Meals of the Week, August 17th - 23rd, 2025




How can it be Sunday all over again!  Haven't the weeks been whipping by super quickly?   I cannot believe how fast the days are going and here we are already to start the last week of August. It seems impossible, but there you go, it's quite true. September is sitting on our doorsteps!



On Sundays I like to share with you, my sweet readers, my Meals of the Week.  That is everything delicious I have enjoyed as my main meals over the past seven days, plus any pertaining recipes and suggestions for delicious sides.


I do normally eat at my sisters on Sundays for Sunday Dinner with the family most Sundays.  That didn't happen this week, but I did go out for dinner with my father and sister on Wednesday night. I have provided a "like" recipe as a substitution for that night.



As a person who lives on their own, I try to always cook for myself rather than submit to the temptation of heating up ready meals or frozen dinners.  I know that cooking for yourself can often seem like a lot of work when you have nobody to feed but yourself, but I think it is worth the trade-off in eating healthier meals.



Ready meals and frozen dinners are loaded with fat, sugar and salt, and they are never even half as tasty as the photographs on their covers would lead us to believe!  They cost a lot of  money as well. I would rather cook myself a meal and then freeze the extra for another time if it is a full sized meal. Mostly these days, however, I am cooking downsized meals for just one or two people. There is less waste that way.  



All of my recipes can be either multiplied to feed more or downsized to feed less. Just ask me how to do it if you are needing any help with that!



For breakfast most days I will enjoy a protein smoothie.  As a person who lives on their own it can be a struggle also to get in the amount of protein etc. that your body needs. I find a protein smoothie fits the bill and they are simple to make. I buy a protein powder online and then just shake it together with milk, or oat milk.  Delicious and simple. 



Generally speaking, unless I am eating elsewhere, my main meals are enjoyed in the early afternoon, about one-ish  I don't do well eating larger meals later in the day. My old digestive system is not what it used to be, so I try not to put anything too heavy into my stomach later in the day.



Supper will usually be something light for me, such as a bowl of soup, or a sandwich, often toast, a bowl of cereal, and sometimes fruit.  This is what works for me and my digestion.



I try for the most part to keep my meals fairly healthy and economical as well. I live on a small pension plus what I can earn on this page, so I need to watch my pennies.  I do eat a lot of chicken however. Red meat is not something I eat very often, unless I am eating out.  I try to have fish at least once a week, or eggs if I can.  It is a challenge to get in all the fruits and vegetables that we are recommended to eat. Getting in my five a day remains a challenge that I am working on.



And so, without any further blah blah blah, here are my meals of the week for the past seven days!  I hope you are inspired by them and will want to cook at least some of them for yourself!




Classic Roast Chicken



SUNDAY, August 17th - Classic Roast Chicken & Gravy


Usually on Sunday's I go to my sister's for Sunday dinner with the family. She did not have Sunday Dinner this week, so I made myself one at home. I had a small chicken and I roasted it and did myself a slap up roast dinner, with chicken, gravy, some stuffing, roasted potatoes and peas and carrots.  And, I enjoyed every mouthful.  


I had enough to enjoy on Sunday and then make a casserole or something later in the week, plus I had the bones to put into the freezer for some soup and enough meat for sandwiches.  Roasting a chicken is always a good economy.


Roasted Balsamic Cherry Tomato Pasta



MONDAY, August 18th - Roasted Balsamic Cherry Tomato Pasta


My sister has cherry tomatoes coming out her ears at this point.  She gifted me with some, and I made a delicious pasta dish for Meatless Monday. Delicious and super quick to make. Roasting brings out the natural sweetness of any tomato. 


This is a tasty recipe that comes together lickety split and goes very well with garlic bread and perhaps a salad on the side. That's all you need.  It's a great way to use up some of the garden glut and you can also use regular garden tomatoes, cut into chunks.



Chicken Dinner Poutine


TUESDAY, August 19th - Chicken Dinner Poutine


I took advantage of having leftover chicken to use up and made myself one of my favorite dinners!  Chicken Dinner Poutine. Not only did I get to use some of the chicken, but I also made great use of the leftover gravy and stuffing too!


Crisp chips, melting cheese, chicken, gravy, stuffing and peas.  This is such a simple thing and yet the flavors are amazing.  I have been known to roast a chicken just so that I can enjoy this!


I froze the remainder of the chicken to enjoy in a casserole at a later date.


Smash Burgers


WEDNESDAY, August 20th - Dinner out with Dad


It had been a long time since my sister and I went out to dinner with our father. His friend Hazel was unable to meet him this week and so we went out with him so he wouldn't be on his own. We went to the same place, The Big Scoop.  Dad had Haddie Bits and Chips and Cindy and I each had the smash burger with onion rings.


In its place I am sharing my own recipe for Smash BurgersTwo portions of ground beef, smashed and grilled to perfection with plenty of cheese in the center on a toasted bun with your favorite condiments. This is truly delicious.


Caesar Pork Chops


THURSDAY, August 21st - One-Pan Caesar Pork Chops


Three simple ingredients, not counting the salt, pepper and cherry tomatoes. These delicious pork chops are a real favorite of mine.  Everything bakes on a sheet pan in the oven. I like to use bone-in old-fashioned pork chops for a really juicy finish.


I enjoyed with the roasted cherry tomatoes and some tender stem broccoli on the side. I also enjoyed a small baked potato.  I was really pleased with this meal! It was delicious!



Sole Filets with Lemon & Thyme



FRIDAY, August 22nd - Sole Filets with Lemon & Thyme


Fish for Friday.  I had some sole filets in the freezer, and I took one out to enjoy for my supper. I love sole. It has such a beautiful mild flavor and lovely texture. A delicate fish like sole deserves a simple and beautiful treatment such as this recipe affords it. 


Lightly seasoned and dusted with salt and pepper, it is pan-grilled in a bit of butter along with some sprigs of thyme. Fresh lemon is squeezed over top to finish.  This is such an exceptionally delicious way to enjoy this fish.


I enjoyed it with some peas and carrots and pan roasted new potatoes.  Such a beautiful supper. I really enjoyed it!


Bread & Cheese Omelet


SATURDAY, August 23rd - Bread & Cheese Omelet


I had picked up some fresh eggs at the farm on Friday afternoon and so I decided to make myself a delicious omelet for my supper on Saturday. Bread and Cheese. It's simple really.  This was simple and just hearty enough to be filling without needing anything else.  A salad would go very nicely. I had some sliced tomatoes on the side that needed eating up.


You don't need toast because there are toasty buttery cubes of bread in the omelet! I like to add chopped spring onions to the filling and also to garnish the finished omelet with.


Eggs for supper are always a great option. They are not that expensive.  They are nutritious and they are very adaptable to a huge variety of ways of cooking them.  I only ever very rarely will have eggs for breakfast, but eggs for supper?  That is a most welcome supper for me! Quick, easy and delicious.
