Salmon, Broccoli and Potato Gratin

Salmon and broccoli are a marriage made in heaven.  They go together beautifully.  I normally have both in the house . . .  having either frozen salmon fillets and broccoli in the freezer, or tinned salmon and fresh broccoli.  If you have those, you always have a delicious dinner in the making!

Delicious dinners like this fabulous casserole which layers crumbled frozen hash browns, steamed broccoli and tinned salmon in a buttered casserole dish.  You then simply mix double cream and pesto and pour it over all, topping with a layer of buttered crumbs prior to baking.

You don't need to use crumbled hash browns  if you don't have them, you can simply boil some potatoes, chop them up and layer them with some grated onion in the bottom of the dish.   It would probably be lower in fat and calories as well, but let's face it . . .  with cream in the sauce, who is thinking about calories?

*Salmon, Broccoli and Potato Gratin*
Serves 4 to 6


This is such a simple supper dish, using store cupboard ingredients, yet yielding huge flavours.   Delicious! 

1/2 of a bag of frozen hash browns, thawed and crumbled
1 broccoli crown, trimmed and separated into florets
2 (170g) tins of boneless skinless salmon, drained ( 2 6-oz tins)
20g fresh soft bread crumbs (1/2 cup)
4 TBS freshly grated Parmesan cheese
225ml of single cream (light cream)
2 TBS fresh pesto
4 TBS milk2 to 3 TBS butter cut into bits
fine sea salt and freshly ground black pepper to taste

Preheat the oven to 200*C/400*F/ gas mark 6.  Butter a gratin dish.
Mix together the bread crumbs and half of the Parmesan cheese.  Set aside.  Steam the broccoli until crispy tender, set aside

Crumble the hash browns into the bottom of the casserole dish.  Sprinkle with the 4 TBS of milk and some seasoning.   Sprinkle the remaining half of the Parmesan cheese over top.  Chop the broccoli and sprinkle this in an even layer over the potatoes.   Crumble the salmon and sprinkle it over the broccoli.  Whisk together the cream and pesto.  Pour this over top of the salmon evenly  Sprinkle the bread crumb and cheese mixture over top of all.   Dot with butter.

Bake in the preheated oven for 25 to 30 minutes, until just browned.   Serve immediately.  A crusty loaf goes well with this.
