth the gag reflex kicked in. 'Nuff said. Lets just say, I was not a fan.



Quick Macaroni Salad 



Not very appealing I know.  And they were not very appealing, trust me.  Anyways, I prefer Turkey burgers.  I found this small batch macaroni salad recipe in a Taste of Home Cookbook I have entitled Cooking For Two. I bought my copy on Amazon.  Its a nice book filled with lots of yummies.  I do like the Taste of Home books.


In any case, I found this delicious looking macaroni salad in it, perfectly sized for two people, or one with leftovers. I don't mind leftovers of macaroni salad. I can always enjoy it again for lunch tomorrow.

Quick Macaroni Salad 




WHAT YOU NEED TO MAKE QUICK MACARONI SALAD


Just a few simple, store-cupboard and simple fresh ingredients. There is nothing complicated here.


  • 3/4 cup (87g) elbow macaroni, uncooked
  • 1/3 cup (50g) frozen peas
  • 1/3 cup (40g) cubed cheddar cheese
  • 1/4 cup (55g) good quality full fat mayonnaise
  • 3 TBS chopped celery
  • 1 TBS finely chopped onion
  • 1 TBS finely chopped green pepper
  • 1 TBS diced pimento
  • salt and black pepper to taste

I used the Catelli Smart Macaroni, which is a white pasta that has added fiber. As a diabetic this is a smart choice for me to make. You can use plain macaroni if you wish. 


If you are in the U.K. and cannot get elbow macaroni, you can use the straight macaroni.  How I miss that stuff. I have looked for it everywhere and just cannot find it here.



Quick Macaroni Salad 



I used Balderson strong/sharp cheddar cheese. It has a lovely flavor and texture.  It happened to be dyed orange, but you can use a white cheddar if you prefer.


Pimento are small red cherry peppers.  They are often found diced and pickled here in North America. They are the red bit in the stuffed olive as well, and do have a lovely flavor.  If you are in the U.K. and cannot get them, you could use diced roasted red peppers. Or you could use raw red pepper. You could also leave them out altogether.


I used white onion this time, but red onions or spring onions would also go very well and add a nice touch of color.


I used Green Giant frozen baby peas.  I like baby peas most of all.

HOW TO MAKE QUICK MACARONI SALAD


This is a very simple make and it really is very quick throw together. You can prep all of your vegetables while the macaroni is cooking!


Cook your macaroni according to the package directions, adding the peas during the last 2 minutes of cook time.


Drain well and then rinse under cold running water. Drain well again.




Quick Macaroni Salad 



Measure all of the remaining ingredients into a bowl. Combine well and season to taste with salt and black pepper.



Stir in the macaroni and peas.  Cover and chill until ready to serve.


I just love my Bumble Bee Tea Towel which was a Birthday gift from my good friend Elaine.  She knows I adore anything with Bees on it.  I am so blessed to have good friends who know me well!



Quick Macaroni Salad 




This was a delicious pasta salad that went well with my Turkey burger for my Labor Day celebrations. It had plenty of color, flavor and crunch.  I am sure you could adapt it as well by adding a few more veggies if you wished, and or maybe some herbs.



But as written, it was quite tasty and I would make it again!  I used white onions this time but will use red onions the next time! If you are looking for a smaller sized macaroni salad to serve,  I highly recommend this recipe!!

Here are a few more small batch salads that you might also enjoy. Sometimes, even if you are a larger family, a variety of these small batch recipes, means that everyone gets to enjoy a simple TBS or two of a larger variety of salads!


CHICKEN PARMESAN PASTA SALAD - Imagine a tasty bowl of perfectly cooked al dente pasta tossed together with crisp garden-fresh vegetables, tender chunks of chicken breast, all brought together with a rich and creamy peppercorn ranch dressing! That is what you get with this delicious salad.  Simple to make and oh so tasty!



CLASSIC POTATO SALAD (SMALL BATCH) - This smaller size of the classic potato salad always goes down a real treat here. It lacks none of the flavors or textures of its larger batched counterpart. Tender chunks of potato, rich egg, crunchy celery and bits of spring onion, folded together with a rich and creamy dressing that everyone loves.

Meals of the Week, August 25th - 31st, 2024



Here we are, another Sunday and the first day in the month of September.  Sundays are the days for my Meals of the Week posts.  The day when I gather together all of the deliciousness that I have enjoyed as my main meals over the past seven days and share them, plus my menu plans and recipes with you.


I like to cook for myself for the most part, except for the occasional meal out or for dinner at my sister's place on Sundays.  I don't really like eating frozen dinners or ready meals. They are always high in salt and fat, sugar too, and they never taste even a fraction as good as the photograph on the outside of the package.


I just don't like them. Not one little bit. They might be convenient but they are hardly worth even the small effort it takes to heat them up in the microwave or whatever.  When I was younger I used to enjoy a Stouffer' macaroni and cheese every now and then or turkey tetrazzini, but something has happened since then. Either my taste has drastically improved or the quality of them has gone way down hill.  I think perhaps a bit of both to be honest!


I cook simple, budget friendly meals for the most part.  Food using honest and whole ingredients.  East to prepare as well.  I don't like to get too fancy in my every day cooking, unless I am having people over to supper.  Most of the time I do keep things fairly simple.  I had enough of complicated in my work life. Now, in my retirement, I find that simple suits me just fine.


I am also on a limited budget as most seniors are and so I try to keep things down, cost-wise, and take advantage of specials, etc. Also I live by myself, so most of my meals are now tailored to suit small  families, of only one or two people, although most of my recipes can certainly be doubled to feed larger groups.


