Ham & Cheese Quesadilla


Have you ever found yourself hungry and wanting something tasty to eat right now?  Something that isn't going to require a lot of time to throw together but will still be delicious?  I found myself feeling just that way after church.  


What I really wanted was a ham and cheese sandwich, but I didn't have any bread. Well, I did, but it was fit only to throw out to the birds. First world problems. What to do, what to do.


I did have a package of smallish flour tortillas.  I like quesadillas. Problem solved.


Ham & Cheese Quesadilla 



I decided to make myself some Ham & Cheese Quesadillas.  They were quick and easy to make and they were delicious. I cannot take credit for the idea. It was something which I had seen on Pinterest one day a few weeks back and pinned to make at some point in the future. This was the day.



My quesadillas were inspired by some I saw on a blog called Girl Heart Food. And I have to tell you they are delicious!  Quick and easy to make and extremely tasty!  Lower in carbs than a ham and cheese sandwich would be as well, so bonus there!


Crispy flour tortillas, loaded with plenty of shaved ham and cheddar cheese, with the unexpected addition of some dill sandwich stacker pickles and, my own touch, a drizzle of Dijon honey mustard.



Golden brown, crispy, gooey melty, salty, tangy deliciousness. This fit the bill perfectly. I will definitely be making these again, I guarantee!  You need to try them. You won't be sorry!  I promise you that!

WHAT YOU NEED
TO MAKE 
HAM & CHEESE QUESADILLAS


There is nothing complicated here. Simple ingredients put together in the most delicious way possible.


  • 2 flour tortillas (7 to 8 inch)
  • softened butter to spread
  • 8 slices of thinly sliced deli ham, 4 for each quesadilla
  • 1 cup (4 oz/115g) grated strong cheddar cheese (Swiss or Jack is also nice)
  • 4 thinly sliced dill pickle sandwich stackers, pat dry with some paper towels
  • squeezable Honey Dijon mustard
  • sour cream or ranch dressing to serve (optional)

I always keep flour tortillas in the house, and in two sizes.  They always come in very handy.  You could skip the butter and just fry these in oil, but I loved the richness that the butter added to the finish.



I used Italian Deli Ham.  It worked very well.



I used a strong white cheddar cheese. I like cheddar. You can use any good melty cheese.



You can leave the dill pickles out of you wish and add something else, like chopped pickled onions, or pickled peppers, etc.  Just be sure that whatever you use, you pat it nicely dry with some paper towels so that you don't have a soggy finish.



I like Honey Dijon mustard. It goes very well with the smokiness of the ham and the richness of the cheese. It added a really tasty flavor note of punchy/sweet warmth, which I really enjoyed.

HOW TO MAKE 
HAM & CHEESE QUESADILLAS



Once again, it's not rocket science! Have fun with this. That's what it's for!


  1. Distribute 1/2 of the cheese sprinkling it over half of each tortilla and dividing it equally. Top each with 2 sandwich stackers. (Make sure you really pat the pickles dry with some paper towels to prevent a soggy quesadilla!)
  2. Top each with four slices of ham. You can crumple this or fold it. It's up to you.
  3. Drizzle some honey mustard over top of the ham. Sprinkle the remainder of the cheese over top, again dividing it equally.
  4. Fold the empty half of the tortilla over the filled half. Spread both sides of the quesadilla lightly with softened butter.
  5. Place into a non-stick skillet. Heat the skillet over medium heat.
  6. Cook until the tortillas are golden brown on the bottom side. Carefully flip over and brown the other side. They are done when heated through and the cheese is all melty, and the tortillas are crisp and golden brown.
  7. Remove from the skillet carefully to a cutting board. Cut each one in half and serve immediately with or without sour cream or ranch dressing if desired.

WHAT IS THE
BEST KIND OF CHEESE TO USE?


I recommend a cheese that will melt easily. Gruyere, cheddar, Jack, Swiss, Compte, Mozzarella, etc. All work very well. You could also use a combination of cheeses. I do highly recommend grating your own cheese for these.



DO I HAVE TO
USE HONEY MUSTARD?


Of course not. I used it because it is one of my favorite condiments to enjoy with a ham and cheese sandwich. You can use a drizzle of hot sauce if you wish. Sriracha is nice and I also enjoy Green Tabasco.

WHAT TO SERVE WITH 
HAM & CHEESE QUESADILLAS




You can serve these tasty quesadillas with your favorite dips of course. Sour cream and Ranch dressing are both very good, but this is a quesadilla that also goes very well with a hot cup of soup! Tomato Soup is a real favorite!


A tossed salad also goes very well as do some French fries, or potato or tortilla chips!

QUESADILLAS YOU MIGHT ENJOY



EASY PIZZA QUESADILLASUsing just a few simple ingredients, they are quick and easy to make and, for the most part, come together quickly and cook in a skillet on top of the stove. What's more, they are DELICIOUS! Using flour tortillas, a good pizza sauce, a variety of cheeses, and your favorite pizza toppings, they also go together in a flash.  I guarantee you won't even have time to break into a sweat. They are also totally adaptable to whatever your favorite pizza toppings are.

Whether you enjoy it for breakfast or for dinner, this is sure to become a firm favorite!
