- 3/4-pound (340g) baby potatoes
- 1 small onion
- 1 TBS light olive oil
- 1/2 tsp seasoned salt
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1/2 pound (227g) smoked sausage
- 1/2 each (medium) red and yellow bell pepper
- dried parsley or fresh parsley, chopped for garnishing (optional)
- honey, mustard, barbeque sauce or ketchup for serving (optional)
- Wash the potatoes really well. No need to peel. Dry and then cut in half. Pop into a bowl.
- Peel the onion and cut into eighths. Drop the onion into the bowl with the potatoes. (Cut in half, then cut the halves in half again, and then cut in half once more.)
- Whisk together the seasoned salt, garlic powder, and pepper. Stir in the oil.
- Toss this mixture into the bowl with the potatoes and onions. Give everything a good toss together to coat the potatoes and onions with the seasoned oil. (Alternately you can do this in a zip lock baggie zipped shut. I use a bowl to cut down on rubbish.)
- Place into the basket of your air fryer. (If desired you can coat your air fryer basket with some cooking spray. I never need to do this with mine.)
- Preheat the air fryer to 400*F/200*C. Air fry the potato mixture at this temperature for 10 minutes. Remove from the air fryer, give them a good stir and then return the basket to the air fryer and air fry for a further five minutes. (I use a pair of rubber ended tongs to stir and toss them about.)
- While the potatoes are cooking slice the sausage on the diagonal into 1-inch slices. Cut the peppers into large chunks. (I cut each half pepper into halves and then cut the halves crosswise into large chunks.)
- Toss the sausage and peppers into the basket of the air fryer and toss together.
- Return to the air fryer and air fryer a further 5 minutes at 400*F/200*C.
- Remove to a heated serving bowl. Scatter parsley flakes over top (if using.) Serve with your favorite sauce accompaniments if desired.
- Purchase ready cooked smoked sausage. You can also use juicy jumbo hotdogs. Just use what your family will eat and enjoy.
- If desired, you can use smoked vegetarian or turkey sausages.
- Make sure you give everything a good stir halfway through the cook time and after you add the sausages. This will help to prevent things from sticking to the basket. It also helps to ensure even cooking.
- I have used large diced raw peppers in this dish, but if they are not your favorite thing, you can also use other vegetables. Chunky sliced zucchini/courgette, broccoli and cauliflower florets. All work very well.
- No air fryer? No problem! You can also cook this very easily in the oven on a baking sheet. Increase the temperature by 25*F/about 5 to 10 *C. and increase the cook time by 10 to 15 minutes.
- They don't heat up the kitchen in the summer months.
- They have the capacity to cook with a minimal amount of fat, and often much quicker than using a conventional oven, which makes the food a bit healthier.
- They are much easier to clean than a conventional deep fat fryer and you don't have to worry about getting rid of or storing the oil used.
- They are much safer to use than a conventional deep fat fryer.
- They are an excellent means for reheating crispy foods in less time than the oven with crisp rather than soggy results.
- They are an ideal tool for the smaller family to use when cooking rather than turning on a whole oven, they can often do the same thing quicker and using less power.

Air Fryer Potatoes & Sausage
An easy one pan meal that keeps the kitchen cool. It's simple to make and delicious. A tasty dinner in half an hour? Count me in!

I need an air fryer, they just seem so big to store, and I hate things on the counter. I do use the bbq when it is hot. This looks so good, my kind of meal.