I try also to keep my meals varied and somewhat healthy, with plenty of vegetables most of the time, not a lot of fried foods.  I do like my cheese. But there are far worse things I could indulge in, and I don't eat cheese every day. (However looking back on this week, I can clearly see I did eat a fair amount of cheese. I promise to do better next week!)


I do enjoy sharing these weekly menu and recipe roundups with you and I know from the feedback that you give you do as well.  If I can inspire someone to cook for themselves and eat a varied menu then that makes me very happy.


I have provided recipes for everything I ate and in the case of eating out I have tried to provide a like recipe in its place.

Homestyle Baked Haddock



SUNDAY, August 25th - Sunday Dinner at Cindy's place

Most Sundays see me having dinner with the family at my sister Cindy's place. This Sunday was no different. I always enjoy these meals spent together.  The food is always really good, but the company is even better.


This week my sister cooked my recipe for Homestyle Baked Haddock.  This is a real favorite of everyone's.  She served it with some rice and a variety of fresh vegetables including string beans and carrots.  Everyone always loves this delicious fish dish with its fabulously buttery lemon crumb cracker crumb topping.  I had not cooked it myself in a while, so this was a nice treat for me!


Crock Pot Chicken Divan



MONDAY, August 26th - Chicken Divan in the Slow Cooker


I  had a really busy day on Monday and so I threw an easy dish into the crockpot in the morning.  I love Chicken Divan and this simple version, cooked in the slow cooker was perfect for me.  It is a small batch recipe and lacks none of the flavors from the original oven baked version. I did use a combination of cauliflower and broccoli because that is what I had. It was delicious. Rich and creamy with a cheese topping and some crunch from crispy fried onions.


I served it simply with some steamed rice and a salad on the side.  It made three generous servings. I froze two for another time when I will undoubtedly need something quick and easy to eat.  Easily reheated, thawed, in a skillet on top of the stove.


Cheesy Ham & Egg in the Hole



TUESDAY, August 27th - Cheesy Ham & Egg in the Hole


Tuesday was a breakfast for supper kind of a day.  I made myself this quick and easy Cheesy Ham & Egg in the Hole, which is a type of hot sandwich.  Thick Texas Toast Bread, with a hollow made in the middle, just large enough to fill with a slice of processed cheese, a slice of ham and a free range egg before baking to golden brown perfection.


I also sprinkled a bit of Parmesan cheese on top prior to baking. This was hearty and filling.  I enjoyed some crisp carrot and celery sticks on the side for a quick and easy supper that was really delicious!  The good thing about these is you can make as many or as few of them as you wish!


Chicken & Stars Soup


WEDNESDAY August, 28th - Chicken & Stars Soup

Normally on Wednesday nights I go out to supper with my dad, my sister and my father's friend Hazel. I got halfway to the restaurant this week and turned around and went home. My tummy was feeling a bit upset.  Sometimes I suffer from really bad indigestion.  I am not sure what kicked it off this time.


A simple supper was in order and so I took some chicken soup out of the freezer and just thawed it out in the microwave. I tend to make a big batch of soup like this and freeze it in single serving lots.  This is a really delicious chicken soup. Not really spicy or anything. Perfect for when you just want a bit of comfort.  If you wanted to make it a heartier meal you could always serve a sandwich on the side.


Turkey Dinner



THURSDAY August 29th - Dinner out with my daughter 


My daughter came to spend the day and  night with me on Thursday because her husband was away.  I was feeling much better thank goodness and so I took us out for a late lunch/early supper.  Lupper.  We went to the Big Scoop which is a local restaurant and had a lovely meal.  I had their Turkey Dinner.  Which you can see above.  It came with everything you see here and a roll.


Hamburger and Chips


My daughter had the Burger and chips.  As you can see there was plenty of bacon and cheese on her burger plus the fixings and loads of chips on the plate. ( I think she really likes ketchup.)  Then for dessert she had a bowl of ice cream. I didn't have any dessert because I was full after my dinner.


Country Baked Chicken


I know it is not quite the right time of year to be baking a turkey for a dinner so in it's place I am sharing my recipe for Country Baked Chicken.  Skin on, partially boned chicken breasts baked with a crispy skin and crumb coating.  Tender and delicious. The juices make a fabulous country gravy.  This is just wonderful served with mash and veggies on the side.


Chicken sauteed with Cheese & Milk



FRIDAY, August 30th - Chicken Sauteed with Cheese & Milk


This is a fabulous recipe which makes great use of one chicken breast and stretches it to feed two people very generously.  A chicken breast is cut in half through the middle horizontally and pounded out a tiny bit. Seasoned and floured, then sauteed in a bit of oil/butter until golden brown.  A slice of melty cheese is popped on top, along with a sprinkle of Parmesan and then a bit of milk is added to the pan.


The chicken cooks briefly in the milk to tender and juicy perfection.  I had sauteed a few sage leaves until crisp to serve on top.  Tasty!  This was a lovely meal which I served with some garlic butter rice and some steamed yellow beans.  Nobody was unhappy with this!


Beans on Toast


SATURDAY, August 31st - Beans on Toast

I spent a goodly portion of my day out shopping with my sister and so on Saturday I just made myself a simple supper of beans on toast.  A nice toasted slice of homemade brown bread topped with some tasty Sprague Baked Beans, and a handful of good cheddar cheese grated.  I had picked up some salad bags that were on special in my shopping and ended up having half of one of those on the side, just to add something green and healthy to the mix. 


I love Beans on Toast.  Its one of my favorite quick fix suppers.  I don't always have cheese on top, but I had picked up a good cheddar in my shopping as well and thought why not!


And there you have it, my meals of the week for this, the last week of August 2024.  There wasn't anything complicated in the least and everything was delicious. Simple, economical, except for the meal out and a great week of meals to end the month on!
