French Onion Cottage Pie - with a Cheesy Mashed Potato Topping

Wednesday, 21 October 2026

French Onion Cottage Pie

The combination of  chunks of stewing beef with French onion soup mix, thyme, and apple juice, slow cooked until melt-in-the-mouth tender gives this cottage pie a wonderfully rich flavour with just a hint of sweetness.  Topped with cheesy mashed potatoes and baked until golden brown, it's the kind of meal that feels like a warm hug on a chilly day.

French Onion Cottage Pie

Red meat isn't something which we eat in this house very often.   Not only has it become very expensive as of late, but its not that good for you. They did have stewing beef on special at Sobey's recently, so I stocked up.  The other night I made this French Onion Cottage Pie for supper using some of it, and I have to say it was fabulous.  I did start it the night before by using my slow cooker to cook the beef overnight so that it was fork tender, and the gravy was absolutely delicious.   I just used the method etc. that I normally use to do a pot roast in the slow cooker.  It worked out really well.

The meat cooks in a mix of dry onion soup mix and apple juice, along with some dried thyme.   You can use water instead of the apple juice if you wish, but the apple juice really gives it a lovely flavour.  You can use half apple juice and half water if you are not sure.  I think the apple juice helps to tenderize the beef.  Not sure, but I know that I like it!  ☺

You thicken the gravy once the meat it tender and then pour it into a casserole dish.  I top it with carrots, peas and corn, which I cook myself, but you could also use mixed frozen vegetables if you wanted to, or in a pinch . . .  drained canned mixed vegetables.  I like to cook my own from scratch.

A Parmesan Cheese flavoured buttery mash tops it off before you pop it into the oven.  You bake it until it is golden brown on top with scrummy little bits (that I love) and the filling is bubbling up underneath.  The whole thing is scrumptious.  SCRUMPTIOUS!

🥘💛INGREDIENTS NOTES🥘💛

Beef Stew Meat
The perfect choice for slow cooking. As it simmers the beef becomes beautifully tender and develops a rich, hearty flavour that makes this cottage pie pure comfort food.

Dry French Onion Soup Mix
This is the secret ingredient that gives the filling its incredible savoury depth. Packed with onion flavour and seasonings, it creates a rich gravy without a lot of fuss.

Dried Thyme
A classic herb pairing for both beef and onions. It adds an earthy note that enhances all the other flavors without overpowering them.

Apple Juice
A bit unconventional I know, but it adds a delicate sweetness that balances the savoury onion flavours and helps to create a rich and delicious gravy. Don't worry the end result isn't fruity, but if you wish you could subtitute water in it's place.

Floury Potatoes
Floury potatoes such as russets mash up light ad fluffy, making them ideal for creating that golden, crispy topping.

Warm Milk
Warm milk helps to create smooth, creamy mashed potatoes without cooling the mixture down.

Parmesan Cheese
Adds a savoury, slightly nutty flavour to the topping and helps it to brown beautifully in the oven.

Butter
Butter enriches the mashed potatoes and contributes to that irresistible golden finsih.

🥘💛HOW TO MAKE FRENCH ONION COTTAGE PIE🥘💛

You do need to start this the night before by braising the beef in the slow cooker/crock pot. You could also do this in the oven if you would rather.

  1. Place the stew beef in the slow cooker along with the soup mix, thyme and apple juice or water. Cook on low for 8 hours/overnight. (Alternately you could put everything into a casserole dish with a lid and then oven braise it in a slow oven for several hours until tender.)
  2. The next day, scoop out the meat and place into a four serving size shallow casserole/baking dish. (My casserole was 8 by 12 inches in size, 3 inches deep. Leave the juices in the crock pot so you can thicken them.)
  3. Whisk the flour/water mix into the juices in the pot and bring to the boil, stirring constantly. Cook until thickened. Taste and adjust seasoning as required. Pour over the meat in the casserole dish. (This is your gravy.)
  4. Cook the carrots in lightly salted boiling water until almost tender. Add the peas and corn for the last couple of minutes. Drain well. Spread the vegetables over the meat in the casserole dish. (You could use canned veggies if you wanted to, or all frozen. Mixed veggies are nice.)
  5. Cook the potatoes in lightly salted boiling water to cover until fork tender.
  6. Drain well and return the potatoes to the saucepan. Mash well with enough warm milk and the butter to give you the right consistency for spreading over the casserole filling. Stir in the Parmesan cheese. (You want them to be able to hold their shape and stand up a bit. You don't want them to be loose and pasty.)
  7. Taste and adjust seasoning before spreading over top of the casserole to cover the meat and the vegetables. Rough up the top with the tines of a fork. Dot with a bit of butter if desired. (I just run a fork at alternate intervals to create a bit of a basket weave. You can rough them up whichever way you wish.)
  8. Preheat the oven to 180*C/350*F/ gas mark 4. Once the oven is hot place the casserole dish on top of a baking tray. (This will help to prevent a mess if the gravy boils over into the oven.)
  9. Bake in the heated oven until the filling is bubbling and the top of the cottage pie is golden brown. (About 35 to 40 minutes) Let stand five minutes before spooning out to serve. Delicious!

