Meals of the Week, August 3rd to 9th, 2025



Hello everyone and welcome to my Meals of the Week post for this the second week of August, 2025! On Sundays I like to share with you, my dear readers, all of the deliciousness that I have enjoyed as my main meals of the day over the past seven days, along with any recipes I might have used as well as menu suggestions.


This week I had a pretty busy week, with a lot of to-ing and fro-ing, but I didn't let that stop me from enjoying tasty meals every day.  I did cave one day and bought a frozen pizza to enjoy for my lunch/supper.  It was NASTY!! Seriously1

And it looked so delicious on the cover.  The crust was like cardboard, the sauce was blah, and that meat on top tasted like the smell of old socks. 😕😕😕 Usually if I am going to buy a frozen pizza, I will get a Dr. Oetker.  They always come out nice.  Most of the time, however, I make my own.  I am never disappointed when I make my own.  But if you do see this pizza at your local shops, I recommend that you do not buy it. Maybe I just got a bad one, but . . .  yuck. I ended up throwing it all away which is something I really hate to do.


This really just goes to reinforce the fact that commercially frozen dinners are loaded with fat, sugar and salt and that 9 times out of 10 they will disappoint. They NEVER look like the covers. It is much better to cook your own food if you can.


I was really grateful that I had something much nicer tucked away in the freezer that I had frozen from a while back. Unlike most commercially produced frozen dinners, my homemade ones are always tasty. Not to brag or anything, but it's true. I highly recommend freezing your leftovers in single-serving sized containers so that you will always have a tasty meal to enjoy at a moment's notice without having to resort to commercial frozen dinners.


This list I am sharing consists of only the main meals that I enjoy each day. It does not include breakfasts or my light meal of the day, which I usually enjoy late in the afternoon. Normally I enjoy my main meal at noonish or early afternoon. 


Breakfasts will usually be a protein drink, or sometimes toast and jam, or oatmeal or my own homemade granola with some Greek yogurt and sometimes honey or date syrup.


I will have my main meal at around noon and then a light supper later in the day. This can vary. Sometimes it will be a sandwich or a salad. Sometimes a bowl of soup. Sometimes a bowl of cereal, and yes sometimes just some cheese and crackers or some such.


I am of an age where I don't like to go to bed with anything heavy on my stomach!


I try to keep things fairly healthy, simple, and economical. If I have eaten elsewhere I endeavor to leave a like recipe link in its place.

Cindy's Meatloaf



SUNDAY, August 3rd - Sunday Dinner at my sister's place


Most Sunday's will see me going to my sister's for a family dinner. This last week my sister made her infamous Meatloaf!  We all love this tasty meatloaf. It as a secret ingredient that helps to make it light and delicious. You can find the recipe here.  


Cindy served it with smashed roasted new potatoes and fresh green beans from the garden. Everyone really enjoyed this simple and delicious meal!


Chicken & Bacon Caesar Melt



MONDAY, August 4th - Chicken & Bacon Caesar Melt


I was craving a Chicken Sandwich from Mary Brown's. On Monday's you can get one of their Big Mary Sandwiches for only $4.99.  I resisted, stayed home and made my own Chicken Sandwich. I had not made one of these in a very long time.  This is a simple and yet delicious sandwich that everyone loves.  It is very easy to make, as is surprisingly hearty. You can make one or you can make a dozen. 


A garlic butter toasted hoagie bun is loaded up with Caesar dressing, thinly sliced red onion and shredded lettuce, hot shredded chicken which has had plenty of cheese melted on top. Onto this goes crisp rashers of smoky streaked bacon and slices of ripe fresh tomato.


You can enjoy this on its own or add some salad, fries or potato chips on the side. It's pretty hearty however, so I just enjoyed it on its own with some sliced cucumber on the side.



Honey Mustard Pork Chops



TUESDAY, August 5th - Honey Mustard Pork Chops


I had a pork chop in the freezer I wanted to get used up and so I decided to cook it for my dinner on Tuesday. I made myself a quick and easy Honey Mustard Pork Chop which I enjoyed along with a baked potato and some green beans.  The pork chop for this is rubbed with some spices and then flash fried on top of the stove, ready to finish off in the oven with a delicious honey mustard glaze.


Perfectly cooked, tender and juicy with beautiful flavors, this really went down a real treat.  I only cooked one, but the recipe is for two people. You can also easily double it to feed more.





Green Bean & Potato Salad


WEDNESDAY, August 6th - Cold chicken with some Green Bean & Potato Salad


I had a hair appointment in the afternoon, so I didn't really have a lot of time to cook.  I had made a delicious Green Bean & Potato salad in the morning, which I enjoyed for my supper along with some cold chicken from a rotisserie bird and a fresh baking powder biscuit that I had picked up at the farm market.  Normally I don't eat my big meal in the evening, so I kept it all pretty light.


This was a simple and yet very delicious meal that I really, REALLY enjoyed! No fuss, no muss, just deliciousness.



20-minute Egg Roll in a Bowl





THURSDAY, August 7th - 20 Minute Egg Roll in a Bowl


I love stir fries and on Thursday I did myself a stir fry. 20 Minute Egg Roll in a Bowl, sized for two. (I shared half with the lady next door).  This is a quick and easy supper to make, with ground turkey (although you could use beef, or chicken, or pork), shredded cabbage, carrots and some Asian seasoning/flavors. It tastes just like an egg roll without the fried wrapper. It is delicious!



I enjoyed a bowl of this with some steamed rice and a splash of plum sauce. You just have to have plum sauce with an egg roll! (Even if it is just an egg roll stir fry.)




Chicken Tikka Alfredo




FRIDAY, August 8th - Chicken Tikka Alfredo


I was really craving a curry.  I spent the afternoon shopping with my sister and kept getting tempted by all of the Indian food I was seeing. I had one serving of this frozen and so I took it out, thawed it in the microwave and heated it up for my supper.

It, was so, so, sooooo good!


I love pasta. I love curries. The two together are a dream come true! If you enjoy a good curry, then you will really enjoy this tasty riff on the traditional alfredo. Nicely spiced, with a rich and creamy sauce, along with plenty of pieces of marinated grilled chicken. This is a winner! 


I enjoyed this with a bowl of fresh fruit I had picked up on the side. Again, not used to eating my big meal in the latter part of the day, but some days you just can't get around it. As we usually leave to take my father out at 12:30 I didn't have much time for a meal before we left.



Fish and Chips from the Crowsnest




SATURDAY, August 9th - Early Birthday Celebration dinner with the family


It's my birthday coming up next Wednesday, Number 70.  HOW did that happen! It kind of crept up on me, I guess! The family wanted to take me out for a celebratory dinner and so we went to my favorite Fish and Chips place called The Crowsnest which is in Hillsburn on the Shore Road near Cottage Cove. The fish and chips there is so good. 


The restaurant doesn't look like much from the outside.  You think it's a really tiny place but looks are deceiving.  It's actually quite spacious inside and they do wonderful seafood!


They do the chips just like I enjoy them. Nice and dark.  And that fish, fresh haddock, is so beautifully battered with a lovely crisp batter. This is the English style.  Still not quite what you would get in the U.K, but still very, very good. It does also come with coleslaw. I love coleslaw.


In its place I am sharing my recipe for Beer Battered Fish and Chips. A bit of an effort to make, but oh so tasty!


And there you have it, my meals of the week for this, the second week of August, and my last full week as a person in their sixties. Oh woe is me! ha ha


I think I had a pretty good week, despite being very busy and being out and about quite a bit.  What do you think???
