Cheesy Baked Chops

We don't eat red meat very often, but every now and again Todd really likes me to cook him a pork chop.  Today was the day and I cooked him one of his favourites, Cheesy Baked Chops.  This is a great little recipe.  Simple and easy and built just for two, although certainly it is very easy to multiply it to feed more.



You won't believe how very simple it is . . .  as simple as layering things up in a baking dish.



There's no frying, no dipping, no dredging  . . .



 Just simple ingredients, put together in a simple way and baked  . . .  dinner's ready in less than half an hour.



Pork chops, mayonnaise, sliced onion and cheese.  Easy peasy.  I served them with my crispy mash hash and fresh beans from the garden.  Went down a real treat!





*Cheesy Baked Chops*
Serves 2
Quick, easy and delicious.  One of our favourites!  You can easily multiply to serve more.  

2 boneless loin pork chops (about 1/2 inch thick)
seasoning
(I like to use Italian garlic seasoning)
1/2 small onion, peeled and thinly sliced
2 TBS mayonnaise
4 TBS grated strong cheddar cheese




Preheat the oven to 180*C/350*F/ gas mark 4.  Line a small baking tray wth foil.  Set aside.
Working with one at a time, place the chops into a plastic bag and bash with a rolling pin until they are half again as thick.  (about 1/4 inch)  Take care not to tear them.  You can trim any fat off first if you wish.




Place them onto the baking tray and season all over.  Spread each with 1 TBS of the mayonnaise.  Top with half of the onions.   Sprinkle half the cheese over each to cover the onions.


Bake in the preheated oven for 25 to 30 minutes, until cooked through and golden brown.