🥘💛HINTS AND TIPS FOR SUCCESS 🥘💛

Brown the beef first if you have the time
While this recipe works well and is delicious as is, if you have the time you can brow the beef before adding it to the slow cooker. This will give the filling an even deeper flavour and richer colour.

Choose the right potatoes
Make sure you use a floury potato such as a Russet, King Edward,  or Maris Peer. You want a potato that will turn floury and fluffy, not one that comes out waxy.

Don't skip the seasonings
A well seasoned dish, the potatoes and the meat makes all the difference in the world. Taste, taste, taste and adjust seasoning as required.

Create lots of texture on top
Using a fork to rough up the potatoes a bit before baking. All those little ridges will turn beautifully golden and crisp in the oven.

A little extra butter never hurts
Dotting the top with a few small pieces of butter before baking creates an extra-golden, beautifully browned finish.

French Onion Cottage Pie

🥘💛COOKS NOTES🥘💛

The secret to this cottage pie is patience Lowm slow cooking allows the beef to become fork tender and gives the French onion flavours tine to develop into a rich, comforting gravy. Combined with the cheesy mashed potato topping, it's the sort  of meal that warms you from the inside out and tastes even better on a chilly autumn afternoon.

We enjoyed this with a nice tossed salad on the side. For heartier eaters you could add some crusty bread to help mop up all the gravy!

French Onion Cottage Pie

🥘💛A FEW OTHER COMFORT FOOD RECIPES TO ENJOY🥘💛

Here are a few other comfort food recipes to have up your sleeve. I've never had anyone turn any of these down!

ROASTED SAUSAGE AND POTATO SUPPER - For this dish sausages, potatoes, onions and peppers roast in a baking dish along with some white wine, herbs and seasonings. It makes just the right amount for two people and is a Mary Berry recipe. Tender juicy sausages and veggies, along with some grainy mustard for serving. It's delicious! It can easily be multiplied to serve more.

COCONUT CHICKEN CURRY - Fabulously fruity and rich, and is not overly spicy. It really boasts some beautiful flavors, and is an excellent recipe to use if you are wanting to introduce someone to curry dishes.  A way to wet their whistle so to speak! It uses the zest and juice of a fresh orange. It really is delicious.

Pumpkin Spice Oatmeal Cookies

Soft and chewy Pumpkin Spice Oatmeal Cookies, loaded with oats, chocolate chips, cranberries, coconut and pumpkin seeds.  The perfect cozy fall cookie recipe. Prepare to fall in love!

Pumpkin Spice Oatmeal Cookies

As soon as the temperatures start to fall and the leaves start to turn and drop, I find myself reaching for recipes filled with warm spices and comforting flavours. These Pumpkin Spice Oatmeal Cookies are everything I love about autumn baking and flavours, all wrapped in one delicious cookie. Soft and chewy, they're packed with the wholesome goodness of oats, sweet chocolate chips, tart cranberries, crunchy pumpkin seeds (I used pecans) and just enough coconut to add a lovely extra layer of texture and flavour.

What makes these cookies especially wonderful is the balance of flavours and textures in every bite. Pumpkin spice and cinnamon bring cozy warmth, while the oats create a satisfying chewiness that pair beautifully with the bursts of semi-sweet chocolate and tangy cranberries. They are also not overly sweet, making them ideal for an afternoon coffee break, a lunchbox treat, or a cozy evening with a hot drink.

These cookies come together with simple pantry ingredients and fill the kitchen with the most inviting aroma as they bake. if you are looking for a cookie that celebrates all the best flavours of autumn, you have just found it. One batch and you are sure to understand just why these are destined to become a seasonal favourite in your kitchen and mine!

🍪❤️HOW TO MAKE PUMPKIN SPICE OATMEAL COOKIES🍪❤️

These are a simple cookie to make, but do beware that you need to chill the dough for a time before baking to help give you the perfect texture and prevent them from spreading too  much.

