- 2 TBS light olive oil
- 1 TBS Dijon mustard
- 1/2 TBS apple cider vinegar
- 1/2 tsp granulated sugar
- salt and black pepper to taste
- 6 ounces (160g) fresh green beans, trimmed
- 4 medium new potatoes, unpeeled
- 1 TBS finely chopped red onion
- Bring the potatoes to the boil in a pot of lightly salted water. Cook for 15 to 20 minutes until fork tender. Add the green beans to the pot for the last 5 minutes of cooking time. Drain, run under cold water to stop the beans from cooking any longer. Drain again. (If desired you can cook the green beans in a separate saucepan of salted water. The important thing is to not overcook them. You want them to retain as much of their color as possible.)
- As soon as you can handle the potatoes, peel them. Cut them into 1/2-inch cubes, placing the cubes into a bowl. (I prefer to cook them whole and then peel and dice afterwards. The potatoes cut into lovely firm pieces, and you have more control over them. If you dice them and then cook them, they might get too soft.)
- Cut the green beans in half crosswise and add to the bowl, along with the minced red onions. Toss everything together gently. (Cutting the beans in half crosswise makes for a nicer bite. I was always taught that everything in a salad should be bite sized. You should not have to cut anything in a salad at the table in order to eat it.)
- Whisk all of the ingredients together for the dressing until combined and emulsified.
- Add the dressing to the bowl and again, toss everything together gently to combine and coat everything with the dressing.
- Serve at room temperature.
- Crumbled crisp bacon is a lovely addition.
- You can also add some fresh herbs such as chopped chives, parsley, basil, or dill.
- Add some grated or small cubes of cheese. Swiss cheese is especially nice as is a medium white cheddar.
- Turn this into a main dish salad by adding some cubed cooked chicken breast, diced ham, or flaked cooked tuna or salmon.
- This is a salad that pairs well with any protein (Meats, fish, Poultry) for a delicious main meal.
- Add some crusty bread on the side and pass the butter!
- Spoon into a pretty bowl for serving. For an added extra touch, you can line the bowl with lettuce leaves.
- Serve scooped onto fresh lettuce leaves for a unique presentation.

The recipe I am sharing with you today comes from the pages of my Big Blue Binder. This is a binder full of collected recipes that I have been using for over 45 years now. It has travelled all across Canada and back with me and even across the Atlantic ocean and back.
It is filled with my tried and trues and family favorites. Recipes shared with me from family members through the years and from good friends. You just know everything in it is going to be delicious.
Recipes just like this one that I am sharing today for a fabulous side dish that is simple and delicious and that can be whipped together very easily at the last minute. Company Green Beans. Trust me when I tell you these are well worth sharing with Company.
- 3 slices of streaky smoked bacon
- 1 small red onion, peeled and finely minced
- 2 cloves garlic, peeled and finely minced
- 1 (14 1/2 ounce/411g) French cut green beans, well drained
- 1 fresh tomato, chopped
- salt and black pepper to taste
- 1/2 cup (120g) grated cheddar cheese
- Preheat the oven to 400*F/200*C/ gas mark 6.
- Add the bacon to a cast-iron, or oven-proof skillet. Cook over medium-high heat until crisp. Remove (saving the drippings in the skillet) and set aside, leaving it to drain on some paper towels.
- To the bacon drippings, add the onion and the garlic. Cook, stirring often, until softened.
- Remove from the heat. Stir in the well drained green beans, chopped tomato and seasonings. Crumble the bacon and stir it in as well.
- Sprinkle the grated cheese over top and cover the pan tightly with aluminum foil.
- Bake in the preheated oven for 15 minutes.
- Uncover and reduce the temperature of the oven to 350*F/180*C/gas mark 4. Bake for a further 15 minutes until hot and bubbly. Delicious!

Company Green Beans
A simply delicious way to jazz up green beans. A real favorite, this recipe can also be cut in half very easily. Ask me how in the comments section.
Ingredients

I love, Love, LOVE that we are coming into fresh local vegetable season here in Nova Scotia. I wait for this all year round and when it arrives I eat as many fresh and local veggies as I can! Nothing tastes so good as something which has not long been picked and sent to the local farm market. These fresh veggies beat the heck out of the vegetables we have available to us in the off months, many of which have been imported from thousands of miles away!
I was so excited to go into the Farm market yesterday and see fresh local green and yellow beans. Well, the yellow were all gone, but I loaded up on the green. There is nothing I love quite as much as fresh green beans! I could eat them until they come out my ears. Steamed, raw, roasted, sauteed, pickled. You name it, I am in love with them!
- 1 pound (454g) fresh green beans, ends trimmed (1/2 pound/227g)
- 1/4 cup (60ml) light olive oil (1/8 cup/30ml)
- 2 TBS fresh parmesan cheese, shredded (1 TBS)
- 4 cloves of garlic, peeled and minced (2 cloves)
- 3/4 tsp kosher salt (1/3 tsp)
- 1/4 tsp freshly ground black pepper (1/8 tsp)
- 1 1/4 cup (about 150 grams) grated mozzarella and cheddar cheese (scant 2/3 cup/75g)

Cheesy Garlic Green Beans
Ingredients
- 1 pound (454g) fresh green beans, ends trimmed (1/2 pound/227g)
- 1/4 cup (60ml) light olive oil (1/8 cup/30ml)
- 2 TBS fresh parmesan cheese, shredded (1 TBS)
- 4 cloves of garlic, peeled and minced (2 cloves)
- 3/4 tsp kosher salt (1/3 tsp)
- 1/4 tsp freshly ground black pepper (1/8 tsp)
- 1 1/4 cup (about 150 grams) grated mozzarella and cheddar cheese (scant 2/3 cup/75g)
Instructions
- Preheat the oven to 425*F/220*C/ gas mark 7. Lightly butter a baking sheet or a large baking dish with some nonstick cooking spray.
- Wash the green beans, trim, pat dry and then arrange in a single layer on the baking sheet/dish.
- Drizzle with the oil, garlic and parmesan cheese and then use your hands to toss everything together, evenly coating the beans. Season with salt and black pepper and spread out again.
- Roast in the preheated oven for 20 minutes until a lovely green color and crispy tender.
- Remove from the oven and turn on the grill/broiler. Scatter the cheese blend over top, and return to the oven. Grill for 4 to 5 minutes or until the cheese melts and starts to brown.
- Serve immediately.