  1. Whisk all of the dry ingredients together in a bowl. (flour, salt, spices and baking soda) Set aside. (I just use a small wire whisk.)
  2. Cream the butter and both sugars together with an electric mixer until light and fluffy. (2 to 3 minutes)
  3. Beat in the egg and vanilla, beating until smooth. (scrape bowl if necessary)
  4. Add the dry ingredients to the bowl and beat on low speed just until combined. Stir in the oats by hand. (This helps to prevent overmixing and a tough cookie.)
  5. Stir in the chocolate chips, coconut, cranberries and pumpkin seeds, again by hand.
  6. Cover and then chill the dough for at least 45 minutes. (I just scraped it all into a zip lock baggie. You can chill these for up to 4 days before baking, apparently.)
  7. Preheat the oven to 350*F/180*C/ gas mark 4. Line two baking sheets with some baking parchment.
  8. Scoop out large balls of the chilled dough (2 to 3 TBS each). Roll into balls and place onto the baking sheets two to three inches apart. (This will help to prevent them from baking together.)
  9. Bake in the preheated oven for 14 to 15 minutes. (When done they should be set and the bottoms just turning golden brown.)
  10. Leave to sit on the baking sheets for 8 to 10 minutes before scooping off onto a wire rack to cool completely.
  11. Store in an airtight container. (These also freeze well, for up to three months.)

🍪❤️HINTS & TIPS FOR COOKIE BAKING SUCCESS🍪❤️

These hints and tips are sure to help you make the best cookies ever.

  • Use flat cookie sheets without sides for even baking.
  • Place cookies at least 2-inches apart on baking sheets to allow for spreading.
  • Use a sheet of baking parchment or a light spritz of cooking spray to grease your cookie sheets. It's not necessary to repeat this step for every batch but do wipe off any crumbs or sugar from the surface before adding the next batch.
  • Place your cookie sheets in the middle of the oven.
  • Make sure the sides of your cookie sheets don't touch the edges of the oven so that heat can circulate evenly and properly.
  • Pay particular attention to bake times.  An extra minute or two can make a big difference to the end result since cookies are for the most part quite small and bake quickly. Always aim to underbake rather than overbake. Cookies do continue to bake after you remove them from the oven.

Pumpkin Spice Oatmeal Cookies

🍪❤️FREQUENTLY ASKED QUESTIONS🍪❤️
for most cookies

CRISP OR CHEWY COOKIES?

If you prefer crisp cookies, press the dough flat with the bottom of a glass dipped in granulated sugar prior to baking.  If you want soft chewy cookies, remove them from the oven about 2 minutes before they are done as they will continue to bake on the hot cookie sheet. If you want crisp cookies bake them for 2 minutes longer.

HOW CAN I KEEP MY COOKIES FROM SPREADING TOO MUCH?

  • Don't substitute butter for shortening in a recipe which calls for shortening. shortening has a higher melting point, which means it doesn't liquify as quickly, and does a better job of holding the ingredients together. High butter cookie = a cookie that spreads.
  • Grease your baking sheets only if the recipe requests you to do so. Most cookies will not stick unless they contain large amounts of butter or sugar.
  • Make sure you preheat your oven before baking. If the oven is not hot enough the fat in the cookies will melt before the other ingredients have time to set up.

WHAT IS THE BEST WAY TO STORE COOKIES?

Cool cookies completely before storing. Pack them in single layers between wax or parchment paper to prevent sticking. Do NOT store crisp and soft cookies together in the same container. Store in an airtight container.

HOW DO I FREEZE COOKIES PROPERLY?

To freeze cookies, place them into airtight containers or freezer bags, again with a layer of wax paper or parchment paper in between the layers.  Again, do not store soft and crisp cookies together. They will keep up to six months frozen. Label properly with the type and the date baked/frozen.

🍪❤️A FEW OTHER COOKIE RECIPES TO ENJOY🍪❤️

If you are a cookie monster like I am, then you might also enjoy the following delicious options!

QUARTER CUP COOKIES -  These incredibly moreish cookies are made from exactly 1/4 cup of each of the main cookie ingredients, aside from the flavorings and soda. The end result is a delicious cookie that everyone enjoys. They were originally called 10 cup cookies, but that made far too many cookies for me, so I reduced everything to 1/4 cup!

LEVAIN BAKERY OATMEAL RAISIN COOKIES - A copycat recipe of the infamous Levain Bakery cookies. These are excellent oatmeal raisin cookies. The recipe makes nine very large cookies.  Each one weighing in at almost half a pound each. These are a real indulgence, with plenty of nutty oats and sweet raisins. You could make them smaller but then they wouldn't be Levain.

This is a book I wrote several years ago, published by Passageway Press. I am incredibly proud of this accomplishment. It is now out of print as my publisher went out of business after Covid, but you can still find used copies for sale here and there. If you have a copy of it, hang onto it because they are very rare. This was a real labor of love for me and a dream come true as I had always wanted to write a book since I was a child. Hopefully I will be able to republish it one day. A third of my life was spent living in the UK. I learned to love the people, the country and the cuisine. I have always been an Anglophile. You will find plenty of traditional British recipes here in my English Kitchen. There are lots of North American recipes also, but then again, I am a Canadian by birth. I am always happy to help and point you in the right direction, even if it exists on another page, or in my extensive collection of cookbooks.
